This makes a lot of burgers. One of my family's favorite takes on a burger. Served with provolone and marinara, it is delish!

1 lb ground turkey
10 ounces frozen spinach, drained
7 ounces firm tofu, crumbled
1 cup parmesan cheese, grated (Kraft)
1/8 cup italian seasoning
1 teaspoon onion powder
1 teaspoon garlic powder
2 eggs

Steps:

  • Mix all the ingredients together.
  • Shape into patties and cook how you normally would, on the grill or on the stove until an internal temp of 160'.

½ white onion, finely chopped
¼ cup almond flour
1 large egg
3 cloves garlic, minced
2 sprigs fresh basil, chopped
1 pinch garlic and herb seasoning blend (such as Mrs. Dash®), or to taste
ground black pepper to taste

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Mix ground turkey, onion, almond flour, egg, garlic, basil, seasoning blend, and black pepper together thoroughly in a bowl. Form 5 burger patties using about 1/3 cup of the turkey mixture for each.

These turkey burgers are a nod to the Mediterranean, packed with fresh herbs, lemon, and red onion.

2 pounds ground 93 percent lean turkey breast
1 cup packed fresh spinach leaves, finely chopped
¼ cup pitted black olives, finely chopped
Zest of 1 lemon
2 tablespoons finely chopped red onion
1 tablespoon finely chopped fresh mint or parsley
1 teaspoon garlic powder, or 3 fresh garlic cloves, finely chopped
1 teaspoon dried oregano
1 teaspoon sea salt
½ teaspoon ground black pepper
Olive oil or ghee for frying
Optional toppings: butter lettuce, sliced tomato, sliced red onion, sliced cucumber, more fresh mint or parsley, basil pesto, or feta cheese

Steps:

  • In a large mixing bowl, use your hands to combine well the turkey meat with the spinach, olives, lemon zest, onion, mint or parsley, garlic, oregano, salt, and pepper. But don't overmix or the meat with become tough. Divide the mixture into 6 equal portions and shape them into burgers.
  • Warm about a tablespoon of olive oil or ghee in a large skillet set over medium-high heat. Working in batches, add the burger patties and fry them on one side for about 5 minutes, then flip them, frying on the second side for another 4 to 5 minutes, or until they're golden brown.
  • If you like, serve each burger on a large piece of butter lettuce and top them with any of the optional ingredients.

1 (10 ounce) package frozen chopped spinach, thawed
12 ounces firm tofu, crumbled
1 1/2 cups crackers, crushed
1/4 medium onion, choppped
2 scallions, sliced green and white parts
4 garlic cloves, minced
1 tablespoon dried tarragon
1 teaspoon dried sage
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon pepper
2 ounces soy cheddar cheese, shredded (optional)

Steps:

  • Preheat the broiler.
  • Squeeze excess moisture from the spinach.
  • In a food processor bowl, combine all the ingredients except the cheese and process just until the mixutre reaches a uniform consistency and holds together.
  • Form into 6 patties and broil for 5 minutes on each side, until slightly brown.
  • Top with the cheese during the last minute, if desired.
  • Serve immediately, plain or on a bun.
