I love the flavor of Grape Nut Flakes and I have found a few of my favorite recipes with this cereal off of the Kraft website. I forget about the low fat cooking when these come straight out of the oven -the ole butter gets smeared on! =) These are also perfect for those folks looking for low sugar muffins.

1 1/4 cups flour
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup brown sugar (packed)
1 cup milk
1 egg (beaten)
1/2 cup chunky applesauce
2 tablespoons melted butter
1 cup grape nut flakes cereal
1/2 cranberries (optional) or 1/2 other dried fruits (optional)

Steps:

  • Stir together the first 5 ingredients.
  • Stir beaten egg into milk then add applesauce and stir well.
  • Mix wet ingredients into dry stirring well.
  • Stir in melted butter, cereal, and raisins.
  • Let stand 5 minutes.
  • Fill greased muffin tins 2/3 full.
  • Bake at 400 degress for about 20 minutes.

1 1/4 c grape-nut original cereal
1 c hazelnut coffee creamer
1 tsp vanilla extract
3 Tbsp butter,melted
1/2 c peach butter or mashed banana or applesauce
1 large egg
1/2 c chopped walnuts
1 1/2 c all purpose flour
1 Tbsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
1/2 c brown sugar, firmly packed

Steps:

  • 1. Heat oven to 400^. Spray 12-16 regular size muffin wells--(cupcake pan);with no stick spray..set aside. In a medium bowl add the cereal and milk,mix slightly-then set aside.
  • 2. In a large bowl combine the flour, baking powder,baking soda,cinnamon, brown sugar and salt.Mix with large spatula to combine and break up any sugar lumps. Set aside.
  • 3. To the cereal /cream bowl add the egg and beat with a spoon. Stir in the peach butter,vanilla, melted butter and nuts..stir to combine well. Stir this mixture into the flour mixture and fold until flour is mixed in, only until moistened.
  • 4. Spoon batter evenly into the prepared muffin cups, fill each cup to the top. Bake 22-25 minutes or until wooden toothpick inserted in centers comes out clean. Cool in pan 2 minutes. Remove to wire rack to cool.

1 cup milk
1 1/4 cups flour
1 Tablespoon. baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 egg (beaten)
1/2 cup vanilla yogurt
2 Tablespoons vegetable oil
1/2 cup firmly packed brown sugar
Additional Grape Nuts Cereal for topping (optional)

Steps:

  • Preheat oven to 400ºF.
  • Combine cereal and milk; let stand 3 minutes.
  • Meanwhile, mix flour, baking powder, cinnamon and salt in large bowl; set aside.
  • Mix together egg, yogurt, oil, and brown sugar and mix well. Stir into cereal mixture until well blended. Add all to flour mixture; stir just until moistened. (Batter will be lumpy.)
  • Spoon evenly into 12 muffin cups sprayed with non stick cooking spray, filling each cup two-thirds full.
  • Bake for 20 minutes or until toothpick inserted in centers comes out clean.
  • Cool in pan for 5 minutes before removing to a wire rack. Serve warm.

1/2 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1 egg
2 medium ripe bananas, mashed
1/2 cup plain yogurt
1/2 teaspoon vanilla
1 cup Post Grape-Nuts cereal

Steps:

  • Preheat oven to 350.
  • Mix flour, sugar, baking powder, baking soda and salt in a large bowl.
  • Beat the egg in a small bowl; stir in bananas, yogurt and vanilla.
  • Add to flour mixture; stirring until just moistened (batter will be lumpy; do not overmix!).
  • Stir in cereal.
  • Spoon batter into a 12-cup muffin tin that has been sprayed with cooking spray, filling each cup 2/3 full.
  • Bake in preheated oven for 25 minutes or until golden brown.
  • Serve warm.
  • NOTE: Muffins can be frozen for up to 6 months.
  • Just thaw at room temperature and reheat until warm.

1/2 cup applesauce
1/2 cup brown sugar, firmly packed
1/2 cup raisins
2 tablespoons butter, melted

Steps:

  • Preheat oven to 400°F Spray muffin pan with cooking spray, set aside. In a large bowl mix flour, baking powder, cinnamon, and salt. In a medium bowl mix cereal and milk; let stand 3 minutes. Then add flax, water,applesauce, sugar, raisins, and butter to the cereal milk mixture. Add wet mixture to flour mixture and stir just until moist (will be lumpy). Spoon batter into muffin pan making cups mostly full (it doesn't rise much if at all). Bake for 20 minutes or until toothpick comes out clean. Serve warm with butter on top, yum!

2 large eggs
1 tablespoon orange zest
2/3 cup sweet wine (such as Rieisling or Muscata)

Steps:

  • Place a rack in the middle of the oven, and preheat to 375 degrees F.
  • Whisk together flour, baking powder, baking soda, and salt.
  • Beat butter with 2/3 cup sugar using an electric mixer on medium speed, until light and fluffy. Add eggs one at a time, beating well after each addition. Beat in zest.

  • Preheat the oven to 180 degrees Celsius.
  • In a saucepan, heat the grapes on medium flame till most of their juice gets evaporated.
