Since receiving this fuss-free recipe from a wonderful cook at work, I've make these savory muffins for many a holiday dinner and brunch. They are moist and tender and always a hit with my guests!

Yield 1 dozen.

Number Of Ingredients 11

2 cups all-purpose flour
4-1/2 teaspoons sugar
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg, lightly beaten
1 cup buttermilk
1/3 cup butter, melted
2 teaspoons spicy brown mustard
1/8 teaspoon hot pepper sauce
1 cup shredded cheddar cheese

Steps:

  • In a large bowl, combine the first five ingredients. Combine the egg, buttermilk, butter, mustard and hot pepper sauce; stir into the dry ingredients just until moistened. Fold in cheese., Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 15-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Refrigerate any leftovers.

Number Of Ingredients 10

2 1/4 c flour
1 Tbsp baking powder
1/2 tsp salt
2 Tbsp sugar
3/4 tsp onion powder
3 Tbsp butter, melted
1 c milk
1 egg
1 c minced onion
1 1/2 c shredded sharp cheddar cheese

Steps:

  • 1. Preheat oven to 400 degree F. In a large bowl, combine the flour, sugar, salt, onion powder and baking powder. Stir in onion and cheese. Whisk together milk, egg and butter. Pour into flour mixture and stir until all of the flour mixture is moistened.
  • 2. Spoon mixture evenly into greased muffin tins. A heaping tablespoon to start, once all tins are full, if you have leftover batter - evenly distribute between each muffin. I then sprinkle each top with extra cheese.
  • 3. Bake for 20 minutes or until pick inserted into center comes out clean. Best served fresh from oven.
