Mama Reed's Southern Style Rice Pudding is baked to develop a wonderful custard which transforms it into a rich and comforting dessert.

4 eggs (beaten)
3 cups milk
1 cup sugar
1/2 teaspoon salt
2 teaspoons vanilla
2 cups cooked rice
1/2 teaspoon cinnamon
1/2 cup raisins

Steps:

  • Cook up your rice. Beat eggs. Stir in sugar. Add other ingredients. Stir.
  • Spray oven proof casserole dish with Pam. Pour mixture into dish.
  • Set dish in pan of hot water and bake at 300 degrees for 90 minutes.
  • After 30 minutes of cooking insert spoon at edge of pudding and stir from the bottom to distribute rice and raisins.

This is a delicious rice pudding recipe passed down from my husband's grandmother. My husband cannot get enough of it!

1 cup water
½ cup uncooked white long-grain rice
2 beaten egg yolks
½ cup white sugar
1 tablespoon cornstarch
1 pinch salt
2 ½ cups milk
1 tablespoon fresh lemon juice
½ cup raisins
2 egg whites
¼ cup white sugar

Steps:

  • Place the water and rice into a saucepan, and bring to a boil over medium-high heat. Stir, and reduce heat to low. Cover pan, and simmer until all water is absorbed, about 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat the egg yolks together with 1/2 cup sugar in a mixing bowl. Add the cornstarch and salt. Continue beating, and gradually pour in the milk. Stir in the cooked rice, lemon juice, and raisins. Pour the rice mixture into a baking dish, and place inside a larger baking pan. Fill the larger pan with water to 1 inch up the sides of the dish containing the rice mixture.
  • Bake in preheated oven until the pudding is creamy and most of the liquid is absorbed, stirring occasionally. If necessary, add more water to maintain the water level.
  • Meanwhile, place the egg whites in a mixing bowl and beat until soft peaks form. Continue beating, and gradually add 1/4 cup sugar. Beat until stiff peaks form. Remove the pudding from the oven, leaving it in the larger baking dish. Top pudding with the meringue, swirling with a spoon to create soft peaks.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Bake in preheated oven until the meringue is golden, 8 to 10 minutes. Serve warm.

½ cup long grain rice
1 cup 2% milk
½ (12 fluid ounce) can evaporated milk
½ cup white sugar
1 tablespoon butter
1 pinch ground cinnamon

  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, about 20. Add 2% milk, evaporated milk, sugar, and butter; stir well and cook until creamy, about 20 minutes longer. Serve sprinkled with cinnamon.

1-1/2 cups cooked rice
1/4 cup raisins
2 large eggs
1-1/2 cups whole milk
1/2 cup sugar
1/2 teaspoon ground nutmeg
Additional milk, optional

Steps:

  • Place rice and raisins in a greased 1-qt. casserole. In a small bowl, whisk the eggs, milk, sugar and nutmeg; pour over rice. , Bake, uncovered, at 375° for 45-50 minutes or until a knife inserted in the center comes out clean. Cool. 130g pudding rice
70g caster sugar
2 tsp vanilla bean paste or 1 vanilla pod, split and seeds scraped out
800ml whole milk
170ml double cream
grating of nutmeg
fruit jam of your choice, to serve (strawberry or apricot work well)

Steps:

  • Heat the oven to 160C/140C fan/gas 3 and butter a 1.5-litre baking dish. Put the pudding rice, sugar, vanilla, milk and cream in a bowl and stir to combine. Pour the mixture into the prepared dish and grate over a generous layer of nutmeg. Bake for 1 hr 30 mins until a brown skin has formed on top and the rice is cooked and tender.
  • Leave to cool slightly, then scoop the warm pudding into bowls and serve with a dollop of jam on top.

1 (12 ounce) can evaporated milk

There are many different ways to make rice pudding and everyone has their favorite. This one is my favorite. It's a very old recipe that I got from a friend. I don't know where it came from originally, but it's delicious! Hope you enjoy it, too.

1 to 1 1/2 c sugar (add the larger amount if you prefer it sweeter)
1/4 tsp nutmeg (heaping)
3 large eggs
2 Tbsp butter, melted
1 tsp pure vanilla extract
1/2 tsp salt
2 c whole milk
3 c cooked rice
1 c raisins or your favorite fruit

Steps:

  • 1. Preheat oven to 325 degrees. Grease a 9 X 13 baking dish with butter, set aside.
  • 2. In a small bowl whisk sugar and nutmeg together to remove any lumps. Set aside.
  • 3. In a large mixing bowl, add eggs and beat well. You don't need to use a mixer, you can do this by hand with a whisk. Add the sugar and nutmeg mixture and whisk again until smooth. Add melted butter, vanilla and salt and whisk until smooth.
  • 4. Add 1/2 cup of of milk and whisk thoroughly. Add remaining milk and whisk. Stir in rice and fruit and pour into prepared baking dish.
  • 5. Bake for 30 minutes; Stir from the bottom to distribute fruit and rice evenly through pudding. Bake for another 30 minutes or until set. Serve warm plain or with whipped cream or your favorite topping. Refrigerate leftovers.
