Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) image

Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

1 cup crushed pineapple (drained with juice reserved)
1 cup water (more or less depending on what's needed, see instructions below)
2 packages lime jello (3 oz each)
1 cup mayo
1 cup evaporated milk (canned)
1 cup small curd cottage cheese
1/2 cup walnuts (chopped)

Steps:

  • In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
  • Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
  • In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
  • Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).

Retro jello salad recipe made with pineapple, cucumber, horseradish, and lime jello.

Number Of Ingredients 9

1 (6 ounce) package of Jell-O Lime gelatin
1 teaspoon salt
2 cups hot water
2 cups cold water
1 1/2 cups peeled, diced cucumbers
3 tablespoons horseradish (or more if you want it spicier)
1/2 teaspoon grated onion
2 tablespoons vinegar
1 1/2 cup diced or crushed drained canned pineapple (you cannot use fresh pineapple with gelatins. The bromelaine enzyme in fresh pineapple will keep the gelatin from bonding.)

Steps:

  • In a bowl, dissolve lime jello and salt in 2 cups of hot water (don't use boiling water, just regular hot water). Add 2 cups cold water. Chill until slightly thickened - the consistency of egg whites, about 30 minutes.
  • In a separate bowl mix cucumber, horseradish, grated onion, and vinegar. Fold pineapple and cucumber mixture into jello. Pour into a jello mold and chill for several hours (about 6) until gelatin sets.
  • To remove jello from its mold, fill up a basin half-way with hot water. Lower the jello mold into the hot water, metal side down, until the water comes up almost to the edge of the mold. Keep it there 5 seconds and remove. Place a plate on top of the jello mold and turn upside down. The jello salad should just slide out.

Both of my grandmothers made this salad every summer when their gardens produced baskets of cucumbers. It's a cool, fresh side dish for any meal. One of my grandmas omitted the green pepper and the celery seed. She also put ice in it to chill it quickly and cut the vinegar taste.

7 cups sliced cucumbers
salt as needed
1 cup sliced onions
1 cup sliced green bell pepper
2 cups white sugar
1 cup white vinegar
1 tablespoon celery seed
2 teaspoons salt, or to taste

Steps:

  • Place cucumber slices in a colander and liberally sprinkle salt over cucumbers; set aside until water starts to release from cucumbers, about 15 minutes. Drain and rinse cucumbers.
  • Mix cucumbers, onions, and green bell pepper together in a bowl.
  • Whisk sugar, vinegar, celery seed, and 2 teaspoons salt together in a bowl until dressing is smooth; pour over cucumber mixture and stir until evenly coated.

My Grandma always made this salad for family get-togethers and it was (and still is) my favorite. Since she has passed on, it is now up to me to bring the Green Salad. Luckily, my daughter loves this salad as much as I do!

2 pkg lime jello
1/2 c white sugar
1 1/2 c water, boiling
2 c mayonnaise
2 c cottage cheese
2 c cucumber, peeled, seeded and diced

Steps:

  • 1. Mix jello and sugar with boiling water. Stir for 2 minutes to dissolve jello and sugar.
  • 2. Whisk in mayonnaise until combined. Chill until slightly set.
  • 3. Stir in cottage cheese and cucumbers. Chill until completely set.

this recipe sounds kind of strange, but once you try it, you will make it again. It is a savory jello salad.

1/2 small white onions
1 pt cottage cheese, small curd
1 pkg lime jello
1/2 c hot water
1 Tbsp white vinegar
1/2 c mayonnaise
1/2 c pecans, in pieces

Steps:

  • 1. Peel and grind cucumber, onion , drain excess liquid, put cottage cheese through sieve and drain excess liquid; dissolve the jello in hot water and the vinegar and mayonnaise to the jello mixture, add the cucumber mixture, and cottage cheese and stir together, add pecans and fold into mixture, chill and serve.
