CHOCOLATE CHIFFON PIE

1 3/4 cups gingersnap crumbs
2 tablespoons unsalted butter, melted
1 tablespoon granulated sugar
2 1/2 teaspoons unflavored gelatin (1 package)
1 cup whole milk
1/4 cup unsweetened Dutch-process cocoa powder
1/4 cup plus 2 tablespoons granulated sugar
Pinch salt
4 large egg yolks
3 large egg whites, at room temperature
1 teaspoon vanilla extract
1 cup heavy whipping cream
1 tablespoon confectioners' sugar
Dark chocolate, for garnish

Steps:

  • Preheat the oven to 325 degrees F.
  • For the crust: In a small bowl, combine the gingersnap crumbs, butter and granulated sugar. Press the crumb mixture into the bottom and up the sides of a 9-inch pie pan. Bake for 6 minutes. Let cool on a wire rack.
  • For the filling: In a small bowl, combine the gelatin and 1/2 cup cool water and let sit for 5 minutes until the gelatin softens and blooms.
  • In a medium saucepan over medium-high heat, bring the milk, cocoa powder, 1/4 cup granulated sugar and the salt to a simmer, stirring constantly. Remove from the heat and add the gelatin mixture, stirring until the gelatin is completely dissolved.
  • Put the egg yolks in a medium bowl and beat lightly. Gradually, in a slow stream, add 1/4 cup of the chocolate mixture to the egg yolks while whisking constantly. Pour the chocolate-yolk mixture into the pan with the remaining chocolate mixture. Cook over medium heat, stirring constantly, until slightly thickened, about 8 minutes. Let cool until barely warm, about 20 minutes.
  • In a large bowl using an electric mixer, whip the egg whites to soft peaks. Add the remaining 2 tablespoons granulated sugar and the vanilla and whip to stiff peaks. Gently fold the cooled chocolate mixture into the meringue in three additions.
  • Spoon the chocolate mixture into the cooled pie crust. Cover and refrigerate for 2 hours.
  • For the topping: Whip the cream with the confectioners' sugar in a bowl. Place dollops of whipped cream on the pie and grate the chocolate on top, if desired.

My grandmother's chocolate cream pie was a staple of my childhood. Homemade custard filling with a dense texture. Very rich, not too sweet, and oh-so-satisfying. For convenience, I make this with a store-bought graham cracker crust and top with whipped cream, but she used to make hers with a prebaked pastry crust topped with meringue. Either way, it's delicious. Hope you enjoy!

1 ½ cups white sugar
5 large egg yolks
1 cup milk
½ cup unsweetened cocoa powder (such as Hershey's®)
5 tablespoons cornstarch
½ teaspoon salt
2 cups half-and-half
1 tablespoon butter
1 ½ teaspoons vanilla extract
1 (10 inch) prepared graham cracker crust

Steps:

  • Cream sugar and yolks together in a large saucepan. Add milk, cocoa powder, cornstarch, and salt; whisk until no lumps remain. Add half-and-half and heat over medium heat, whisking constantly until filling is thickened, about 20 minutes.
  • Turn off heat when filling starts to bubble; continue to stir for 1 minute. Remove thickened filling from the warm burner. Add butter and vanilla extract, stirring well until melted and well incorporated. Let filling sit to cool slightly, about 10 minutes.
  • Stir filling well and pour into graham cracker crust, smoothing the top with a spatula. Chill, uncovered, in the refrigerator for 4 hours.

CHOCOLATE PIE FILLING
4 Tbsp cocoa powder
3 Tbsp flour
1 1/2 c milk
1 c sugar
3 egg yolks
1 tsp vanilla
1/2 stick butter
1 9 inch pie crust, baked
MERINGUE TOPPING
3 egg whites
6 Tbsp sugar

Steps:

  • 1. FOR CHOCOLATE PIE FILLING: Preheat oven to 350 degrees.
  • 2. Mix all dry ingredients (cocoa, flour, and sugar) together in a boiler. Stir to blend well.
  • 3. Add slightly beaten egg yolks into the dry ingredients. Slowly add the milk a bit at a time until well blended, Over LOW heat, cook stirring CONSTANTLY until thickened (about 5 minutes.) Remove from heat.
  • 4. Add vanilla and butter and stir to blend well. Pour into a baked 9 inch pie crust.
  • 5. TO PREPARE THE MERINGUE: Put the 3 egg whites in a small deep bowl. (I use a chilled aluminum bowl.) Beat on high until medium soft peaks begin to form.
  • 6. Slowly add the sugar and beat until the egg whites are glossy and holds firm, stiff peaks.
  • 7. Spoon over the chocolate mixture in the pie crust, pulling the meringue into peaks. Bake in a preheated oven until lightly browned.
  • 8. Allow to cool, then refrigerate until ready to serve.

15 -16 large marshmallows
1/2 cup milk
1 pint heavy whipping cream
confectioners' sugar
baked pie shell

Steps:

  • In a double boiler, break 5 Hershey chocolate bars into pieces, and melt with the marshmallows in 1/2 cup milk.
  • Cool chocolate mixture in the refrigerator while you whip half of the whipping cream until stiff.
  • Fold whipped cream into the chocolate mixture and pour into a baked pie shell.
  • Refrigerate until set.
  • Whip remaining whipping cream and sweeten to taste with confectioner's sugar.

3/4 cup sugar
5 tablespoons baking cocoa
3 tablespoons cornstarch
1/4 teaspoon salt
2 cups whole milk
3 large egg yolks, room temperature, beaten
1 teaspoon vanilla extract
3 large egg whites, room temperature
1/4 teaspoon cream of tartar
6 tablespoons sugar

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°., Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edges are light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. 1 ounce unsweetened chocolate square
1 cup milk
1 tablespoon gelatin
2/3 cup sugar
2 large eggs, separated
1 teaspoon vanilla extract
1 1/2 cups whipping cream
1 pinch salt
whipped cream (to garnish)
chocolate curls (to garnish)
1 1/2 cups graham cracker crumbs

Steps:

  • Place a baking sheet in the oven and preheat to 350°F.
  • For the crust, mix the graham cracker crumbs and butter in a bowl. Press the crumbs evenly over the bottom and sides of a 9-inch pie pan. Bake for 8 minutes. Let cool.

  • Whip the cream lightly. Set aside. With electric mixer, beat egg whites and salt until soft peaks form. Add the remaining sugar and beat only enough to blend.
  • Fold a dollop of egg whites into the chocolate mixture, then pour back into the whites and fold in gently.
  • Fold in the whipped cream and pour into the pastry crust. Put in freezer until just set, about 5 minutes. If the center sinks, fill with any remaining mixture. Chill for 3-4 hours. Decorate with whipped cream and chocolate curls. Serve cold.

½ cup white sugar
3 eggs
4 ounces German sweet chocolate, melted, divided
4 ounces semisweet chocolate, melted, divided
1 (8 inch) prepared graham cracker crust
½ cup sour cream

  • Preheat the oven to 350 degrees F (175 degrees C).
