¼ cup peanut butter
⅓ (12 ounce) jar honey
¼ cup brown sugar
1 cup granola
1 cup quick cooking oats
1 cup puffed rice cereal
½ cup chocolate chips
½ cup chopped dried mixed fruit

Steps:

  • Melt peanut butter and honey together in a saucepan over medium heat. Dissolve brown sugar into the peanut butter mixture; bring to a simmer for 2 minutes.
  • Mix granola, oats, rice cereal, chocolate chips, and fruit together in a large bowl; pour peanut butter mixture over the granola mixture and fold to coat.
  • Grease a cake pan. Pour the granola mixture into the prepared pan and press into a flat layer. Cool at room temperature until set, about 15 minutes before cutting into bars.

My Grandma and Mom made these cookies often when I was growing up and I have been making them for my kids for 20 years! I have tried many other peanut butter cookie recipes, but this one is still our favorite. Crispy, but a light texture . . . they almost melt in your mouth!

1 cup softened butter
1 cup creamy peanut butter
1 cup sugar
1 cup brown sugar
2 large eggs
1 cup carnation powdered milk
2 1/2 cups flour
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt

Steps:

  • Cream butter and peanut together in a large bowl.
  • Add sugars and eggs, mix well.
  • Sift together dry milk, flour, baking powder, baking soda and salt, stir into butter mixture.
  • Let dough stand 15 minutes.
  • Roll into balls, about the size of a walnut and place on a slightly greased baking sheet.
  • Flatten with a fork, dipped in flour, criss-cross fashion.
  • Bake at 375 degress for 10-12 minutes.
  • Watch closely and remove when tops just start to brown.
  • Wait about 5 minutes before removing from baking sheet. Cool on racks.

1/2 cup vegan butter-style sticks
1 cup graham cracker crumbs
1 cup sweetened shredded coconut
1 cup dairy-free white baking chips
1 cup macadamia nuts, chopped
1/2 cup chopped dried pineapple
1/2 cup dried mangoes, chopped
1 can (11.6 ounces) sweetened condensed coconut milk

Steps:

  • Preheat oven to 350°. Melt butter in a 9-in. square baking pan. On top of melted butter, sprinkle crumbs, then coconut, then baking chips, then macadamias, then pineapple and then mangoes. Pour well stirred coconut milk over all. Do not stir. Bake until a toothpick inserted in center comes out clean, about 30-35 minutes. Refrigerate at least 4 hours or overnight. Cut into bars and serve.

4 tablespoons unsalted butter, plus more for pan
10 1/2 ounces mini-marshmallows
1/2 cup creamy peanut butter
Homemade Granola

Steps:

  • Butter a 9-inch-square baking pan; set aside. In a large saucepan over medium heat, melt butter. Add marshmallows; stir until melted, about 4 minutes. Remove from heat.
  • Stir in peanut butter and granola until well combined. Transfer mixture to prepared pan. Dampen your hands, and press mixture into prepared pan, distributing mixture evenly. Set aside to cool. Invert pan, releasing bars. Cut into 16 squares.

8 oz semi-sweet chocolate chips or roughly chopped couverture
3/4 cup heavy cream
1 cup light Karo Syrup
1 cup sugar
1 cup peanut butter, any kind
6 cups granola, with or without raisins, low fat okay

Steps:

  • Bring the heavy cream to a boil in a small saucepan. Turn off the heat and add the chocolate. Set aside. (Do not stir at this time!) In another small saucepan, combine the Karo syrup and the sugar and bring to a boil. Lower the heat and stir constantly until the sugar dissolves. Remove from the fire and add the peanut butter and stir until melted. Pour over granola, stir to mix and press evenly into a greased 13"x9" glass pan. By now, the chocolate should be mostly melted in the heavy cream. Using a rubber spatula, stir the mixture until all the chocolate is melted. Pour evenly over the granola mixture and let set at room temperature. Cut into bars and serve.
