A Southern fruit salad made with fresh citrus.

1 bag navel oranges
1 bag (pink if possible, as they are more colorful) grapefruit
1 large fresh (I use 1 large can of pineapple chunks in pineapple juice, 20 oz. can or more or less to taste) pineapple
1 jar drained and cut in halves (optional) maraschino cherries
1 (3 1/2 oz) can optional flaked sweetened coconut
1 cup chopped optional pecans
sliced optional bananas

Steps:

  • Peel the oranges, removing as much of the pith (the white lining under the skin), discarding the pith and the peeling.
  • Over a large bowl, section the oranges, removing the membranes, any pith left and the seeds, retaining all of the pulp and juice.
  • Over the same bowl repeat the process for the grapefruit mixing the fruit sections together. Add the fresh, peeled, cored and chopped pineapple or add the canned pineapple including the juice. Stir well to blend the fruits and the juices. Cover the bowl and refrigerate until ready to serve.
  • Many families like to add other fruit and nuts such as the cherries, coconut, bananas and/or pecans. You may want to serve these additions in small bowls beside the fruit and let each make their own combination. The bananas, coconut and pecans will soften if you have leftovers, so I like to leave the oranges, grapefruit and pineapple separate. These three will keep 3 days easily in the refrigerator.
  • Yield is based on the size of bags that you purchase.
  • * Your best friend when preparing this dish is a good, sharp knife. I use a filet knife; the blade is long but narrow and lightweight and very sharp.

2 each navel oranges and red grapefruits, peeled, cut crosswise into thin slices
4 clementines, peeled, cut crosswise into thin slices
1 cup JET-PUFFED Miniature Marshmallows
1/2 cup BAKER'S ANGEL FLAKE Coconut, toasted
1/2 cup pomegranate seeds
1/2 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
2 Tbsp. honey
dash ground cloves

Steps:

  • Cut orange and grapefruit slices into quarters; arrange alternately on large plate with clementine slices.
  • Top with marshmallows, coconut and pomegranate seeds.
  • Mix remaining ingredients; drizzle over fruit just before serving.

2 cans chunky pineapple
2 cans fruit cocktail
2 cans tropical fruit cocktail
4 cans mandarin oranges
1 large container sour cream
1 bag miniature marshmallows
1 small jar Maraschino cherries

Steps:

  • Drain the liquid from all the cans of fruit. Thin the sour cream with whichever fruit juice you would like. Mix all the ingredients together with the thin sour cream.

1 grapefruit, sliced into bite size pieces
1/4 cup maraschino cherry, with juice, diced
1/2 cup miniature marshmallow
1/4 cup flaked coconut
3 teaspoons sugar

  • Mix all ingredients together after preparation.
  • Try to refrigerate for at least 2 hours before eating, in my house it is hard to wait. :).

5 lb grapefruit (preferably half pink and half red; about 6 total)
1 cup sweetened flaked coconut
2 tablespoons Campari
2 tablespoons sugar
1/2 cup salted shelled natural pistachios, toasted and coarsely chopped

Steps:

  • Cut peel, including all white pith, from fruit with a sharp paring knife and cut segments free from membranes. Halve grapefruit segments crosswise, then transfer to a bowl. Stir in coconut, Campari, sugar, and a pinch of salt and chill 15 minutes.
  • Just before serving, stir in nuts.

4 seedless navel (or blood) oranges
2 Ruby Red grapefruit (1 lb each)
3 tbsp honey
1 starfruit, thinly sliced
1 cup seedless red grapes, halved
1/2 cup champagne grapes (optional)
Julienned orange zest

Steps:

  • Using a sharp knife, cut away peel and white pith from oranges and grapefruit. Remove orange and grapefruit segments from their membranes. Squeeze juice from membranes into a small bowl. Whisk honey into juice. Arrange layers of orange segments, grapefruit segments and starfruit slices in a clear glass serving dish. Top with grapes. Pour sweetened juice over fruit and garnish with zest. Chill at least 1 hour before serving.
