25ml Aperol

50ml prosecco
a twist of grapefruit zest

Steps:

  • Pour the grapefruit juice and Aperol into a chilled coupe glass. Add ice and gently stir to combine. Top up with the Prosecco, garnish with a twist of grapefruit zest and serve immediately.

Sometimes spring showers and summer lunches call for a mocktail. This grapefruit spritz is made with Sanbitter, an Italian red soda known as Campari's virgin doppelganger.

2 ounces Sanbitter
3 ounces dry ginger ale
3/4 ounce fresh grapefruit juice
Grapefruit slice, for garnish

Steps:

  • Fill a highball glass with crushed ice; add Sanbitter. Top with dry ginger ale (such as Gus Soda Extra Dry) and fresh grapefruit juice; stir to combine. Garnish with a grapefruit slice.

The spicy grapefruit base can be made up to 6 hours ahead. Add seltzer just before serving.

1/2 cup fresh lime juice
3 tablespoons superfine sugar
8 thin jalapeno slices
2 cups fresh grapefruit juice
Ice
Seltzer
Grapefruit slices, for garnish
Tequila or mezcal, optional

Steps:

  • Muddle lime juice, sugar, and jalapeno slices, pressing on chiles and stirring until sugar dissolves. Stir in grapefruit juice. Pour halfway up ice-filled glasses; top with seltzer. Garnish with grapefruit slices.
  • To spike it: Add 1 ounce tequila or mezcal per serving, before the seltzer.
