I always love the punch of color that cranberries add to a meal, and this delicious cranberry salad recipe really does the berry justice. Not only did we love the perfect balance of sweet and tart, but the chopped pecans added a wonderful crunch that we'd never had before in a cranberry salad.

Number Of Ingredients 9

1 small package of cherry Jell-O (3oz box)
1 c hot water
1 c sugar
1 Tbsp lemon juice
1 c drained crushed pineapple (8oz can) (juice reserved)
1 c pineapple juice (use the reserved juice and add water to make 1 cup)
1 c ground cranberries
1 orange (ground)
1/2 c pecans, chopped

Steps:

  • 1. Boil the cup of water. Dissolve the Jell-o in the hot water in an 8-inch square pan mix well. Add the sugar, lemon juice, and pineapple juice. Stir to dissolve well. Note: You can substitute the 8x8 dish and use a 9x13 dish, it seems to gel up a bit better that way.
  • 2. Add the remaining ingredients and mix. Chill overnight.
  • 3. Grandma's Notes: Chop up the pecans first before getting the blender wet. Or you could just buy pre-chopped pecans and save a step. Use the blender or food processor to chop up cranberries, then orange, seeded, and partially peeled. The chopped peel gives it that special zing!

This is a recipe my grandma made for a local JELL-O® contest. She won first place! It is a delicious salad like nothing I have ever seen. I grew up eating this cranberry salad every year at Thanksgiving. It reminds me of my grandma, who I loved so much!

1 pound fresh cranberries
2 cups white sugar
1 ½ cups water
2 (3 ounce) packages cherry-flavored gelatin (such as JELL-O®)
1 ½ cups chopped celery
1 ½ cups chopped, peeled apple
1 cup chopped pecans

Steps:

  • Stir cranberries, sugar, and water together in a saucepan; cook over medium heat, stirring often, until most of the berries have popped open, about 20 minutes.
  • Remove saucepan from heat. Stir gelatin into the cranberries mixture until dissolved completely; add celery, apple, and pecans and stir. Pour into a glass 13x9-inch dish.
  • Refrigerate until set in the center, 10 to 12 hours.

Refreshing and crunchy, this fruit salad makes a good brunch dish with Turkey Sausage Patties (page 166).

Yield Serves 6; 1/2 cup per serving

2 medium Granny Smith apples, cut into 1/4-inch cubes (about 1 1/2 cups)
1/2 cup sweetened dried cranberries
1/2 teaspoon grated orange zest
1/4 cup fresh orange juice
2 tablespoons chopped pecans, dry-roasted
1/4 teaspoon ground cinnamon

Steps:

  • In a medium bowl, stir together all the ingredients. Serve immediately for peak flavor.
  • You can chop the apples up to 2 hours in advance. Stir in 1 to 2 teaspoons of fresh lemon juice to keep them from turning brown.

3 (3 1/2 ounce) boxes strawberry Jell-O gelatin dessert
3 cups boiling water
1 (16 ounce) can whole berry cranberry sauce
1 (20 ounce) can crushed pineapple, drained
1 cup celery, finely chopped
1/2 cup nuts, finely chopped (walnuts or pecans)

Steps:

  • In mixing bowl, combing jello and boiling water; stir until dissolved. Add cranberry sauce to hot mixture; stir until melted. Allow to cool slightly . Transfer jello mixture to desired dish (mold, rectanglar pyrex, etc.) Add pineapple, celery and nuts over top. Place in refridgerator until set. YUM!

1 envelope Knox unflavored gelatin
1/2 cup hot water
1/4 teaspoon salt
1/2 cup celery, chopped
1/2 cup nuts, chopped
1/2 cup cold water
1 can cranberry sauce, 17 oz can, strained

Steps:

  • Soften gelatin in cold water, dissolve in hot water. Pour this hot liquid over cranberry sauce which has been turned into a bowl, beat with a rotary beater until softened to a smooth mass. Turn into ice cube tray of automatic refrigerator -- turn up cold control. Do Not Freeze. When gelatin begins to thicken, add celery, nuts, and salt. Turn into mold that has been rinsed in cold water and chill. Serve with salad dressing.

1 cup(s) nuts, chopped

  • Combine the gelatin with hot water (don't let stand). Grind cranberries and orange (including rind) mix with sugar. Stir in nuts, celery and pineapple. Mix with prepared gelatin and chill.
