TOMATO AND GOAT CHEESE ORZO

Tomatoes, goat cheese, fresh herbs, and orzo pasta! A super simple, super flavorful weeknight dinner that's easy to put together!

Number Of Ingredients 12

1 cup dry orzo
4 oz. creamy goat cheese (chevre)
2 Tbsp. olive oil
1 cup Campari or Cherry tomatoes
1 small shallot (thinly sliced)
2 cloves garlic (minced)
1/3 cup heavy cream
2 Tbsp. chopped fresh basil
2 tsp. chopped fresh Oregano
1/4 cup grated Parmesan Reggiano
salt + pepper (to taste)
2 lemon wedges

Steps:

  • Boil the orzo in salted water until al dente, based on box directions. (About 7-8 minutes.) Drain the orzo, reserving one cup of pasta water. Mix cooked orzo with creamy goat cheese and set aside.
  • If using Campari tomatoes, cut them into quarters. If using cherry tomatoes, cut them in half. Heat olive oil in a large saute pan over medium-high heat. Add tomatoes and a pinch of salt. Cook for about 5 minutes until tomatoes start to blister.
  • Turn the heat down to medium. Stir in sliced shallots, and cook for 2-3 minutes until softened. Stir in garlic, and cook 1 minute.
  • Stir in heavy cream, half of the chopped herbs, and a pinch of pepper. Cook until the cream thickens slightly, about 2-3 minutes.
  • Spoon the goat cheese orzo directly into the pan, and add 1/4 cup of pasta water. Stir to mix it in completely with the tomato sauce, continually adding a splash of pasta water until it is as creamy as you like it. (I usually use about 1/2 cup of pasta water.)
  • Turn off the heat from under the pan, and stir in the parmesan, remaining chopped herb, and the juice from the lemon wedges. Season with salt and pepper to taste.

This no-stir, one-pan, 30-minute oven orzotto features spicy sausage, kale, cherry tomatoes add a hit of acidic brightness. 2 tablespoons DeLallo Extra-Virgin Olive Oil
1 (6.7-ounce) jar DeLallo Sundried Tomatoes-drained and roughly chopped (you can use the oil to cook with if you like)
12 DeLallo Castelvetrano olives, smashed with the flat of a knife and roughly chopped into big pieces
4 cloves garlic, minced
1 1/2 cups DeLallo Whole Wheat Orzo
2 3/4 cups water
1 (4-ounce) log of goat cheese, crumbled
½ to 1 cup fresh chopped dill
Juice and zest of one lemon, plus a few thin slices
Salt and pepper, to taste

Steps:

  • In a large deep skillet, heat 2 tablespoons of oil over medium-high heat. Sauté the chopped sundried tomatoes and olives gently in the oil until they start to get a little char, about 4 minutes. Then add the minced garlic, and sauté 30 seconds longer, just until fragrant.
  • Toasting the orzo gives it an amazing, nutty flavor it won't have otherwise. Pour in the orzo, stir well to coat in the olive oil, and let cook for just under a minute until you can smell toasted wheat. This creates a base of really complex, savory Mediterranean flavors, even though our cooking liquid is going to be just plain water.
  • Immediately pour in the water and scrape everything up. Season with salt and pepper, and lower the heat to medium-low. It should be simmering visibly but not aggressively.
  • This will take about 18-20 minutes. Stir every so often to ensure nothing sticks to the bottom. If water is absorbing too fast, add more.
  • Turn off the heat. Stir in the lemon juice, zest, and chopped fresh dill. Then add about 3/4 of the crumbled goat cheese, stirring until it melts. Toss the rest on top. Top in freshly cracked pepper, aleppo chili flakes if you want a kick, and even more dill if you want to get that dill freak on.

⅓ cup chopped oil-packed sun-dried tomatoes

Steps:

  • Bring a large pot of lightly salted water to a boil. Add orzo and cook for 8 to 10 minutes or until al dente. Drain and set aside.

4 cups vegetable broth
2 tablespoons olive oil
2 tablespoons chopped fresh rosemary
1 shallot, sliced thin
1 1/2 cups orzo
1/4 teaspoon crushed red pepper flakes
4 cloves garlic, minced
1/2 cup white wine
1/4 cup heavy cream
1 cup shredded mozzarella
1/2 cup mascarpone
4 ounces goat cheese
1 cup sun-dried tomatoes, diced
2 cups chopped kale
Kosher salt and freshly ground black pepper
1/2 cup chopped fresh parsley

Steps:

  • Heat the broth in a small saucepan and keep warm.
  • Heat the oil in a saucepan over medium heat. Add the rosemary and shallot to the oil, then cook for a minute. Add the orzo, red pepper flakes and garlic and cook, stirring, for an additional 1 to 2 minutes. Deglaze with the wine and add the warm broth. Allow the broth to come to a simmer, then cook for 5 minutes, stirring occasionally.
  • Stir in the cream, cheeses, sun-dried tomatoes and kale. Cook until the kale wilts and the sauce is thick and creamy, an additional 3 to 4 minutes. Taste and season with salt and pepper.
  • Garnish with the parsley and serve.

1/2 tablespoon butter
1/2 cup orzo pasta
1 1/4 cups water
4 slices sun-dried tomatoes, cut into small pieces
1 ounce goat cheese, crumbled
1 teaspoon dried basil
1 pinch salt
1 pinch black pepper
2 tablespoons pine nuts, toasted

Steps:

  • Heat butter in a medium saucepan over medium heat.
  • Add orzo and cook 2-3 minutes, stirring constantly.
  • Stir in water, Basil, Salt, Pepper and sun-dried tomatoes, bring to a boil.
  • Reduce heat and simmer, stirring frequently, until liquid is absorbed, and orzo is done, about 15 minutes.
  • While orzo is cooking, toast pine nuts in toaster oven, or lightly brown in saute pan.
  • Remove orzo from heat, stir in cheese and pine nuts.

1 (10-ounce) jar sun-dried tomatoes packed in oil, chopped (oil reserved)
1 small onion, chopped
4 garlic cloves, minced
1/4 cup tomato paste
2/3 cup dry white wine
8 ounces angel hair pasta
Salt and freshly ground black pepper
2 ounces soft fresh goat cheese, coarsely crumbled
2 tablespoons chopped fresh Italian parsley leaves

Steps:

  • Heat 2 tablespoons of the oil from the sun-dried tomatoes in a heavy large skillet over medium heat. Add the onion and saute until tender, about 3 minutes. Stir in the garlic and saute until fragrant, about 1 minute. Add the tomato paste and cook for 2 minutes, stirring constantly. Add the wine and sun-dried tomatoes and simmer until the liquid reduces by half, about 2 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook until al dente, stirring occasionally, about 5 minutes. Drain, reserving 1/2 cup of cooking liquid. 2 large garlic cloves, minced
3/4 cup finely chopped onion
2 tablespoons olive oil
2/3 cup chopped drained sun-dried tomatoes packed in oil (about 1/4 pound)
1/2 cup chicken broth
1/4 cup sliced pitted Kalamata or other brine-cured black olives
1/3 cup finely chopped fresh parsley leaves
1/2 pound medium-sized pasta shells
3 ounces mild goat cheese such as Montrachet, crumbled (about 1 cup), plus additional for sprinkling over the pasta

Steps:

  • In a small skillet cook the garlic, the onion, and salt and pepper to taste in the oil over moderately low heat, stirring, until the onion is soft, add the tomatoes and the broth, and simmer the mixture until the liquid is reduced by about one third. Stir in the olives, the parsley, and salt and pepper to taste and keep the mixture warm. In a kettle of boiling salted water cook the pasta until it is al dente and drain it well, reserving 1/3 cup of the cooking water. In a serving bowl whisk 3 ounces of the goat cheese with the reserved cooking water until the cheese is melted and the mixture the smooth, add the pasta and the tomato mixture, and toss the mixture well. Sprinkle the pasta with the additional goat cheese.
