1 (18 to 19-ounce) box of brownie mix
+ ingredients to prepare brownies per the package instructions
3 cups mini marshmallows
1 cup sliced almonds
1/4 cup butter
3 tablespoons buttermilk
2 tablespoons cocoa powder
2 cups powdered sugar
1/2 teaspoon vanilla

Steps:

  • Prepare brownies to package directions and remove from oven, leaving oven on.
  • Top with marshmallows and return to hot oven until marshmallows puff up and melt slightly.
  • Remove from oven and top with almonds, cool.
  • In a medium sauce pan, combine butter, buttermilk, and cocoa powder. Cook until boiling.
  • Remove from heat and add sugar and vanilla. Allow icing to cool for 15 minutes.
  • Pour icing over almonds and marshmallows. Allow to cool completely before cutting.

Nonstick vegetable spray, for coating pan
7 ounces bittersweet chocolate
3/4 cup (1 1/2 sticks) unsalted butter
3 large eggs
1 cup granulated sugar
1/2 cup lightly packed dark brown sugar
2 tablespoons dark corn syrup
1 cup cake flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted nuts
6 ounces mini marshmallows

Steps:

  • Preheat oven with a rack in the middle of the oven to 350 degrees. Coat a 9 by 13-inch baking pan with nonstick vegetable spray.
  • Melt the chocolate and butter in a completely dry bowl or in the top of a double boiler set over barely simmering water. In a large bowl, mix together the eggs, granulated sugar, brown sugar and corn syrup until blended. Mix in the chocolate mixture. In a separate bowl, stir the flour, baking powder and salt together with a fork. Mix it into the egg mixture. Stir in the nuts and 1/4 cup of the marshmallows. Scrape the mixture into the prepared pan. Bake for 25 minutes, until barely set. Coat the top with the remainder of the marshmallows and bake for 5 more minutes. Set the pan on a rack to cool. Cut into 1 1/2 by 3-inch bars.

1 lb bulk pork sausage
1 container (8 oz) refrigerated prechopped onions
1 container (8 oz) refrigerated prechopped tricolor bell peppers
1 bag (30 oz) frozen country-style shredded hash brown potatoes
2 cups shredded sharp Cheddar cheese (8 oz)
1 cup sour cream
1 can (10 3/4 oz) condensed Cheddar cheese soup

Steps:

  • Heat oven to 375°F. Spray 3-quart casserole with cooking spray.
  • In 10-inch skillet, cook sausage over medium-high heat 3 minutes, stirring to crumble. Add onions and peppers. Cook 5 minutes longer or until sausage is no longer pink and vegetables are tender. Place mixture in large bowl. Add hash browns, 11/2 cups of the cheese, the sour cream and soup; stir to coat. Spoon mixture into casserole. Top with remaining 1/2 cup cheese.
  • Bake uncovered 50 minutes or until potatoes are tender and top is golden brown.

This is another recipe handed down from my husband's family. During the stressful meeting-of-the-parents times over the course of our relationship, this hash brown casserole was perhaps one of the only things I could look forward to without some level of hesitation! We still make it as often as we can justify it, which sadly is less often than we wish it were. (Stupid calories.) We have tried making it with low-fat ingredients and it does work nicely, but full-fat ingredients will make it shine. Note that the sizing of frozen hash brown bags doesn't always allow for you to buy a two-pound bag, so you may need to mix and match until you get that amount. We usually have some frozen hash browns left over when we make it, which can be used in any number of other recipes as desired. Also note that the topping is technically optional, but we highly recommend using it. It adds a wonderful texture that we would miss if it weren't included. If you have any casserole left over (no promises!) then this reheats well too.

2 cups sharp cheddar cheese, shredded
1 (10 ounce) can cream of chicken soup
1 tablespoon salt
1/2 teaspoon garlic powder
2 cups sour cream
1/4 cup butter, melted
2 cups corn flakes, crushed

Steps:

  • Mix all casserole ingredients together in a large bowl, then pour into a greased 9x13 pan.
  • If using the topping, mix the topping ingredients together in a medium bowl, then sprinkle it over the top of the casserole.
  • Bake at 350 degrees, uncovered, for 1 hour.

4 eggs
2 cups sugar
1 1/2 cups self rising flour
2 cups pecans
4 Tbsp cocoa
4 Tbsp melted butter
8 Tbsp evaporated milk
ICING
1 bag mini marshmallows
1 box powdered sugar
8 Tbsp evaporated milk
4 Tbsp butter, softened
4 Tbsp cocoa

Steps:

  • Beat eggs well by hand. Then in order add other cake ingredients.
  • Bake for 30-35 minutes at 350°F.
  • Cover entire cake with mini marshmallows while still hot*. Mix together icing ingredients, ice cake and enjoy.

Brownies:
1/2 Cup Butter
2 Tbs. Cocoa
2 Eggs
1 Cup Sugar
3/4 Cup Flour
1 tsp. Vanilla
Pinch of Salt
1/2 Cup Unsalted Nuts, chopped
Chocolate Sauce:
1/4 Cup Butter
6 Tbs. Evaporated Milk
3 Cups Powdered Sugar
3 Tbs. Cocoa
1/2 Cup Unsalted Nuts
6 oz. Miniature Marshmallows or 20 regular, cut in half

Steps:

  • Melt butter and stir in cocoa. In a mixing bowl, beat eggs and add sugar. Beat in melted butter and cocoa mixture, then add flour, vanilla and salt. Stir in nuts. Bake at 350 degrees for 20-25 minutes in a greased and floured 8 x 8 inch pan. A toothpick inserted in center should come out almost clean. While brownies bake, mix butter, milk, powdered sugar and cocoa in the top of a double boiler over boiling water. Stir in nuts. When brownies are baked, spread or place marshmallows over them. Pour chocolate sauce on top. Cool and cut into squares. Yields 16.
