Getting your family to eat fruits and veggies will be a snap, thanks to this tantalizing salad from Vicky LaMance of Middletown, Ohio. A simple reduced-fat dressing coats her crunchy mix of peppers, celery, cabbage, apples and grapes. Not overpowering, it complements their flavors instead of hiding them.

1 medium green pepper, chopped
1 cup chopped celery
1 cup shredded cabbage
3/4 cup chopped red apple
1/2 cup seedless red grapes, halved
1/4 cup reduced-fat mayonnaise
1/4 teaspoon salt
Lettuce leaves

Steps:

  • In a large bowl, combine the first five ingredients. In a small bowl, combine the mayonnaise and salt. Stir into pepper mixture. Cover and refrigerate for at least 1 hour. Serve on lettuce leaves.

2 small peaches, pitted and diced
2 large plums, pitted and diced
1 stalk celery, sliced
1 cup cherry tomatoes, halved
1 cup cherries, pitted and halved
1/2 English cucumber, diced
1/4 serrano pepper, very thinly sliced, or to taste
1/2 teaspoon best quality sea salt, plus more to taste
1/4 teaspoon freshly ground black pepper, plus more to taste
2 tablespoons extra virgin olive oil, plus more to taste
1 teaspoon apple cider vinegar
2 tablespoons chopped fresh mint or chives, or a combination

Steps:

  • Assemble salad: In a large bowl, combine the peaches, plums, celery, tomatoes, cherries, cucumber, and serrano pepper.
  • Season and marinate: Season with salt and black pepper and gently stir to combine. Set aside for 5 to 10 minutes. The salt will start to pull juices from the fruit and vegetables.
  • Add oil and herbs: Drizzle in the olive oil, apple cider vinegar, and add the herbs. Stir to combine. Taste and adjust for seasoning with salt, black pepper, and olive oil. Spoon onto a serving plate and garnish with herb leaves.

"I can't believe how easy this pretty salad is to make," says Carolyn Tomatz of Jackson, Wisconsin. The colorful blend of bananas, pineapple, pears and peaches and grapes is tossed with a creamy pudding sauce. "People of all ages enjoy this dish," Carolyn notes.

Number Of Ingredients 8

1 can (20 ounces) unsweetened pineapple chunks
1 can (15 ounces) reduced-sugar sliced pears, drained
1 can (15 ounces) sliced peaches in juice, drained
1-1/2 cups seedless red grapes
1 package (3 ounces) cook-and-serve vanilla pudding mix
2 medium firm bananas
3 tablespoons lemon juice
1 jar (10 ounces) maraschino cherries, well drained

Steps:

  • Drain pineapple, reserving juice in a 1-cup measuring cup. In a large bowl, combine the pineapple, pears, peaches and grapes. Cover and refrigerate. , Add enough water to pineapple juice to measure 1 cup. Pour into a small saucepan. Whisk in pudding mix. Bring to a boil over medium heat, stirring constantly. Remove from heat; set aside to cool to room temperature., Slice bananas into a small bowl. Drizzle with lemon juice; gently toss to coast. Let stand for 5 minutes; drain. Add bananas and cherries to chilled fruit. Add cooled pudding; toss gently to combine. Refrigerate until serving. Refrigerate leftovers.

This is a recipe that my grandmother would make in the summer to go with her famous fried chicken and mash potatoes. I hope everyone likes it.

2 - red apples
1 - green apple
2 - carrot, shredded
1/2 - celery stalk diced
1/2 cup(s) raisins
2 to 3 tablespoon(s) mayonnaise
1/2 tablespoon(s) sugar
- salt and lemon juice to taste

Steps:

  • Prepare all ingredients and put into a large bowl. Toss all ingredients together except salt and lemon juice until fruit and vegetables are well coated. Add salt and lemon juice to your taste. Serve on a lettuce leaf on salad plate.
  • Try these add ins: grilled chicken breast strips or pecans or walnuts. You might even like to add dried cranberries.
