2 c milk
2 c rolled oats
2 eggs, separated
1/2 c butter, melted
1/3 c whole wheat pastry flour
1 Tbsp baking powder
1/4 tsp salt

Steps:

  • 1. Heat the milk until scalded, then pour it over the rolled oats in a medium-size bowl. Cool for about 30 minutes.
  • 2. Mix in the egg yolks, melted butter, flour, baking powder, and salt.
  • 3. Beat the egg whites until stiff, and fold into the batter.
  • 4. Make the waffles following the directions for your waffle iron. Butter the waffle iron thoroughly, since these waffles are very tender and have a tendency to stick.
  • 5. Serve warm.
  • 6. The traditional accompaniments are butter and homemade jams; butter and maple syrup; and yogurt, maple syrup, and fresh fruit.
  • 7. VARIATION: GRANDMA'S OATMEAL PANCAKES Make the batter exactly as for waffles. Fry the pancakes in butter in a large frying pan, flipping once.
  • 8. Makes 4 waffles or 12 pancakes.

2 eggs
2 tablespoons white sugar
3 tablespoons melted shortening
1 3/4 cups milk
1 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder

Steps:

  • 1.Preheat a waffle iron. 2.Beat together eggs and sugar with an electric mixer until fluffy. Pour in shortening, milk, salt, and vanilla; mix until well blended. Sift together the flour and baking powder. Mix the flour into the liquid. 3.Spoon 2/3 cup of batter onto the preheated waffle iron at a time. Close the iron and cook until steam no is no longer coming out and waffle is browned.
