CLASSIC WALDORF RED CAKE

This beautiful tall cake is moist and tender. Sometimes called Red Velvet Cake, this classic cake not only tastes delicious, but adds great flair to a holiday dessert table.

2 ¼ cups all-purpose flour
1 ½ cups granulated sugar
2 tablespoons unsweetened cocoa powder
3 teaspoons baking soda
1 ¼ cups vegetable oil
¾ cup Almond Breeze Original almondmilk
3 eggs
1 (1 ounce) bottle liquid red food color
1 teaspoon vanilla extract
1 tablespoon vinegar
⅓ cup all-purpose flour
1 cup Almond Breeze Original almondmilk
1 cup vegan buttery sticks, softened
1 cup granulated sugar
2 teaspoons vanilla

Steps:

  • Heat oven to 350 degrees F. Grease two 9-inch round cake pans. Line bottoms with rounds of waxed paper or parchment; grease paper. Flour pans.
  • In large bowl, mix 2 1/4 cups flour, sugar, cocoa, and baking soda with electric mixer on low speed. Add all remaining cake ingredients. Mix on low speed. Beat on medium speed 2 minutes or until creamy.
  • Divide batter evenly between pans. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool in pans 10 minutes. Run knife around edges to loosen. Remove to cooling racks and cool completely, about 1 hour.
  • In small saucepan, whisk 1/3 cup flour into almondmilk until smooth. Cook and whisk over medium-low heat until thick and bubbly. Refrigerate 10 minutes.
  • In large bowl, beat buttery sticks and sugar with electric mixer on medium speed until light and fluffy. Add small spoonfuls of the flour mixture and beat until blended. Scrape sides; add vanilla. Beat on high speed until thick and creamy.
  • Place 1 cake layer on cake plate, rounded side down. Spread frosting over cake. Top with second layer, rounded side up. Frost top and sides of cake. Store covered in refrigerator.

1/2 cup Crisco
2 eggs
2 teaspoons cocoa
1 teaspoon salt
1 teaspoon vanilla
1 teaspoon baking soda
1 1/2 cups sugar
1/4 cup red food coloring
1 cup buttermilk
2 1/4 cups cake flour
1 tablespoon vinegar

Steps:

  • Sift together salt and flour.
  • Make a paste of of coloring and cocoa.
  • Cream sugar and shortening, add eggs and then add paste.
  • Add buttermilk and flour alternately.
  • Blend baking soda and vinegar in cup until it foams.
  • Add to the vanilla batter.
  • Bake in 3 layer pans, greased and floured.
  • Bake at 350 F for 30 minutes.
  • Frost with Big Red Cake Frosting!

2 cups flour
1 1/2 cups sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
1/4 cup margarine, softened
1/4 cup shortening
1 cup milk
1 1/2 teaspoons vanilla extract
3 eggs
1 can big red soda pop (or any strawberry flavored soda)
1 (3 ounce) box instant vanilla pudding
1 (9 ounce) container whipped topping
1 (3 ounce) box strawberry gelatin
fresh strawberries (optional)

Steps:

  • Dump first 9 ingredients into large mixing bowl.
  • Beat on low speed of mixer, scraping sides of bowl constantly, till well combined.
  • Beat on high speed, for approximately 3 minutes.
  • Bake at 350 degrees, for 40 to 45 minutes, in a greased and floured 9"X13" cake pan.
  • Remove cake from oven and poke holes throughout cake with handle end of wooden spoon.
  • Mix package of gelatin with Big Red and pour over hot cake.
  • Refrigerate.
  • Prepare vanilla pudding, using ONLY 1 cup of milk.
  • Mix with whipped topping; spoon over cooled cake.
  • Decorate the top with strawberries if desired for a more elegant presentation.
  • Keep refrigerated and covered.

3 tablespoons flour
1 cup powdered sugar
1/2 cup butter
1/2 cup Crisco
1 teaspoon vanilla

Steps:

  • Heat milk in a pan and thicken with the flour.
  • Beat in the cup of powdered sugar.
  • Beat the last 3 ingredients until consistency of whipped cream.
  • Add milk and beat again til right consistency.
  • Refrigerate frosting until cool.
  • Cake should be refrigerated!

1 box yellow cake mix
1 box strawberry jello
1 box instant vanilla pudding
1 can(s) big red soda
1 carton cool whip

Steps:

  • 1. 10 x 13 cake pan. Make cake according to directions on box.Let cool.
  • 2. poke holes in cool cake with end of wooden spoon or similar size hole into cake.
  • 3. mix strawberry jello with 1 cup boiling water. stir until jello is dissolved. add 1 cup big red to jello and stir.
  • 4. pour jello into holes and set aside.
  • 5. mix the vanilla pudding according to directions on box and pour into holes ( you have to do this quickly before pudding sets up) . after you fill holes with pudding just pour the rest of pudding over top of cake.
  • 6. set cake in refrigerator until pudding has set.
  • 7. after pudding has set, you cover with cool whip and set in refrigerator overnight if possible ,but long enough for cake/jello to absorb.
