4 logs (4 ounces each) herbed fresh goat cheese
1/2 cup all-purpose flour
2 eggs, beaten
1 cup panko bread crumbs
1 teaspoon dried thyme
1/2 teaspoon garlic powder
1/8 teaspoon kosher salt
1/2 cup canola oil
1 cup cherry tomatoes, halved
1 cup fresh basil leaves
1/4 cup balsamic vinegar
1 tablespoon pine nuts

Steps:

  • Freeze cheese for 15 minutes. Unwrap and cut into 1/4-in. slices., Place flour and eggs in separate shallow bowls. In another shallow bowl, combine the bread crumbs, thyme, garlic powder and salt. Dip cheese slices in the flour, eggs, then bread crumb mixture., In an electric skillet, heat oil to 375°. Fry cheese slices, a few at a time, for 2-3 minutes on each side or until golden brown. Drain on paper towels., Garnish each appetizer with a tomato half and basil leaf. Drizzle with vinegar; top with pine nuts. Serve warm.

1 cup (packed) golden brown sugar
3/4 cup rice vinegar
2 garlic cloves, minced
1 1/2 teaspoons minced peeled fresh ginger
1/8 teaspoon cayenne pepper
1 cinnamon stick
1 1/2 pounds Granny Smith apples, peeled, cored, cut into -inch pieces (about 4 cups)
1 cup golden raisins
1 cup diced seeded plum tomatoes
1 tablespoon chopped fresh mint
1 French-bread baguette, cut into 1/3-inch-thick slices
Olive oil
Roasted Garlic
12 ounces soft fresh goat cheese (such as Montrachet), room temperature

Steps:

  • Stir sugar and vinegar in heavy large saucepan over medium heat until sugar dissolves. Add next 4 ingredients and simmer until mixture is syrupy and reduced to 1/2 cup, about 8 minutes. Mix in apples and raisins. Increase heat to high and boil until apples are tender, stirring frequently, about 10 minutes. Cool to room temperature. (Chutney can be made 3 days ahead; cover and refrigerate.) Mix in tomatoes and mint.
  • Preheat oven to 450°F. Arrange baguette slices on baking sheet and brush with olive oil. Bake until golden and crisp, about 8 minutes. Spread each toast with roasted garlic; top with goat cheese and chutney.

1/2 of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets (1 sheet),thawed
1 cup crumbled goat cheese
1/4 cup cranberry chutney
1/4 cup finely chopped toasted walnuts
minced fresh thyme leaves (optional)

Steps:

  • 1. Heat the oven to 400 degrees F. Unfold the pastry sheet on a lightly floured surface. Cut the pastry sheet into 25 (about 2-inch) squares.
  • 2. Spoon about 2 teaspoons cheese in the center of each pastry square. Top each with about 1/2 teaspoon chutney and about 1/2 teaspoon walnuts. Brush 2 opposite pastry corners with water. Fold the pastry corners up over the filling and overlap slightly at the top, forming an open-ended "envelope", and press to seal. Place the filled pastries onto 2 baking sheets.
  • 3. Bake for 15 minutes or until the pastries are golden brown. Sprinkle the pastries with the thyme before serving, if desired.

My neighbor shared this easy-to-make appetizer with me, and it's been a hit whenever I've served it. I took it to our family reunion last summer and it quickly disappeared! I love it because it's simple, yet tasty.

1 package (8 ounces) cream cheese, softened
1 jar (8 ounces) chutney or spiced peach jam
1/4 cup finely sliced green onions
Snack crackers of choice

Steps:

  • Press softened cream cheese into oiled mold of desired shape. (For easy removal, spray mold with cooking spray and line with plastic wrap if desired.) , Unmold on chilled plate. Pour chutney over mold; sprinkle with onions. Ring plate with crackers (buttery crackers are especially good with this appetizer). Serve immediately.

I made this up after having a similar appetizer of cream cheese covered with salsa. I love spicy chutneys and love goat cheese. Goat cheese is also lower in fat as is the low fat cream cheese...so I can almost pretend it's good for me!

8 to 12 ounces marinated goat cheese or feta, broken into large chunks
2 to 3 teaspoons olive oil
4 to 5 sprigs fresh thyme
1/2 teaspoon whole pink peppercorns
Sliced baguette or crackers, for serving

Steps:

  • Place cheese in a small ovenproof dish, and bake at 325 degrees for 15 to 20 minutes until golden brown. Remove the dish from the oven, drizzle with olive oil, and garnish with fresh thyme (if desired) and whole pink peppercorns. Serve with sliced baguette or crackers.
