8 jumbo raw shrimp
8 hard-cooked quail eggs, shelled
1 sheet Nori, cut into 8 strips 1 inch wide
1 egg, lightly beaten
1 1/2 cups Japanese bread crumbs panko
toothpicks
oil
sweet and sour sauce

Steps:

  • Getting Ready 1. Shell and de-vein shrimp, leaving tails intact. Butterfly them along the inside curve then flatten with the flat side of a cleaver. 2. Combine marinade ingredients in a bowl. Add shrimp and stir to coat; let stand 10 minutes. 3. To make each roll: Place a quail egg at one end of a strip of nori and roll up. Center wrapped egg on inner side of a butter-flied shrimp. Roll shrimp to enclose egg; secure with a wooden pick. Repeat with other eggs, nori strips, and shrimp. Cooking 1. In a wok, heat oil for deep-frying to 350F. Dip stuffed shrimp in cornstarch, then egg; coat with crumbs. Deep-fry, turning once, until golden brown, 2 to 3 minutes. Remove and drain on paper towels. 2. Cut stuffed shrimp in half horizontally and place on a serving plate. Serve with sweet and sour sauce for dipping.

Inspired by jiao yan xia, the classic Chinese dish of head-on, fried shrimp finished with a Sichuan or white pepper salt seasoning, these shrimp rolls celebrate the flavors of salt and pepper. Peeled shrimp are seasoned, breaded with cornstarch and fried until super crunchy, then sprinkled with a black pepper-salt. Once cooked, they're tucked into toasted rolls smeared with a zingy garlic mayo. Fresh cilantro, sliced chile and a squeeze of fresh lime brighten the hearty sandwich. Store any leftover pepper-salt in an airtight container and use it as a seasoning for roasted meats and vegetables.

Vegetable oil, for frying (about 2 1/2 cups)
1/2 cup mayonnaise
1/4 teaspoon grated garlic
1 teaspoon ground black pepper
1/2 teaspoon kosher salt
4 hot dog buns, preferably top-split
1 pound peeled and deveined jumbo shrimp (16 to 20 shrimp), tails removed
1/4 cup whole (or 2-percent) milk
1 cup cornstarch
2 Fresno chiles, thinly sliced
Tender cilantro sprigs, for garnish
Lime wedges, for serving

Steps:

  • In a 12-inch cast-iron or heavy skillet, heat 1 inch of oil over medium-high until an instant-read thermometer registers 350 degrees.
  • Meanwhile, in a small bowl, combine mayonnaise and garlic; mix well. In a separate small bowl, combine pepper and salt.
  • Heat a medium nonstick skillet over medium. Using 1 teaspoon of garlic mayonnaise per bun, spread on outer sides of buns, then toast them until golden, about 1 minute per side. Transfer to plates.
  • Season shrimp with about 1 teaspoon of the pepper-salt, dip in milk, then dredge in cornstarch, gently pressing so cornstarch adheres. Working in two batches, fry shrimp until crispy and cooked through, turning halfway, about 2 minutes. Transfer to a paper towel-lined plate to drain. Season with more of the pepper-salt mixture.
  • Smear some garlic mayonnaise on the inner center of buns, then divide shrimp among buns. Top with chiles, cilantro and more pepper salt. Serve with lime wedges.

Coarse salt
3 pounds unpeeled medium shrimp
1/3 cup finely chopped scallions (white and pale-green parts only), plus 2 tablespoons scallion greens thinly sliced on bias (from 7 scallions)
3 tablespoons chopped fresh tarragon
2 tablespoons finely grated lemon zest, plus 1/4 cup plus 2 tablespoons fresh lemon juice (from 2 lemons)
2/3 cup mayonnaise
3 stalks celery, thinly sliced on bias (2 cups), inner leaves reserved, divided
5 tablespoons butter, softened, divided
10 split-top hot dog buns

Steps:

  • Bring a large pot of salted water to a boil. Reduce heat to medium-high, and add shrimp. Poach until opaque throughout, 3 to 4 minutes (the water should never return to a boil). Drain shrimp, and spread on baking sheet; let cool. When no longer steaming, refrigerate to cool completely, about 40 minutes. Peel and devein shrimp. Shrimp can be refrigerated up to 1 day.
  • Mix together chopped scallions, tarragon, lemon zest and juice, and mayonnaise. Stir in shrimp, sliced celery, and 1 teaspoon salt. Refrigerate until cold, at least 30 minutes and up to 4 hours.
  • Preheat a griddle or grill to medium-high heat. Brush butter on inside surface of each bun. Place buns on griddle or grill, buttered sides down, and toast until golden brown or lightly charred.
  • Divide shrimp mixture among buns. Top with celery leaves and scallion greens.

I've messed with this recipe for years trying to find the perfect golden sauce. This is it! Make the sauce the night before you cook the shrimp.

2 egg yolks
1 ¼ cups canola oil
1 tablespoon seasoned rice vinegar
¼ teaspoon salt
¼ teaspoon garlic powder, or more to taste
3 saffron threads, crushed, or to taste
1 pound large shrimp, peeled and deveined
1 tablespoon butter, or to taste
1 splash white cooking wine

Steps:

  • Whisk egg yolks until smooth. Slowly drizzle the oil, a few drops at time, whisking continuously, until mixture resembles a thick custard. Slowly add rice vinegar, salt, garlic powder, and saffron, mixing until well combined. Cover your golden sauce and refrigerate until flavors meld, 8 hours to overnight.
  • Place shrimp on a flat work surface. Slice each horizontally through the middle, being careful not to cut all the way through to the other side. Open the 2 sides and spread them out like an open book. Pat dry with paper towels.
  • Melt butter in a large skillet over medium-low heat. Arrange shrimp in a circle in the skillet, with tails touching. Spoon about 1 heaping teaspoon golden sauce over each shrimp. Add white wine; cover with a lid and steam until sauce becomes fluffy, 5 to 7 minutes. Remove shrimp carefully with a slotted spatula onto serving plates.
