- Place the Gorgonzola cheese, oregano, garlic, tarragon, basil, olive oil, milk, and vinegar in a blender or food processor. Blend until smooth.

TOASTED WALNUT SALAD WITH MANDARIN ORANGES AND GORGONZOLA CHEESE
I had this salad at one of my favorite restaurants. I couldn't figure out the secret until I toasted the walnuts. This salad blends all the flavors together well, it is a great side to just about anything. Easy to put together and chill while you cook other things. If you don't have raspberry vinaigrette, try with Recipe #23478.

- Melt butter in a sauce pan.
- Stir in walnut pieces and coat with butter.
- Stir for 4 minutes and remove from pan and set aside.
- Allow to cool to room temperature.
- Toss greens, mandarin orange segments and crumbled cheese.
- Toss with toasted walnuts and serve with raspberry vinaigrette salad dressing.

SPINACH SALAD WITH GORGONZOLA CHEESE
This is just a wonderful salad with a great combination of flavors with the sweetness of the fruit and the tartness of the dressing and cheese. It is a spin-off of LonghornMama's Fruit 'n' Veggie Salad which is also a great salad. I made this again for my Easter weekend meal and added about 1/2 cup of dried bananas to it and would highly recommend doing that in the original recipe. :)

Steps:
- Cut stems from spinach and wash and spin dry.
- Chop the apple into small bite size pieces and place in a covered storage bowl or resealable bag.
- Add the lemon juice to the apples and set aside.
- Add the chopped apricots, raisins, broccoli florets and sunflower seeds to the spinach.
- Just before serving add the chopped apples and crumbled gorgonzola cheese.
- Add enough dressing to lightly coat. You will have extra dressing left over, but it keeps well.
- Add salt and pepper to taste.
- Dressing.
- Combine the Enova Salad Oil or light olive oil, honey and Balsamic Vinegar.

- Heat oven to 350 and toast the walnut pieces (on baking sheet) for a few minutes.
- Pour lettuce into bowl.
- Salt and pepper to taste.
- Whisk together olive oil, vinegar, and mustard in small bowl.
- Add cheese and toasted walnut pieces to lettuce.
- Pour salad dressing over salad and toss well.

- Finely chop garlic cloves in processor. Add 1/4 cup balsamic vinegar and 1 tablespoon Dijon mustard and blend until smooth. With machine running, gradually add olive oil and process until well blended. Season dressing to taste with salt and pepper; set aside.
- Combine cabbage, chicken, fennel, radicchio, onion, walnuts, carrot and pear slices in large bowl. Pour enough dressing over salad to coat. Toss well. Working in batches, sauté salad mixture in large skillet over medium heat until salad is warm and cabbage is slightly wilted, about 5 minutes. Divide salad among 4 plates. Sprinkle 1/4 cup cheese over each salad and serve.

- Crunble gorgonzola cheese into a food processor and add vinegar; run the machine until mixture is smooth.
- With the machine running,(DO NOT ADD OIL ALL AT ONCE)Add oil in a thin stream very slowly to emulsify.
- Taste, if needed add some salt.
- Tranfer oil to small jar; Serve over mixed greens & fruit.

This is a favorite salad in our house. I change it around to match the fruits of the season. Some of our favorites are: canned mandarin oranges, diced apples, diced pears, fresh berries, or even Craisins. I love the fact I always have something in the fridge to top the salad. My husband doesn't like blue cheese, but the Gorgonzola isn't as strong to him. I use Paul Newman's light dressing, but use one you like!

BEET SALAD WITH GORGONZOLA CHEESE

- Place beets in a saucepan and fill with enough water to cover. Bring to a boil and cook for 20 to 30 minutes or until tender. Drain and cool, peel then cut into cubes. While the beets are cooking, place the walnuts in a skillet over medium-low heat. Heat until beets are warm and just starting to toast. Remove from heat and set aside to cool. In a small bowl, whisk together the orange juice concentrate, balsamic vinegar and olive oil to make the dressing. Combine beets, walnuts, gorgonzola and dressing a large bowl. Pack the beet mixture into biscuit rings and refrigerate. Place helping of greens onto each salad plate and top with ring mold of beet mixture and lift.
