3 cups crushed tortilla chips (or Dorito Nacho Cheese chips)
15 oz. black beans (drained and rinsed)
2 cups chopped cooked chicken ((rotisserie chicken works well))
1 teaspoon ground cumin
21 oz. cream of chicken soup (2 (10.5 oz) cans)
1 10 oz. can Rotel tomatoes (undrained)
2 cups shredded jack cheese
2 cups shredded medium cheddar cheese
1 tomato (diced)
1 bunch cilantro (rinsed and chopped)
Jalapeños (optional)

Steps:

  • Preheat oven to 350 F and grease a 13x9 casserole dish with non-stick cooking spray.
  • Crush tortilla chips lightly and sprinkle approximately 1 cup across the bottom of the baking dish.
  • Layer diced chicken and black beans over the crushed chips.
  • Stir 1 teaspoon of cumin into the cream of chicken soup. Spread the soup mixture over the chicken and beans, using a spatula to gently spread it evenly over the entire top. Add canned tomatoes over the soup layer.
  • Sprinkle cheese evenly over the tomato layer and top with remaining crushed chips.
  • Bake for 25-30 minutes or until casserole is hot and bubbly and the cheese is fully melted.
  • Garnish casserole with cilantro and chopped tomatoes.
  • Serve immediately with a slice or two of fresh jalapeño.

1 can(s) cream of mushroom soup (10.5 oz)
1 can(s) cream of chicken soup (10.5 oz)
1 can(s) cheddar cheese soup (10.5 oz)
1 can(s) diced tomatoes with chiles (10 oz)
1 can(s) green chiles (4 oz)
4 cup(s) cooked chicken
1 package(s) flour tortillas
2 cup(s) shredded cheddar cheese
1 bottle(s) cooking spray

Steps:

  • Preheat oven to 350F. Spray a 13x9 casserole dish with cooking spray.
  • In a pan, stir together the 3 kinds of soup, tomatoes, and green chili. Stir in the chicken. Warm mixture on low. This makes it easier to spread.
  • Add a layer of tortillas to the baking dish.
  • Add a layer of the chicken mixture to the dish. Begin and end with tortillas.
  • Sprinkle the cheese over the casserole.
  • Bake 350 F for 30 minutes. For a golden top, you can broil the top for about 40 seconds.

2 -3 cups boneless chicken, cooked and deboned
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of mushroom soup or 1 (10 1/2 ounce) can condensed golden mushroom soup
1 (10 1/2 ounce) can cream of celery soup
1/4 cup onion, chopped
1/2 cup bell pepper, chopped
3 tablespoons hot sauce (or more if desired)
8 -10 small corn tortillas
1 1/2 cups canned mushrooms (use only if you use golden mushroom soup)
1 1/2 cups cheddar cheese, shredded

Steps:

  • Grease a 9x13 casserole and line it with tortillas that have been moistened with chicken broth.
  • Lay deboned chicken on top of tortillas. Cover with onions, peppers and mushrooms.
  • Mix soups together with hot sauce and pour over other ingredients in pan.
  • Cover with shredded cheese.

1 1/4 cups hot water
3/4 cup salsa
1 tablespoon lowfat margarine (optional)
1 (6 ounce) package stove top chicken flavor stuffing mix
6 boneless skinless chicken breast halves
1/2 cup reduced-fat monterey jack cheese, shredded

Steps:

  • Heat oven to 350 degrees.
  • Stir in water, 1/4 cup of the salsa, margarine and vegetable/seasoning packet in 2-quart baking pan.
  • Stir in stuffing crumbs to moisten.
  • Arrange chicken over stuffing.

2 tablespoons butter
2 poblano peppers, seeded and coarsely chopped
1 small onion, finely chopped
2 tablespoons all-purpose flour
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/4 teaspoon salt
2/3 cup 2% milk
1 package (8 ounces) cream cheese, cubed
2 cups shredded pepper jack cheese
2 cups coarsely shredded rotisserie chicken
1 can (4 ounces) chopped green chiles
2 packages (8-1/2 ounces each) cornbread/muffin mix

Steps:

  • Preheat oven to 350°. In a large skillet, heat butter over medium-high heat. Add peppers and onion; cook and stir until peppers are tender, 4-6 minutes., Stir in flour and seasonings until blended; gradually stir in milk. Bring to a boil, stirring constantly; cook and stir until thickened, about 1 minute. Stir in cream cheese until blended. Add pepper jack, chicken and green chiles; heat through, stirring to combine.
