CINNAMON BASMATI RICE WITH GOLDEN RAISINS



Cinnamon Basmati Rice with Golden Raisins image

Basmati rice has a sweet, nutty flavor; in Hindi, the word basmati means "queen of fragrance."

Number Of Ingredients 10

1 tablespoon unsalted butter
1 medium yellow onion, cut into 1/4-inch dice
1/4 teaspoon ground cloves
1 teaspoon ground cinnamon
1 cup uncooked basmati rice
1 whole bay leaf
1 cinnamon stick
2/3 cup golden raisins
2 cups water
Salt and freshly ground pepper

Steps:

  • Melt butter in a medium high-sided saucepan set over medium heat. Add onion, cloves, and cinnamon; cook until onion becomes translucent and mixture is very fragrant.
  • Place rice in sieve, and rinse under cold running water. Add rice to saucepan, and stir so grains are coated in butter mixture.
  • Add bay leaf, cinnamon stick, raisins, salt, and pepper to saucepan. Stir in 2 cups water. Raise heat, and bring to a boil. Cover, and reduce heat to a simmer. Cook until all water has been absorbed and rice has cooked, 10 to 15 minutes.
  • Remove pan from heat, and let stand, covered, 5 minutes more. Season with salt and pepper, and serve.

2 2/3 cups water
1 1/3 cups Texmati rice* (American basmati) or brown basmati rice**
1/4 cup golden raisins
1 cinnamon stick
1 teaspoon mustard seeds
3/4 teaspoon salt
1/2 cup thinly sliced scallion greens
*available at specialty foods shops and some supermarkets
**available at Indian markets, natural foods stores, and some specialty foods shops

Steps:

  • In a 3-quart heavy saucepan stir together all ingredients except scallion and bring to a boil. Reduce heat to low and cook, covered, until rice is tender and liquid is absorbed, about 20 minutes. Fluff rice with a fork and stir in scallion.

Number Of Ingredients 7

2 cups brown basmati rice (or 2 cups a combination of white and brown basmati rice) or 2 cups white basmati rice (or 2 cups a combination of white and brown basmati rice)
4 cups water
1/2 teaspoon cumin seed
3/4 teaspoon turmeric
5 -6 whole cloves
1/3 cup chopped onions or 1 -2 teaspoon onion powder
1/2 teaspoon salt (optional)

Steps:

  • Combine all ingredients except salt (see below) in a large pot and bring to a boil. Reduce to a gentle simmer, cover and let cook 15-20 minutes. If you want to do it the really Indian way, stir in the salt partway through. Personally I never add the salt, but you could probably just add it at the start.
  • Check after 15 minute and let it continue to cook till the water's gone. If it starts to stick on the bottom don't worry; take it off the heat.
  • Let the rice sit, mostly covered, for 7-10 minutes. This time will allow the rice to firm a litle, and none will be stuck to the pot.

Henry Meer's Basmati Rice With Golden Raisins image

1/2 cup basmati rice
4 tablespoons golden raisins
2 tablespoons butter
2 medium shallots, finely chopped
1 bay leaf

Steps:

  • Rinse the rice in cold running water and drain.
  • Bring a small pot of water to the boil. Add the raisins and cook until plump, about 3 minutes. Drain and reserve the raisins.
  • In a medium-sized saucepan, heat the butter until foamy. Add the shallots and bay leaf and saute over medium heat until translucent. Add the rice and raisins to the shallots and stir gently.
  • Add 1 1/2 cups of water, cover and bring the mixture to a simmer.
  • Stir and reduce the heat to medium-low. Simmer gently until all of the water is absorbed, about 20 to 25 mintues.
