RASPBERRY FUDGE BROWNIES

4 ounces unsweetened chocolate
8 ounces unsalted butter
½ teaspoon salt
1 teaspoon pure vanilla extract
2 cups sugar
4 eggs
1 cup all-purpose flour
2 cups walnut pieces
1 scant cup raspberry preserves

Steps:

  • Melt the chocolate and butter in a large, heavy saucepan over low heat, stirring occasionally.
  • Remove the pan from the heat and add the salt, vanilla, and sugar. Mix well.
  • Add eggs, one at a time, mixing after each one. Add the flour and beat until smooth. Stir in the walnut pieces.
  • Pour half of the batter into a greased 9x13-inch baking pan and use the back of a spoon or spatula to smooth the surface.
  • Freeze the batter for 30 minutes.
  • Preheat the oven to 350 degrees F.
  • When the batter is frozen, spread the preserves on top of the batter in a thin layer. Pour the remaining batter over the preserves and gently smooth it over to cover the preserves.
  • Bake for 40-45 minutes, or until a toothpick comes out clean. You want the brownies moist and fudgy, so be careful not to overbake!
  • Cool the pan on a wire rack for 10 minutes before slicing.

1 cup white sugar
2 eggs
½ teaspoon vanilla extract
½ cup butter or margarine, melted
½ cup all-purpose flour
⅓ cup unsweetened cocoa powder
¼ teaspoon baking powder
¼ teaspoon salt
½ cup miniature chocolate chips
½ cup evaporated milk
1 egg yolk
4 (1 ounce) squares semisweet baking chocolate, chopped
6 ounces cream cheese, softened
2 tablespoons seedless raspberry jam
1 cup frozen whipped topping, thawed
2 drops red food coloring
16 chocolate curls

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Line an 8 inch square baking pan with aluminum foil.
  • In a large mixing bowl, beat the sugar, 2 whole eggs, and vanilla until combined. Mix in butter. In another bowl, combine the flour, cocoa powder, baking powder, and salt; stir into butter mixture, mixing just until incorporated. Fold in the chocolate chips. Pour the batter into the prepared pan.
  • Bake in preheated oven until a toothpick inserted in the center comes out with moist crumbs attached, 25 to 30 minutes. Cool pan on wire rack.
  • Whisk together the evaporated milk and egg yolk in a small saucepan. Heat over medium low, stirring constantly, until the mixture is very hot and thickens slightly; do not boil. Place the 4 ounces of chopped semisweet chocolate in a medium bowl, and slowly pour in the hot milk. Stir until the chocolate is melted and smooth. Pour the filling over the cooled brownies; refrigerate until firm, about 2 hours.
  • Beat the cream cheese with the raspberry jam in a large bowl until smooth. Fold in the whipped topping, and add the food coloring if desired. Top the cooled brownies with the frosting, using a cake comb to create a design. Cut brownies into 16 squares, then cut each square in half diagonally to form triangles. Garnish with chocolate curls if desired.

200g dark chocolate, broken into chunks
100g milk chocolate, broken into chunks
250g pack salted butter
400g soft light brown sugar
4 large eggs
140g plain flour
50g cocoa powder
200g raspberries

Steps:

  • Heat oven to 180C/160C fan/gas 4. Line a 20 x 30cm baking tray tin with baking parchment. Put the chocolate, butter and sugar in a pan and gently melt, stirring occasionally with a wooden spoon. Remove from the heat.
  • Stir the eggs, one by one, into the melted chocolate mixture. Sieve over the flour and cocoa, and stir in. Stir in half the raspberries, scrape into the tray, then scatter over the remaining raspberries. Bake on the middle shelf for 30 mins or, if you prefer a firmer texture, for 5 mins more. Cool before slicing into squares. Store in an airtight container for up to 3 days.

6 ounces unsweetened chocolate
1 cup butter
2 cups sugar
4 eggs
2 teaspoons vanilla
1 1/2 cups flour
1/2 teaspoon baking powder
1 cup sliced almonds
1 cup milk chocolate chips
3/4 cup raspberry preserves
1/4 cup fresh raspberry (garnish)

Steps:

  • In a large bowl, melt together butter and chocolate in a microwave; With a wire whisk, beat in sugar, eggs, and vanilla - Let cool slightly; Gradually stir in flour and baking powder just to combine; Fold in almonds and chocolate chips.
  • Spread about 3/4 of the batter evenly in a 13" x 9" x 2" pan that has been coated with a non stick spray; Carefully spread raspberry preserves on top of the batter; Drizzle remaining batter evenly over preserves swirling top lightly with a spoon; Gently smooth top.
  • Bake for about 20 - 25 minutes at 350° or until the top is slightly puffed and a toothpick inserted in the center comes out clean.

1/2 cup butter
3 ounces bittersweet chocolate (OR 2 ounces semisweet chocolate AND 1 ounce unsweetened chocolate)
2 eggs
1 cup sugar
1 teaspoon vanilla
3/4 cup flour
1/4 teaspoon baking powder
1 dash salt
1/2 cup slivered almonds
1/2 cup raspberry preserves
1 cup milk chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Butter and flour an 8 inch square pan.
  • Melt butter and bittersweet chocolate in a small heavy saucepan on low heat or in microwave until melted.
  • Allow to cool.
  • Beat eggs, sugar and vanilla in a large bowl until light and fluffy.
  • Beat in chocolate mixture.
  • Stir in flour, powder and salt until just blended.
  • Spread 3/4 of batter in prepared pan and sprinkle almonds evenly over top.
  • Bake for 10 minutes, remove from oven and spread preserves over almonds.
  • Spoon remaining batter over preserves, carefully smoothing top.
  • Bake for 25 minutes or until top just begins to feel firm.
  • Remove from oven and sprinkle evenly with chocolate chips.
  • Let stand until chips are melted and then spread evenly over brownies.
  • Cool completely on wire rack.
  • Cut into squares.

1 cup butter
4 (1 ounce) unsweetened chocolate squares
2 cups sugar
4 eggs
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup seedless raspberry jam
1/4 cup heavy whipping cream
4 (1 ounce) semi-sweet chocolate baking squares

Steps:

  • Heat oven to 350°F Place butter and unsweetened chocolate in medium microwave-safe bowl. Microwave on HIGH (100% power) for 1 minute; stir. Microwave 30 seconds; stir until smooth; set aside.
  • Combine sugar, eggs and vanilla extract in large bowl. Beat at medium speed, until well mixed. Add melted chocolate mixture; continue beating until well mixed. Reduce speed to low; add flour and salt. Beat just until mixed. Spread batter into greased 13x9-inch baking pan.
  • Stir jam until smooth. Drop tablespoonfuls of jam evenly over batter. Swirl jam through batter using knife. Bake for 40 to 45 minutes or until set and brownies begin to pull away from sides of pan. (DO NOT OVERBAKE.) Cool completely.
  • Place whipping cream in 1-quart saucepan. Cook over medium heat just until cream begins to boil (1 to 2 minutes). Add semi-sweet chocolate; remove from heat. Stir with wire whisk until smooth. Spread over brownies.
  • Recipe Tip
  • For easy pan removal and cutting, line baking pan with aluminum foil, leaving 1-inch overhang on ends; lightly grease foil. Once brownies are cooled and frosted, remove brownies by lifting foil at edges. Cut into bars.

I've been looking for a white chocolate and raspberry cookie recipe for ages... This hits the sweet spot. These are soft and fudgy white brownies, dotted with red raspberries. They can be made up to 3 days ahead and stored in an airtight container at room temperature.

6 ounces good quality white chocolate, coarsely chopped
1 cup all-purpose flour
1/4 teaspoon salt
1/2 cup sugar
1/4 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2/3 cup white chocolate chips
1 cup fresh raspberries or 1 cup frozen unsweetened raspberries, not defrosted

Steps:

  • Preheat oven to 325 degrees F. Butter 8-inch non-stick square baking pan. Stir 6 ounces white chocolate in large metal bowl set over saucepan of simmering water until melted and smooth, or use a microwave. Set aside to cool slightly.
  • Stir flour and salt in small bowl to blend. Set aside. Using electric mixer beat sugar and butter in large bowl to blend. Mix in eggs, vanilla and almond extract. Mix in melted white chocolate. Stir in flour mixture just until blended - do not overmix. Stir in white chocolate chips. Gently stir in raspberries just until distributed evenly. Transfer batter to prepared pan, spreading evenly.
  • Bake until top is golden and tester inserted into center comes out with moist crumbs attached, about 40 minutes if using fresh raspberries or 45 minutes if using frozen raspberries. Cool in pan.
  • Cut into 16 squares. Transfer to platter and serve.
