A gluten-free version of cookie crumb crust for pies. I've made this with butter cookies, graham crackers, animal crackers, and even vegan cookies. This recipe makes one 9-inch pie crust. If using for a pie that needs to be baked, making sure it is only lightly browned, or it may burn when re-baking.

1 ¾ cups gluten-free crisp gingersnap cookies
7 tablespoons coconut oil, melted, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place cookies in a food processor or blender; pulse into fine crumbs.
  • Pour cookie crumbs into a bowl. Drizzle 5 tablespoons coconut oil on top; mix well with a fork. Add 1 tablespoon coconut oil if mixture doesn't hold together. Press mixture into a pie plate to create a crust. Drizzle remaining 1 tablespoon coconut oil over the top.
  • Bake in the preheated oven until slightly browned, 10 to 15 minutes. Cool before filling.

A gluten-free version of a simple crumble made with fresh or frozen blueberries and a hint of lemon.

½ cup gluten-free all-purpose baking flour
½ cup buckwheat flour
3 tablespoons white sugar
½ teaspoon ground cinnamon
⅓ cup cold butter, cubed
4 cups blueberries
¼ cup agave nectar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon lemon zest
⅛ cup sliced almonds

Steps:

  • Whisk together all-purpose flour, buckwheat flour, sugar, and ground cinnamon. Cut in butter with your fingers until mixture resembles pebbles with some large lumps of butter remaining. Put crumble topping in the freezer while you prepare the other ingredients.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine blueberries, agave, cornstarch, lemon juice, and lemon zest in a bowl; mix well. Pour into a cast iron dish. Drop clumps of the crumble topping over the blueberries, allowing some open space for venting. Top with sliced almonds.
  • Bake in the preheated oven until the top is bubbly and lightly browned, about 30 minutes.

Number Of Ingredients 16

1 1/2 cups gluten-free flour (Bob's Red Mills All Purpose Gluten Free Flour, Avail at Kroger & online)
1/3 cup cornstarch
1/2 cup sugar
1 teaspoon xanthan gum (Bob's Red Mills)
8 tablespoons butter, cut into pieces
1 large egg
1 tablespoon gluten-free vanilla extract (Available online at the Gluten Free Pantry)
7 medium apples, peeled, cored and very thinly sliced. Use mildly sweet to tart very crisp apple (such as Granny Smith, Braeburn, Cortlands)
1/2 cup sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
3/4 cup light brown sugar
3/4 cup gluten-free flour (See above)
1/2 teaspoon ground nutmeg
1/3 cup butter, chilled & cut into small pieces

Steps:

  • ***Pastry Crust Instructions***.
  • In a mixing bowl stir together the flour, xanthan gum and cornstarch.
  • Then add the sugar, butter, egg and vanilla and mix until combined.
  • Remove dough from bowl and knead and fold on a surface dusted with GF flour until well well combined.
  • Divide into two pieces and wrap in plastic wrap, place one in the refrigerator to chill and place the other in the freezer for later use.
  • --Go ahead and make Apple Filling while the Pastry Crust is chilling.
  • --.
  • After approx 20 minutes, remove dough from refrigerator and roll into a ball.
  • Using a rolling pin, roll the dough out on a lightly GF floured surface until it is the thickness of a normal pie crust.
  • Place crust in a 9 inch glass pie dish that is lightly sprayed with non stick spray.
  • Using a fork poke a bunch of holes in the sides and bottom of the crust.
  • ***Apple Filling Instructions***.
  • In a large bowl mix apples, sugar, cinnamon, nutmeg and salt.
  • Set aside and let the juices mix.
  • ***Crumble Topping Instructions***.
  • In small bowl mix together brown sugar, GF flour and nutmeg.
  • Next mix in the chilled butter and cut it in with a fork or other tool until you have a course crumbly mixture.
  • ***Assembling your Pie***.
  • Preheat oven to 400°F.
  • Spoon apples into your pie crust, mounding in the middle and pouring the sugary juices over top.
  • Sprinkle your Crumble Topping all over the top (use it all).
  • Use tin foil to cover edges of crust as it will burn easily.
  • Bake for approximately 35 minutes, topping will be lightly browned and filling will be bubbly.
  • Let cool for at least an hour before serving.

When I make potted pies for my family I always used frozen sheets of puff pastry for the top. Now being gluten free I either use mashed potato or breadcrumb topping. Here's my version of the crumb topping. You can easily vary the amounts to suit your taste or use a different cheese. I usually make breadcrumbs out of GF bread that is becoming stale and freeze them for future use. The pie in the photo I am posting was heated for 30 minutes at 200C....for a longer period of time use a lower temp. The topping can also be placed under the griller to brown over an already cooked pie filling.

1/4 cup grated cheese (tasty, cheddar, parmesan)
1 dash dried basil

Steps:

  • Mix the breadcrumbs and the grated cheese.
  • Spread over the top of the pie.
  • Sprinkle with dried basil or herb of your choice.
  • Cook as for regular pastry pies.
