GRANOLA-RAISIN COOKIES

This is sort of like an oatmeal raisin cookie, but better because it has granola instead of rolled oats.

Number Of Ingredients 11

1 cup butter, softened
¾ cup white sugar
¾ cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 ¾ cups granola
1 cup raisins
½ cup chopped, unsalted dry-roasted peanuts

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together the butter, brown sugar and white sugar. Beat in the egg and vanilla. Combine the flour, salt and baking soda, stir into the creamed mixture. Finally, stir in the granola, raisins and peanuts. Drop dough by heaping teaspoonfuls onto greased cookie sheets, about 2 inches apart.
  • Bake 12 to 15 minutes in the preheated oven, until cookies are lightly browned around edges. Remove from baking sheets to cool on wire racks.

Steps:

  • Beat butter and sugar until creamy, add eggs and lemon juice. In separate bowl, combine flour, salt,baking soda and add to butter mixture blending thoroughly. Mix in oats,raisins and walnuts. Drop rounds onto ungreased cookie sheet and bake at 350 for 18 min.

1 cup raisins
1/2 cup butter
3/4 cup thawed apple juice concentrate
1 large egg, lightly beaten
1-1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon grated orange zest
2 cups granola without raisins, lightly crushed

Steps:

  • In a saucepan over medium heat, cook raisins, butter and apple juice concentrate until butter and concentrate are melted; cool. Beat in egg. In a bowl, combine flour, baking soda, cinnamon and orange zest; add raisin mixture and blend well. Stir in granola. Let stand for 5-10 minutes. , Drop by rounded teaspoonfuls onto ungreased baking sheets. Bake at 350° for 8-10 minutes or until lightly browned. Cool on a wire rack.

1/2 teaspoon salt
1 3/4 cups granola
3/4 cup rolled oats
1/2 cup shredded coconut
1 1/2 cups raisins
3/4 cup almonds, finely chopped

Steps:

  • Preheat oven to 350 degrees F. In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Add in eggs and vanilla extract, beat until smooth. Combine flour, baking soda, cinnamon, cloves and salt in a separate container and stir into the egg mixture. Stir in the granola, oats, coconut, raisins and almonds. Drop by rounded teaspoonfuls onto baking sheets lined with parchment paper. Bake for 10 to 12 minutes, or until golden. Let cool on the baking sheets for 2 minutes before transferring to wire rack to cool completely.
