Yield Makes 15-30 Cookies

Number Of Ingredients 7

Butter (Soft) 8oz (225g)
Caster Sugar (5oz) 140g
1 Egg Yolk
2 tsp Caramel Essence
Plain Flour 10oz (280g)
Double Chocolate Chips (100g)
Fudge Chunks (100g)

Steps:

  • Place Butter and Sugar into a bowl and rub together with hands (always hands)
  • Add egg yolk and caramel essence to the butter sugar mixture and mix together.
  • Sift flour, double chocolate chips and fudge chunks then start mixing together until the mixture is lovely and smooth.
  • Take two teaspoons or two tablespoons (depending on how big you want cookies to be) and place on a baking tray covered with non stick paper. Place in a preheated oven Gas Mark 5-6 for 10-15 minutes
  • Once cookies are soft take them out straight away never leave in oven for a longer period as it will result in a cookie that is too hard to eat. Leave to cool on a cooling rack. Once Cookies Are Cool ENJOY !!!!!

This 7-minute gooey chocolate cake recipe is one I have known since I was a child. It is a great one to rustle up in the microwave if you are in need of a quick chocolate fix, as it comes out as a chocolate sponge cake with a delicious sauce hidden at the bottom. Great with ice cream!

4 ounces self-rising flour
4 ounces white sugar
1 ounce unsweetened cocoa powder
1 pinch salt
1 egg
¼ cup milk
2 ounces margarine, melted
1 tablespoon vanilla extract
4 ounces brown sugar
1 ounce unsweetened cocoa powder
¼ pint warm water

Steps:

  • Mix flour, sugar, 1 ounce cup cocoa powder, and salt together in a bowl. Add egg, milk, melted margarine, and vanilla extract. Stir well to combine and transfer to a large microwave-safe bowl with sides at least 2 inches high.
  • Combine brown sugar and 1 ounce cocoa powder in a bowl. Sprinkle on top of the batter in the microwave-safe bowl. Pour warm water gently over the cake; use a fork to gently prick a few holes in the cake to allow water to seep in.
  • Cook in the microwave on high power for 5 minutes. Serve with ice cream or custard.

3/4 lb butter
2 1/4 cups sugar (organic)
5 eggs
1/2 tablespoon vanilla (1 vanilla bean)
3/4 cup almond flour (or paleo flour)
1 tablespoon almond flour (or paleo flour)
3/4 cup Dutch-processed cocoa powder
1 tablespoon Dutch-processed cocoa powder
1/4 tablespoon salt (Pink Himalayan or Kosher salt)
1/2 cup semi-sweet chocolate chips
3/4 cup nuts, chopped (optional)

Steps:

  • Pre heat oven to 350 F or 175 C.
  • Line 9 x 13 pan with parchment paper length and width wise so that they are perpendicular to each other. Be sure to make the parchment paper to overhang so the brownie can be lifted out of the pan. Brush the parchment paper with butter. If a glass pan is used the brownie cake must come out of the pan immediately as to not overcook.
  • Melt the butter and sugar in a heavy sauce pan on very very low heat. Let the mixture slightly cool and transfer to a large bowl. Add eggs gradually, mixing well.
  • Add vanilla. Sift dry ingredients together and add to egg mixture, stirring gently and minimally.
  • Add Chips and nuts (nuts are optional).
  • Pour into the prepared pan and bake approximately 35 minutes.
  • Do Not Over Bake!
  • Cool before cutting about 2 hours. Turn onto a surface and peel off parchment paper.
  • The brownies can be ice with frosting, or just dust with powered sugar, or have them plain, enjoy!

Steps:

  • 1. Place the butter in a large bowl and beat in the vanilla extract and condensed milk.
  • 2. Place the chocolate squares in a bowl and set it over a pan of barely simmering water. Leave it to melt, remove from the heat and stir with a wooden spoon.
  • 3. Allow the chocolate to cool and then beat it in, gradually, to the butter mixture. Beat in the icing sugar, a little at a time. When it has all been incorporated you should end up with a soft, dough-like mixture.
  • 4. Line a 20 x 30 cm shallow baking tin with baking parchment paper. Press the mixture into the tin, ensuring that the surface is even. Using the tip of a sharp knife, mark the fudge into about 16 pieces and then place it in the fridge for at least 4 hours to set.
  • 5. When the fudge has set, use the edges of the paper to lift it from the tin on to a large chopping board and cut it into the marked pieces
