GRANDMA'S VANILLA ICE CREAM

With summer on its way, Grandma's Homemade Ice Cream is a custard-style vanilla frozen treat the entire family will enjoy.

Number Of Ingredients 6

4 Tablespoons flour
3 ½ cups sugar
1 gallon milk
8 to 10 eggs (beaten)
Vanilla (to taste up to one Tablespoon)
1 pint half and half or heavy whipping cream

Steps:

  • Mix flour and sugar.
  • Put 1 quart of whole milk in saucepan on stove to warm.
  • When hot, add sugar mixture, stirring constantly until it starts to thicken.
  • Add beaten eggs to hot milk mixture, tempering the egg mixture first to prevent cooking the beaten eggs.
  • Cook, stirring constantly until mixture thickens like a custard.
  • Remove from heat and cool completely.
  • Once cooled, add vanilla to taste - up to 1 Tablespoon.
  • Add to ice cream freezer insert.
  • Add pint of cream or whole milk to about an inch from the top.
  • Freeze per the instructions for your ice cream freezer.
  • Eat right away or freeze to get a firmer texture.

I remember all of us grand kids taking turns turning the hand crank on the ice cream maker. It seemed to take forever but so worth it on a hot summer day. Summer isn't complete without this. This recipe is at every family reunion and barbecue. It has been in my family for at least 3 generations. Tried and true ... you won't be able to get enough!

6 - eggs, slightly beaten
6 - bananas mashed
2 1/2 cup(s) sugar
2 teaspoon(s) pure vanilla extract
1 can(s) sweetened condensed milk
- half & half or milk to fill your ice cream maker
1 - large bag ice
1 box(es) rock salt
1 - 4 quart ice cream maker

Steps:

  • In a large bowl mix eggs, bananas, sugar, vanilla, and sweetened condensed milk. Pour into container of ice cream maker. Add milk to the fill line of container.
  • Place container in ice cream maker and add ice and rock salt in layers and freeze until ready.
  • Place in freezer for 30 additional minutes if you can wait that long....we never seem to be able to wait.

3 quarts milk
3 cups heavy cream
3 cups sugar
3 teaspoons vanilla
6 junket tablets
6 tablespoons water
1 dash salt

Steps:

  • Dissolve Junket tablets in cold water.
  • Mix milk, cream, sugar, salt and vanilla in a pan& heat to lukewarm.
  • (NOT hot!) Add Junket tablets.
  • Mix well and pour immediately into freezer (with dasher in place).
  • Let stand until set.
  • (will be thick like Junket) Mix in the ice cream freezer until thick& stiff.
  • Serve as-is- or with toppings!

2 cups heavy whipping cream
2 cups 2% milk
3/4 cup packed brown sugar
1/8 teaspoon salt
6 large egg yolks
3 to 4 tablespoons bourbon
2 teaspoons vanilla extract

Steps:

  • In a large heavy saucepan, combine cream, milk, sugar and salt. Heat over medium heat until bubbles form around sides of pan, stirring to dissolve sugar. , In a small bowl, whisk a small amount of the hot mixture into the egg yolks; return all to the pan, whisking constantly. Cook over low heat until mixture is just thick enough to coat a metal spoon and temperature reaches 180°, stirring constantly. Do not allow to boil. Immediately transfer to a bowl. , Place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes. Stir in bourbon and vanilla. Press waxed paper onto surface of mixture. Refrigerate several hours or overnight., Fill cylinder of ice cream maker two-thirds full; freeze according to the manufacturer's directions. (Refrigerate remaining mixture until ready to freeze.) Transfer ice cream to a freezer container; freeze until firm, 4-6 hours. Repeat with remaining mixture.

This is the recipe my Granny has used for as long as I can remember. My brothers, sister and I would get so excited when Pop-Pop would get the hand-crank ice cream maker out. We knew we were in for the best homemade ice cream ever. No idea where this originates from.

6 large eggs, beaten
2 1/2 cups sugar
4 cups milk
2 cups half-and-half
1/4 teaspoon salt
2 1/2 tablespoons vanilla extract
3 cups whipping cream

Steps:

  • Add the first 3 ingredients to a saucepan.
  • Over low heat, cook and stir constantly for 25-30 minutes or until the mixture gets thickened and will coat a spoon; cover and chill.
  • Add in half-and-half and the remaining ingredients to the chilled mixture; stir to combine.
  • Pour mixture into the container of an 5-quart electric ice cream maker (or hand-crank freezer for you die-hards).
  • Freeze following the manufacturer's directions.
  • Serve right away or transfer to an airtight container and freeze until firm.
