Pastry for single-crust pie (9 inches)
CREAM LAYER:
1/2 cup sugar
2 tablespoons cornstarch
1/2 teaspoon salt
2 cups 2% milk
3 egg yolks, lightly beaten
2 tablespoons butter
1 teaspoon vanilla extract
PINEAPPLE LAYER:
1/3 cup sugar
2 tablespoons cornstarch
1/4 cup water
1 can (20 ounces) crushed pineapple, undrained
2 tablespoons butter
MERINGUE:
3 egg whites
1/2 teaspoon vanilla extract
1/4 teaspoon cream of tartar
6 tablespoons sugar

Steps:

  • Line a 9-in. deep-dish pie plate with pastry; trim and flute edges. Line unpricked pastry with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5-7 minutes longer or until lightly browned. Cool on a wire rack., In a small saucepan, combine the sugar, cornstarch and salt. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot mixture into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; stir in butter and vanilla. Transfer to prepared pastry., For pineapple layer, in a small saucepan, combine sugar and cornstarch. Stir in water until smooth. Add pineapple. Bring to a boil over medium-high heat; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in butter. Gently spread over cream mixture., For meringue, in a large bowl, beat the egg whites, vanilla and cream of tartar on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form. Spread over hot filling, sealing edges to crust., Bake at 350° for 15 minutes or until golden brown. Cool on a wire rack for 1 hour; refrigerate for 1-2 hours before serving.

1 can mushroom, chopped
1 1/2 teaspoons chili powder

Steps:

My Dad's mom would make this for him every time we visited Illinois. As a child, I could hardly wait for the filling to cool enough to eat. The secret is to stir constantly for a rich, velvety smooth pudding-like melt-in-your-mouth experience. These instructions are per my grandmother, written down by my mother not too long before Grandma passed away. Grandma wouldn't give the recipe away until her last years. It's a family treasure now! Top the pie with meringue, whipped cream, or whipped topping.

1 cup sugar
3 tablespoons all-purpose flour
½ teaspoon salt
1 cup milk
1 (15 ounce) can crushed pineapple, drained
2 egg yolks

1 tablespoon butter
1 medium onion, diced
1 (15 ounce) can creamed corn
1 (14.5 ounce) can diced tomatoes with juice
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon salt
1 cup cornmeal
1 cup milk
2 large eggs, beaten
1 (12 ounce) can corned beef
1 (6 ounce) can whole black olives, drained
½ cup shredded Monterey Jack cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Melt butter in a large skillet over medium heat. Add onion and sauce until soft, about 5 minutes. Add creamed corn, tomatoes with juice, chili powder, garlic powder, and salt; bring to a boil.
  • Stir in cornmeal, milk, and eggs; return to a boil. Cook until it thickens, 2 to 3 minutes. Remove from the heat.

1 c butter (unsalted)
3 clove garlic, minced fine
28 oz can(s) diced fire-roasted tomatoes w/ juice
3 large eggs
2 lb lean hamburger
3 tsp salt
1 3/4 c polenta (not quick cooking)
2 can(s) large pitted olives, quartered
7 oz diced green chilis
1 large yellow onion, diced small
3/4 c vegetable oil
14 oz can creamed corn
1 c whole milk
3 Tbsp chili powder (mixed w/ 1/2 cup water)
1/4 tsp ground pepper
2 tsp ground cumin
2 Tbsp diced cilantro (optional)

Steps:

  • 1. Combine onion, garlic, oil and butter in large turkey roaster pan (this will probably cover 2 stove burners). Simmer 15 minutes, stirring constantly.
  • 2. Add diced tomatoes with juice, cream corn, eggs, cilantro, if using, milk, hamburger (pinch off in small bits and stir into mixture), chili powder(mixed with 1/2 cup water), polenta, cumin, chilis, olives, salt & pepper. Cook 10 minutes on top of stove, stirring constantly so mixture does not burn on bottom.
  • 3. Transfer pan to oven and bake at 350° for 45 minutes uncovered. Let sit 10-15 minutes before serving.
