Apples, celery, walnuts and a dash of high society: yes sir, this is one fine salad.

Number Of Ingredients 14

75 gm walnuts, plus extra to serve
2 red apples such as pink lady
Juice of 1 lemon
½ celery, finely sliced widthways, heart leaves reserved for serving
1 radicchio, leaves torn
2 witlof, leaves separated
200 gm red seedless grapes
1 cup (firmly packed) flat-leaf parsley leaves
2 egg yolks
1 tbsp chardonnay vinegar
1 tsp Dijon mustard
130 ml olive oil
25 ml walnut oil
Juice of 1 lemon, or to taste

Steps:

  • For mayonnaise, process egg yolks,vinegar and mustard in a food processor until well combined. With motor running, add combined oils in a thin steady stream, then add lemon juice to taste. Season to taste. Makes about 200ml. Store leftover mayonnaise in refrigerator for up to 2 weeks.
  • Preheat oven to 180C. Spread walnuts over an oven tray and toast until golden(3-5 minutes). Set aside to cool.
  • Cut apples into julienne and combine with half the lemon juice in a bowl. Add walnuts, celery, radicchio, witlof, grapes and parsley. Add 2 tbsp mayonnaise (adding more to taste) and remaining lemon juice, toss to combine. Season to taste, scatter with celery leaves and extra walnuts and serve immediately.

1/2 cup walnuts halves
1/2 cup non-fat yogurt
2 tablespoons light mayonnaise
2 tablespoons minced fresh flat-leaf parsley
1 teaspoon honey
1/2 lemon, zest finely grated
Freshly ground black pepper
2 large crisp apples, such as Gala
2 ribs celery (with leaves), sliced into 1/2-inch-thick pieces (leaves chopped)
1/4 cup golden raisins
1/2 lemon, juiced
1 head Boston lettuce, trimmed, washed, and dried

Steps:

  • Preheat the oven to 350 degrees F.
  • Spread the nuts on a baking sheet and toast in the oven for 8 to 10 minutes. Cool and break the nuts up into small pieces.
  • Whisk the yogurt, mayonnaise, parsley, honey, and lemon zest in a large bowl and season generously with pepper.
  • Halve, core, and cut the apples into 3/4-inch pieces, leaving the skin intact. Add the apples, celery and raisins to the bowl, and sprinkle with the lemon juice; then toss with the dressing. Cover and refrigerate if not serving immediately.
  • When ready to serve, toss walnuts into the salad. Arrange the lettuce leaves on a large platter, or divide them among 4 salad plates. Place the salad on the lettuce and serve.

4 medium golden delicious apples, cored and diced (4 cups)
1 tablespoon lemon juice
1/2 cup celery, chopped
1/2 cup halved green seedless grape
1/2 cup chopped walnuts
1/4 cup raisins
1/2 cup mayonnaise
1 1/2 tablespoons sugar
1/2 teaspoon lemon juice
1/2 cup whipping cream
ground nutmeg (to garnish)

Steps:

  • In a large bowl, sprinkle apples with 1 tablespoon lemon juice.
  • Add celery, grapes, walnuts, and raisins.
  • For dressing--------------.
  • combine mayonnaise and 1/2 tsp lemon juice.
  • Whip cream with sugar until fairly stiff.
  • Fold whipped cream into the mayonnaise mixture.
  • Mix with the apple mixture.
  • Sprinkle with nutmeg.
  • Chill at least one hour before serving.

"Millions who never visited the Waldorf owe him a debt," The New York Times wrote in 1950, upon Oscar Tschirky's death. Mr. Tschirky, a Swiss immigrant who became known as "Oscar of the Waldorf," is credited with creating this piece of Americana in 1893, a timeless dish whose popularity has spread far past the Waldorf's exclusive doors and into home kitchens. Over time, variations would include blue cheese, raisins and chopped walnuts, which can be added here alongside the celery and apples. But the original is an exercise in simplicity: four ingredients that have lived on for over a century.
