1/3 cup sugar
1 teaspoon cinnamon
1/3 cup chopped nuts ((I prefer pecans or walnuts.))
1/2 cup unsalted butter
1 1/2 cups sugar
1 large egg
1 teaspoon baking soda
1 cup buttermilk
1/2 teaspoon salt
2 cups + 1 tablespoon flour
3 cups chopped rhubarb
whipped cream, (optional)

Steps:

  • Preheat oven to 350 degrees. Spray a 9 x 13-inch cake pan with cooking spray and set aside.

4 cups diced rhubarb
¼ cup white sugar
1 ½ cups brown sugar
1 cup sour cream
½ cup butter, softened
1 egg
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking soda
1 tablespoon white sugar, or to taste
1 pinch ground nutmeg, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread rhubarb out into the bottom of a cake pan; sprinkle 1/4 cup white sugar over the top.
  • Beat brown sugar, sour cream, butter, egg, and vanilla extract together in a bowl with an electric mixer until smooth and creamy. Add flour and baking soda; mix until batter is just combined. Pour batter over rhubarb; top with 1 tablespoon white sugar and nutmeg.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 1 hour.

2 c rhubarb (diced)
1/2 c brown sugar
1/2 c butter
1 1/2 c sugar
1 tsp vanilla
1 large egg
2 c flour
1 tsp baking soda ( or bicarbonate as grandmas recipe says)
1 tsp cinnamon
1/4 tsp salt
1 c sour milk or buttermilk
BROWN SUGAR CREAM CHEESE FROSTING
8 oz cream cheese
1/4 c butter (sofened)
3/4 c brown sugar
1/4 c powdered sugar
1/2 tsp vanilla

Steps:

  • 1. Sift flour, baking soda,cinnamon, and salt, set aside.
  • 2. Cream butter, sugar, egg and vanilla, add the dry ingredience alternately with the sour milk mixing well.
  • 3. Add rhubarb mixture to batter, pour into a greased 13x9 pan bake in a 350 oven for 50-55 minutes. cool
  • 4. Cream together cream cheese and butter, add brown sugar, powdered sugar and vanilla mix well frost cake.

This was my Grandma Moyer's recipe. It has been missing since at least the mid 80's. I found it stuck the middle of an old book I got after my mom passed away. Everyone in the family has been trying to recreate this delicious coffee cake for years. It is moist and very flavorful. I added the strawberries because I like it a little sweeter. Rhubarb is an ingredient that you don't see used very often any more, but those of us who do use it always love to find new ways to spread the love.

2 eggs
1 cup cold coffee
3 cups all-purpose flour
2 teaspoons baking soda

½ cup chopped pecans

½ teaspoon salt

Steps:
