Time 4h

Yield 20

Number Of Ingredients 9

2 boxes Betty Crocker™ Super Moist™ yellow cake mix
Water, vegetable oil and eggs called for on cake mix boxes
Tray or cardboard covered with wrapping paper and plastic food wrap or foil
2 1/2 containers Betty Crocker™ Rich & Creamy creamy white frosting
Brown gel food color
Yellow gel food color
3 large chocolate-covered candies
1 stick chewy chocolate licorice
1 roll Betty Crocker™ Fruit Roll-Ups® strawberry chewy fruit snack (from 5-oz box)

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottoms only of two 13x9-inch pans with baking spray with flour. Make and bake cake mixes as directed on boxes for 13x9-inch pans. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 1 hour. Meanwhile, cut out paper templates (see Expert Tips below). Place cooled cakes on work surface. Place templates over cakes as shown.
  • Cut cake around templates. (Discard cake pieces cut from around templates, or save for another use.) Arrange cake pieces on tray as shown. Freeze 1 hour for easier frosting.
  • Tint 1 container frosting light brown, using brown and yellow gels. Spread frosting over entire cake to seal in crumbs, using extra frosting to attach nose, ears and legs on cake.
  • Tint 1/2 container frosting dark brown, using brown and yellow gels. Using pastry bag fitted with grass icing tip (#233 or #133, depending on manufacturer), frost ears. Tint remaining container frosting light brown, using brown and yellow gels. Frost head, using grass tip. Create definition near eyebrows by applying additional frosting with grass tip.
  • Frost remainder of dog body, using remaining light brown frosting and grass tip. Place chocolate-covered candies on face for eyes and nose. Cut licorice in 8 thin strips, and place on feet to define paws. Cut fruit snack for collar and tag, and place at neck. Use gel, if desired, to make dog's initial on tag.

GOLDEN GINGER CAKE

Golden Ginger Cake image

Not your traditional gingerbread, this cake is flavored with familiar spices and enhanced with freshly grated ginger. (And yes, of course, there is still molasses.) Unlike a brittle cookie or dense loaf, this cake has the texture of what can only be described as a very good cake doughnut, crunchy on the outside and delightfully fluffy on the inside. It's best served just warmed, with a generous helping of whipped cream or vanilla ice cream.

Time 1h

Yield 8 to 10 servings

Number Of Ingredients 16

Nonstick cooking spray
Demerara sugar
2 3/4 cups/350 grams all-purpose flour
1 tablespoon turmeric
1 1/2 teaspoons kosher salt
1 teaspoon ground cinnamon
1 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 cup/170 grams unsalted butter (1 1/2 sticks), at room temperature
1 cup/220 grams light brown sugar
1/4 cup/60 milliliters molasses
3 tablespoons finely grated fresh ginger
2 large eggs
1/2 cup/120 milliliters buttermilk
1/4 cup/60 milliliters vegetable or coconut oil, melted
Whipped cream or ice cream, for serving

Steps:

  • Heat oven to 350 degrees. Spray a 9-inch springform pan, cake pan or tart pan with nonstick cooking spray (or grease with softened butter) and sprinkle with a bit of Demerara sugar to coat the interior of the pan; tap out excess and set aside.
  • In a medium bowl, whisk together flour, turmeric, salt, cinnamon, baking powder and baking soda; set aside.
  • Using a stand mixer or an electric mixer and a large bowl, beat together butter, brown sugar and molasses until the mixture is light, fluffy and the color of a very pale latte, 3 to 4 minutes. (Feel free to periodically scrape down the sides of the bowl with a spatula to make sure all the ingredients are mixing properly.) Add fresh ginger and beat to blend.
  • Add eggs, one at a time, until they are totally incorporated and the mixture looks extremely light and fluffy, almost like cake frosting, 5 or so minutes. (Be sure to wipe off any ginger that may have stuck to the beaters.)
  • Combine buttermilk and oil in a bowl or a measuring cup. With the mixer on low, beat 1/3 of the dry ingredients into the cake batter, followed by 1/2 of the buttermilk mixture. Repeat with 1/3 of the dry ingredients and the remaining buttermilk mixture. Finish by adding the remaining dry ingredients.
  • Pour cake batter into prepared pan and scatter with more Demerara sugar. Bake, rotating once or twice if your oven has hot spots or tends to be uneven, until the cake has started to pull away from the sides of the pan, it's evenly golden brown on top and it springs back ever so slightly when pressed, 45 to 50 minutes.
  • Remove from oven and let cool on a wire rack if you have one. (If not, just let it cool away from the oven.) Do not remove cake from the pan until it is 100 percent cool. Serve with lightly whipped cream or the ice cream of your choice.

Yield 8-10 servings

Number Of Ingredients 14

1 tablespoon active dry yeast
1 cup (235 ml) warm milk
1/2 cup (100 grams) sugar, plus 2 tablespoons
4 large eggs
Zest of 1 orange
1 teaspoon vanilla
1 cup plus 4 tablespoons (2 1/2 sticks/282 grams) unsalted butter, at room temperature, divided
4 1/2 cups (600 grams) unbleached all-purpose flour (about)
1 teaspoon salt
1 1/2 cups (180 grams) ground walnuts
6 tablespoons (83 grams) brown sugar
3/4 teaspoon cinnamon
3 tablespoons cake or butter cookie crumbs
3/4 cup (150 grams) apricot or plum jam

Steps:

  • Dissolve the yeast in the warm milk in the bowl of a standing mixer equipped with a paddle attachment. Add 1/4 cup of the sugar, the eggs, orange zest, vanilla, and 1 stick of butter. Gradually add the flour and salt, beating until mixed. Cover the bowl and leave for an hour, or until the dough has about doubled in size.
  • Preheat the oven to 350°F and butter a 10-inch round pan with some of the second stick of butter.
  • Melt what is left of the second stick of butter plus the remaining half stick and put it in a small bowl. In a separate bowl, mix the walnuts, brown sugar, remaining white sugar, cinnamon, and the cake or cookie crumbs.
  • Roll the dough into a 1/2-inch-thick circle. Using a 1-inch cookie or biscuit cutter, cut circles of dough. Dip the circles first in the butter, then in the nut mixture and set in the pan, almost touching each other. After a layer is completed, spoon on dollops of jam. Make a second layer, filling in the holes with dough, then jam, continuing and rerolling until the dough is used up, ending with the walnut topping but not the jam. Bake in the oven for 35 to 40 minutes, or until golden brown and set. Leave in the pan for a few minutes, then turn onto a plate and serve warm. You can either cut the cake or pull the sections apart. Serve for a sweet breakfast treat, or as a dessert, served with good vanilla or rum raisin ice cream.
