This is perfect for a Christmas breakfast or great for a potluck! Also been known to serve this with steaks for dinner! Yummy!

1 kg frozen hash browns, cubed, not shredded
500 ml sour cream
2 (10 ounce) cans cream of mushroom soup
1/2 cup butter, melted
2 cups cheese, grated
1/2 cup onion, finely diced (optional)
1 cup parmesan cheese, to sprinkle on top

Steps:

  • In a very large bowl, mix the hash browns, sour cream, cream of mushroom soup, melted butter, grated cheese, and onion together.
  • Spread into a large 9 x 13 inch casserole dish.
  • Sprinkle with Parmesan cheese on top. In a pinch, you could use crushed cornflakes but you should top it with something.
  • Bake at 350 degrees Fahrenheit for 1 to 1-1/2 hours.

This recipe is a friend's grandma's recipe and is absolutely the best hash brown casserole I've ever had. Kentucky grandmas sure know how to cook!

1 (2 pound) package frozen hash brown potatoes, thawed
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
1 (8 ounce) container sour cream
½ cup melted butter
½ cup chopped onion
½ teaspoon salt
½ teaspoon ground black pepper
1 cup crushed cornflakes
½ cup melted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.
  • Bake in the preheated oven until the sauce is bubbly and the top is golden brown, 1 to 1 1/2 hours.

1 lb hamburger
1 medium onion, chopped
salt and pepper, to taste
1 (15 1/2 ounce) can green beans, drained
1 (16 ounce) carton cottage cheese

Steps:

  • Brown hamburger and onion in a large skillet. Add salt and pepper. Add beans and cottage cheese. Mix well and put in a greased casserole dish. Cover top with crackers and pats of butter. Bake at 350 degrees for about 40 minutes or until top is brown.

1 bag frozen shredded hash browns
10 pats butter
Salt & pepper
1 can cream of chicken soup
1/2 can cream of mushroom soup
8 oz sour cream
2 tablespoons onion, chopped fine
1 pkg (8 oz.) shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees F. Spray 9" x 13" glass pan with cooking spray. Layer hash browns in pan. Top hash browns with pats of butter, and salt and pepper as desired.
  • In bowl combine cream of chicken soup, cream of mushroom soup, sour cream, and onion. Spread mixture evenly across hash browns.
  • Cover with aluminum foil and bake for approximately 30 minutes or until hot throughout. Uncover and layer cheese on top. Bake just until cheese is melted. Enjoy!
