Number Of Ingredients 14

1 cup sorghum flour
1/2 cup brown rice flour
1 cup tapioca starch
1/2 cup potato starch
2 tablespoons ground flaxseed meal
2 tablespoons sugar
1 teaspoon xanthan gum
1 teaspoon sea salt
1 teaspoon baking powder (aluminum free)
2 eggs (size large)
1/4 cup light oil (* see note)
1 teaspoon apple cider vinegar
2 teaspoons yeast
1 1/2 cups water

Steps:

  • In a large bowl, add the dry ingredients and whisk to blend. In a smaller bowl, add your wet ingredients and blend.
  • Open your bread machine and make sure the paddle is on the spinner. Pour in your mixed wet ingredients.
  • Pour the whisked dry ingredients on top of the wet ingredients.
  • Dump the yeast on top of the dry ingredients. Close the cover and press the button. My bread machine has a gluten free setting.
  • If your bread machine has this setting, use it. After 5 minutes, take a soft rubber spatula and press the flour down from the sides. This tip will help prevent unmixed flour pockets on the side of your bread.
  • Remove the bread from the bread machine when it is done. I gently slide my bread out of the pan and place it on a cooling rack. This helps prevent your bread from cooking longer in the hot pan.
  • The only downside to using a bread machine is the little paddle comes off into your bread. The bread stays hot for some time so I highly recommend you using tweezers or these pointed tongs to remove the paddle. It is easier to remove when the bread is hot.

Make this gluten-free bread in your bread maker. It's not as good as normal bread, but it's pretty good if you must avoid gluten. The mixture will look more like cake batter than bread dough in your machine, don't worry, it will be okay. The loaf may sink while it's baking, leaving a crusty, crunchy bowl on the exposed end, which you will want to slice off and discard. The finished bread will be quite firm and heavy, and I recommend slicing it thin. It makes good toast, but it toasts slowly. I use my darkest toaster setting and have to run that twice to get golden brown toast.

A warm slice of fresh homemade bread doesn't have to be full of gluten and carbs. This paleo and gluten-free Coconut Flour Bread proves it.

1/2 cup coconut flour
1/3 cup ground flax (flax meal)
1/4 cup arrowroot powder/tapioca flour* (optional)
2 teaspoons baking powder**
1/2 teaspoon sea salt
4 eggs
1/2 cup flavorless oil (like avocado oil or melted refined coconut oil)
1/3 cup dairy free milk (unsweetened almond milk, coconut, etc.)
2 tbsp honey (optional***)
sesame seeds (or other seeds of choice - like sunflower seeds, chia, flax, etc.)
ground flax

Steps:

  • Preheat your oven to 375° F. Prep a 8x4-inch loaf pan by greasing it with oil or by lining it with parchment paper.
  • One easy way to whip up the batter is by simply combining all ingredients in a blender. Pulse or blend on low speed until everything is fully combined. It will be easier for your blender, if you add the wet ingredients first.
  • If not using a blender, add all wet ingredients (eggs, oil, milk, optional honey) to a large bowl and whisk until they are well combined.
  • Next, add the dry ingredients (coconut flour, ground flax, arrowroot powder, baking powder, salt) to bowl. Then stir them onto the wet ingredients until no more pockets of dry mix remain.
  • Optionally: Separate the eggs and whip the egg whites until stiff. Proceed preparing the batter as usual otherwise. Then gently fold in the stiff egg whites as final step. (This makes for a lighter, fluffy coconut flour bread)
  • Fill the batter into the prepared loaf pan and sprinkle sesame seeds and a little ground flax over the top. Bake the Coconut Flour Bread for about 25-30 minutes until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes, then move to a wire rack to cool fully.
  • Store refrigerated for up to 1 week. Lightly toasting the bread slices is highly recommended.
