Oven temp: 350 degrees F Prep time: 5 to 10 minutes Baking time: 15 to 18 min. Everyone has heard about the benefits of fiber. Oat and bran can significantly lower blood cholesterol in addition to adding fiber.

1 c butter or margarine
3/4 c brown sugar
3/4 c granulated sugar
1 tsp vanilla
1 c peanut butter, creamy or chunky
2 eggs, beaten
1 1/4 c all purpose flour
1 c bran
3/4 c rolled oats
2 tsp baking soda
EQUIPMENT
ungreased cookie sheet
wire rack, for cooling cookies

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Melt butter.
  • 3. Beat together with the sugars, vanilla, peanut butter and eggs.
  • 4. In a separate bowl, combine the flour, bran, oats and baking soda.
  • 5. Stir mixture into butter mixture.
  • 6. Drop by teaspoons onto ungreased cookie sheet.
  • 7. Bake at 350 degrees F for 15 to 18 minutes.
  • 8. Remove to a wire rack to cool.

Yield 5 to 6 dozen cookies

Number Of Ingredients 9

1 c. unsalted butter, softened
1 tsp. vanilla extract
1 c. light brown sugar
1 c. granulated sugar
2 eggs
1 c. creamy peanut butter
3 c. all-purpose flour
2 tsp. baking powder
1/8 tsp. salt

Steps:

  • Place butter and vanilla extract in a mixing bowl; beat with a stand mixer or electric mixer at medium speed until fluffy, about 2 minutes. While continuing to beat, gradually add brown sugar and granulated sugar; beat until well combined.
  • Add eggs, one at a time, beating after each addition until incorporated. Add peanut butter and beat until combined.
  • Add flour, baking powder, and salt; mix on low speed until just combined.
  • Roll dough into 1-inch balls; place on a cookie sheet. Flatten with a fork dipped in granulated sugar; repeat with the fork turned perpendicular to the first marks to create a cross-hatch pattern.
  • Bake at 375 degrees for about 9 minutes, or until very lightly browned.
  • I like my peanut butter cookies soft, so I watch them closely while baking and take them out of the oven as soon as they are lightly browned.

She worked in a small home-cooking bakery in our small hometown, for years, a fantastic cook, and I have always aspired to be as good as my Mom in the kitchen, I don't think my time has come yet, but it sure is fun trying!! 1 cup butter or 1 cup margarine
3/4 cup brown sugar
3/4 cup sugar
1 teaspoon vanilla
1 cup peanut butter (chunky or creamy)
2 eggs, beaten
1 1/4 cups flour
1 cup natural bran
3/4 cup rolled oats
2 teaspoons baking soda

Steps:

  • Melt butter. Beat together with the sugars, vanilla, peanut butter and eggs.
  • In a separate bowl, combine the flour, bran, oats and baking soda,.
  • Stir mixture into butter mixture.
  • Drop by teaspoonful onto ungreased cookie sheet.

My family won't let too much time pass, before they beg me to make these delicious peanut butter cookies that melt in your mouth. They don't have the normal fork crossing on the top...but more of a crackled sugar type cookie. Super yummy! Note: I've made this with chunky style peanut butter, too. And it's just as good or better.

1 c brown sugar, packed
1 c sugar
1 c butter flavored crisco
1 c creamy peanut butter (skippy)
1/2 tsp salt
2 eggs, large
1 tsp vanilla extract
2 tsp baking soda
2 c flour (1/4 cup more, if needed)

Steps:

  • 1. 1.) Cream together the sugars, Crisco, peanut butter. 2.) Add eggs and vanilla. 3.) Sift the dry ingredients together and add gradually until blended well. 4.) Roll into tablespoon size balls. 5.) Roll cookie dough balls into sugar. 6.) Place on cookie sheets...Do NOT mash with fork in normal "peanut butter cookie" fashion! *** Bake at 350 oven for 11-13 minutes.
