GOLDEN CHICKEN NUGGETS

- In a shallow bowl, combine the first four ingredients. In another shallow bowl, add butter, Dip chicken in butter; roll in crumb mixture. , Place in a single layer on an ungreased 15x10x1-in. baking pan. Bake at 400° for 12-15 minutes or until juices run clear.

Steps:
- Heat deep fryer.
- Cut chicken into bite size pieces.
- Soak chicken in milk.
- Mix Flour and seasoning in large bowl.
- Dip chicken into flour.
- Cook about 12 pieces at a time in fryer for 360 degrees for 6 to 9 minutes or until golden.
- Serve with Sweet and Sour sauce or honey mustard!

- Preheat oven to 350 degrees. In a medium bowl, combine bread crumbs, onion powder, chili powder, salt and pepper.
- Dip the potato quarters in the butter, then roll in the crumb mixture.
- Place on a cookie sheet, lined with parchment and bake for 60 minutes or till light brown and fork tender.
GOLDEN CHICKEN NUGGETS
Steps:
- Mix egg mixture, salt, seeds and flour until smooth. Dip chicken in batter and cook in hot oil. Fry 3-5 minutes or until golden brown. TO MAKE SAUCE: Remove all but one tbsp. oil from pan and add green peppers, pineapple chunks and chicken stock. Simmer 5 minutes. In small bowl measure together the corn starch, sugar, pineapple juice, red wine vinegar and soy sauce and blend well. Add to rest of ingredients in pan and continue stiring until mixture thickens. Add chicken balls and coat with sauce. Serve immediately. If not serving immediately, do not add chicken until ready. Keep sauce mixture just warm until ready to use. Can be served over white rice for dinner or kept in a fondue pot on table for guests.
GOLDEN NUGGETS
From Jo Ann Shirley's 1978 Cakes and Cookies cookbook. These cookies are flavored with cinnamon, vanilla and orange and are said to make your house smell amazing when you bake them. The dough should be chilled until firm enough to shape into balls, but this time is not included in the prep time I have given.

- Cream together margarine and sugar until light and fluffy. Add egg and beat well.
- Add sifter flour, salt, cinnamon, vanilla, orange rind and juice. Mix well. Chill.
- Shape into 1" balls. Roll in nuts. Bake @ 325 degrees for about 20 minutes.
