My French Canadian grandmother always made tuna salad with chopped egg in it. I've made my own version, adding veggies for complete nutrition and turning it into a wrap. It's fun and we get the memory of my grandmother with each bite. -Jennifer Magrey, Sterling, Connecticut

Number Of Ingredients 10

1 can (5 ounces) light water-packed tuna, drained and flaked
1 celery rib, finely chopped
1/4 cup fat-free mayonnaise
1/4 teaspoon pepper
2 whole wheat tortillas (8 inches), room temperature
1/2 cup shredded lettuce
1 small carrot, shredded
4 slices tomato
2 slices red onion, separated into rings
1 hard-boiled large egg, sliced

Steps:

  • In a small bowl, combine the tuna, celery, mayonnaise and pepper. Spoon tuna mixture down the center of each tortilla. Top with lettuce, carrot, tomato, onion and egg. Roll up tightly.

This kale crunch salad is loaded with curly kale, a homemade vinaigrette, and sweet and savory crunchy toppings! Ready in 10 minutes.

5 oz Curly kale ((stems removed, chopped))
1/2 cup Sugar-free dried cranberries
3 tbsp Eaton Hemp Hearts
3 tbsp Almonds ((sliced))
3 tbsp Wholesome Yum Keto Maple Syrup ((or regular if you're not sugar-free))
1 1/2 tbsp Apple cider vinegar
1 tbsp Dijon mustard
1/4 tsp Sea salt
1/8 tsp Black pepper
1/4 cup Olive oil

Steps:

  • In a small bowl, whisk together the maple syrup, vinegar, mustard, salt, and pepper.
  • Pour the olive oil into the bowl in a thin stream, whisking constantly, until emulsified.
  • Place the chopped kale into a large bowl. Pour the dressing over it and massage with your hands for 2-3 minutes, until kale is no longer rigid.
  • Add the cranberries, hemp hearts, and almonds. Toss to coat.

This is a bit like a coleslaw, but much more interesting with the combination of the baby vegetables and the shoots.

Number Of Ingredients 16

2 handfuls alfalfa and broccoli sprouts
2 handfuls mung bean sprouts
2 handfuls sunflower salad shoots
Mixed edible flowers
1 bunch fresh mint, leaves picked
2 baby courgettes (zucchini), sliced thinly lengthways
2 red chicory, cut in 1/2 then finely shredded
1 bunch baby carrots, sliced thinly lengthways
1/2 fennel bulb, halved and sliced finely
1 bunch French breakfast radishes, sliced lengthways
1 head celery, outer stalks and ends removed, halved and finely sliced lengthways
2 tablespoons French mustard
4 tablespoons creme fraiche
1 tablespoon olive oil
2 to 3 tablespoons white wine vinegar
Sea salt and freshly ground black pepper

Steps:

  • Mix all the vegetables together in a bowl. Now make your dressing by mixing all the ingredients together and toss the dressing with the salad.

GRANDMA'S CRANBERRY SALAD



Grandma's Cranberry Salad image

I always love the punch of color that cranberries add to a meal, and this delicious cranberry salad recipe really does the berry justice. Not only did we love the perfect balance of sweet and tart, but the chopped pecans added a wonderful crunch that we'd never had before in a cranberry salad.

Number Of Ingredients 9

1 small package of cherry Jell-O (3oz box)
1 c hot water
1 c sugar
1 Tbsp lemon juice
1 c drained crushed pineapple (8oz can) (juice reserved)
1 c pineapple juice (use the reserved juice and add water to make 1 cup)
1 c ground cranberries
1 orange (ground)
1/2 c pecans, chopped

Steps:

  • 1. Boil the cup of water. Dissolve the Jell-o in the hot water in an 8-inch square pan mix well. Add the sugar, lemon juice, and pineapple juice. Stir to dissolve well. Note: You can substitute the 8x8 dish and use a 9x13 dish, it seems to gel up a bit better that way.
  • 2. Add the remaining ingredients and mix. Chill overnight.
  • 3. Grandma's Notes: Chop up the pecans first before getting the blender wet. Or you could just buy pre-chopped pecans and save a step. Use the blender or food processor to chop up cranberries, then orange, seeded, and partially peeled. The chopped peel gives it that special zing!
