EASY RECIPE FOR OATMEAL AND GOJI BERRY BREAKFAST COOKIES
These cookies are made with nourishing oats, nuts, seeds, and goji berries for a breakfast cookie that's healthy and delicious! These oatmeal and goji berry breakfast cookies are perfect for a protein-rich, on-the-go breakfast. They're vegan and gluten-free and make the perfect afternoon snack too!

Steps:
- Preheat your oven to 350° F and line a baking sheet with parchment paper.
- Combine and whisk together the wet ingredients in a bowl.
- Combine and whisk together the dry ingredients in a bowl.
- Fold the wet mixture into the dry mixture.
- Wet your hands with a bit of water. Grab about two tablespoons of the mixture and roll it into a ball. Place the ball on the parchment paper and press down to shape it into a cookie shape (these won't spread out like regualr cookies in the oven). Repeat for the remaining cookies.
- Bake for about 15-20 minutes
GOJI BERRY BREAKFAST COOKIES
Steps:
- Preheat oven to 180 degrees. Line a pan with parchment paper.
- Whisk the oil, sugar and egg till well combined.
- Add the rest of the ingredients and fold in well till distributed.
- Using a small ice cream scoop, scoop out some dough, shape and keep on the pan. Keep a spacing of 1 inch between the cookies. Makes 14-15 cookies.
- Bake for 10 minutes or upto 15 minutes to make it crispy. Cool for 5 minutes in pan and then cool completely on wire rack.Enjoy!

- Heat oven to 350°F. Line cookie sheets with cooking parchment paper.
- In medium bowl, beat sugar, oil and egg with whisk. Stir in remaining ingredients until well blended.
- Drop by slightly less than 1/4 cupfuls 2 inches apart on cookie sheet. Bake 7 to 9 minutes or until cookies are set on edges. Cool 5 minutes on cookie sheet; remove to cooling rack. Cool completely, about 20 minutes. Store tightly covered.

- Preheat oven to 375 degrees F.
- Cream sugar and butter together in a large bowl.
- In another bowl; mix together flour, baking powder, baking soda, and salt.
- Add juice, egg, and vanilla to your butter mix and blend well.
- Add your flour mixture, little by little, to your butter mixture until all is blended together.
- Stir in the goji berries and the white chocolate.
- Stir in the cashew pieces and the coconut.
- Drop by large teaspoon onto ungreased cooke sheets.
- Bake for 7-10 minutes until golden brown.
