3/4 cup light corn syrup
3 tablespoons butter
11 1/2 ounces milk chocolate chips (1pkg.)
1 teaspoon vanilla
9 cups Golden Grahams cereal (1 pkg.)
3 cups miniature marshmallows

Steps:

  • Grease 9 x 13 inch pan.
  • Heat syrup, butter and morsels to boiling stirring constantly.
  • Remove from heat, stir in vanilla.
  • Pour over cereal in bowl, toss until coated.
  • Fold in marshmallows 1 cup at a time.
  • Press into pan with buttered back of spoon.
  • Let stand 1 hour.
  • Cut into 2 inch squares.
  • Store at room temperature.

1 (3.9 ounce) container Mott's® Healthy Harvest Blueberry Delight Applesauce
½ cup all-purpose flour
½ cup whole wheat flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon salt
⅛ teaspoon ground cloves
2 large eggs, beaten
¾ cup granulated sugar
⅓ cup canola oil
1 Golden Delicious apple, peeled and cut into 1/4-inch dice
⅓ cup golden raisins

Steps:

  • Preheat the oven to 350 degrees F. Lightly oil or coat an 8x8-inch baking dish with nonstick cooking spray and set aside. Whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, salt, and cloves in a large bowl.
  • Combine the eggs, applesauce, sugar, oil, and apple in a separate bowl, and whisk until well blended. Pour the liquid ingredients over the dry ingredients and stir until just moistened. Stir in the raisins. Pour the batter into the prepared baking dish. Smooth with a rubber scraper.
  • Bake 30 to 35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.

This recipe comes from my Mom - I don't know where she got it, but I've been making it for 35 years - it's quick, easy and delicious!! A nice change from brownies.

2 cups firmly packed fine graham cracker crumbs (about 24 graham crackers)
1 (6 ounce) package semi-sweet chocolate chips
1/2 cup coarsely chopped nuts
1 (14 ounce) can sweetened condensed milk

Steps:

  • Mix together graham cracker crumbs, chocolate chips and nuts.
  • Blend in condensed milk.
  • Pour into an 8x8x2" pan which has been greased and bottom lined with waxed paper and greased again.
  • Bake in a preheated 350 degree oven for about 30 minutes or until the top is a golden brown.
  • Remove from pan immediately to a wire rack, and remove the waxed paper.
  • Cool.
  • Cut into 2" squares - makes 16 squares.

1 cup all-purpose flour
3 tablespoons sugar
1/2 cup cold butter
1/3 cup semisweet chocolate chips
CARAMEL LAYER:
1-1/3 cups sugar
1 cup butter, cubed
1 cup heavy whipping cream
1/3 cup corn syrup
2-1/2 cups chopped walnuts
1 ounce unsweetened chocolate, chopped

Steps:

  • Line a 9-in. baking pan with foil and grease the foil; set aside., In a large bowl, combine flour and sugar. Cut in butter until mixture resembles coarse crumbs. Press into prepared pan; prick crust with a fork. Bake at 350° for 18-22 minutes or until set and edges begin to brown., Immediately sprinkle with chocolate chips. Allow chips to soften for a few minutes, then spread over crust; set aside., In a large heavy skillet over medium-low heat, cook sugar until melted. Do not stir. Reduce heat to low; cook for 5 minutes or until golden brown., In a large saucepan, combine the butter, cream and corn syrup. Slowly pour in cooked sugar. Cook and stir over medium heat until a candy thermometer reads 240° (soft-ball stage). Remove from the heat; stir in walnuts. Pour over prepared crust., In a microwave, melt chocolate; stir until smooth. Drizzle over caramel layer. Cover and refrigerate for 2 hours or until firm., Using foil, lift candy out of pan. Gently peel off foil; cut candy into squares.

Since my DH and DS could make a meal just on taters, I'm always searching for new and great tater recipes, this one happens to be a really good one. If you like some heat add in some cayenne pepper or chopped jalapeno.

5 lbs potatoes
2/3 cup butter, melted
1 onion, chopped (I use 2 medium onions)
1 tablespoon minced fresh garlic
1 (12 ounce) can evaporated milk
4 eggs, beaten
2 -3 teaspoons salt or 2 -3 teaspoons seasoning salt
pepper
3 cups shredded cheddar cheese (or to taste)

Steps:

  • Peel the potatoes and place in cold water to prevent turning dark; set aside.
  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking dish.
  • Melt butter in a large skillet.
  • Add in onion and garlic; saute until soft (about 5-6 minutes).
  • Add in the evaporated milk and bring to a boil, then remove from heat.
  • In a large bowl, combine the eggs, salt and pepper; beat until frothy.
  • Shred the potatoes, and add to the egg mixture; toss to combine.
  • Add in the milk mixture; stir to combine.
  • Set aside about 1 cup of cheese and add the rest to the potato mixture, and mix well.
  • Transfer the mixture to prepared baking dish.
  • Bake for about 45 minutes.
  • Remove from oven and sprinkle the remaining cheese on top and return to oven, bake for an additional 25-30 minutes.
  • Cut into squares and serve hot.

YUMMY! Cheesy, easy and wonderful... a kid pleaser! I always use a bit more cheese than it calls for... a mixture of mozzarella and cheddar. I fix it the night before one of those busy days and pop in the oven when I get home... you can also cook immediately. Sooooooooo good.

8 slices white bread, cubed
1/2 cup onion, chopped
1 (10 ounce) can cream of mushroom soup
1/2 teaspoon salt
1/2 teaspoon onion powder or 1/2 teaspoon garlic powder
2 cups milk
3 eggs
pepper, to taste
1 (10 ounce) can cream of chicken soup
2 cups chicken, diced and cooked
1/2 cup mayonnaise
1 cup shredded cheese, your choice

Steps:

  • Put half of bread cubes in an 8 x 12" greased pan.
  • Combine chicken, onion, mushroom soup, mayo and seasonings.
  • Spoon over bread cubes.
  • Top with remaining cubes of bread.
  • Beat eggs slightly and blend with milk.
  • Pour over bread.
  • At this point, cover and refrigerate overnight if you choose to do so. If not, continue with below instructions without refrigerating (I have made both ways and notice no difference.).
  • Before baking, top with undiluted cream of chicken soup.
  • Bake at 325 for 1 hour.
  • Sprinkle cheese over top and bake 5 minutes more.
  • Let stand 10 minutes before serving.

2 tablespoons vegetable oil, plus more for pans
3/4 cup popping corn (enough to make 12 cups popped)
1 1/2 recipes Caramel for Bar Cookies
2 cups salted peanuts

Steps:

  • Heat oven to 350 degrees. Brush two 9-by-13-by-2-inch baking pans with oil, line with parchment, and oil parchment. Set aside.
  • Heat oil in a large, heavy-bottomed stockpot over medium heat. When hot, add popping corn. Cover, and let cook until corn starts to pop. When the popping noises become infrequent, remove stockpot from heat.
  • Transfer popped corn to a large mixing bowl. Using a microwave or double boiler, heat caramel until liquid. Add caramel and peanuts to popcorn; stir with a wooden spoon until all popcorn is coated. Transfer mixture to one of the prepared pans, and, using the back of the spoon, pack mixture as tightly as possible.
  • Bake until caramel darkens, about 20 minutes. Transfer pan to a wire rack to cool for 5 minutes. Using hot pads, place other prepared pan on top, parchment side down. Invert popcorn into second pan, and transfer to a wire rack to cool. When completely cool and hard, cut into about 36 1 1/2-by-2-inch pieces.
