Sweet-and-Sour Skillet Glazed Turnips image

These slightly sweet turnips with a splash of vinegar are as easy as simmer, stir, season.

1 1/2 pounds turnips, peeled and cut into 1-inch pieces
1 tablespoon unsalted butter
1 teaspoon sugar
1 to 2 teaspoons white balsamic or white wine vinegar
1 tablespoon chopped fresh chives
Kosher salt and freshly ground black pepper

Steps:

  • Spread the turnips in a single layer in a large skillet with a lid. Add enough water to cover the turnips halfway and then add the butter and sugar. Bring to a boil and then reduce the heat to maintain a simmer. Partially cover with the lid and simmer until the turnips are tender, 8 to 10 minutes. Uncover, increase the heat to high and continue to cook, stirring occasionally, until the liquid almost completely evaporates and the turnips are glazed. Remove from the heat and stir in the vinegar and chives; season with salt and pepper.

3/4 lb sugar snap pea, trimmed of their strings
2 medium sized turnips, halved and thinly sliced
1 tablespoon vegetable oil
1 shallot, chopped
1 garlic clove, chopped
1 teaspoon sugar
salt and pepper, to taste
1 tablespoon chopped parsley

Steps:

  • Bring a medium sized pot to a boil and add salt.
  • Cook peas for 3 minutes.
  • Add turnips and continue cooking another 2 minutes.
  • Meanwhile, in medium sized pan, over medium heat, saute the shallots in oil until translucent.
  • Add garlic and fry until fragrant.
  • Add drained vegetables along with the sugar and stir until glazed.
  • Adjust seasonings.
  • Sprinkle parsley on top and serve immediately.

4 pounds white turnips, peeled and cut into 1/2 inch pieces
12 to 16 tablespoons butter
1 head of garlic, peeled
Salt and freshly ground black pepper

Steps:

  • Bring a lot of salted water to a boil and parboil the turnips for 7 minutes; add the garlic and boil 1 minute longer; drain.
  • Melt 8 to 12 tablespoons of butter and cook the garlic and turnips, covered, over low heat for 5 minutes.
  • Transfer turnips and garlic to a food processor and puree until smooth, adding 4 more tablespoons butter with the machine turned on. Season well with salt and pepper and, if made in advance, reheat in a double boiler.

1 pound sugar snap peas
1/2 cup water

Steps:

  • In a medium skillet over medium high heat, brown chopped bacon. Using a slotted spoon, remove bacon to a paper towel lined plate. Add onion to the pan. Saute chopped onions 3 minutes or so, until they are just tender. Add peas and water to the pan. Cover and cook peas 5 minutes. Uncover and allow the liquid to cook almost out of the pan. Add bacon back to the skillet and remove pan from heat. Transfer to a serving dish and enjoy!

About 1 1/2 cups plus 3 tablespoons water
2 tablespoons butter
1 tablespoon sugar
1/2 teaspoon salt
Garnish: chopped fresh flat-leaf parsley

Steps:

  • Peel turnips, then halve horizontally and quarter halves. Arrange turnips in 1 layer in a 12-inch heavy skillet and add enough water (about 1 1/2 cups) to reach halfway up turnips. Add butter, sugar, and salt and boil over moderately high heat, covered, stirring occasionally, 10 minutes. Boil turnips, uncovered, stirring, until tender and water has evaporated, about 8 minutes.
  • Sauté turnips over moderately high heat, stirring, until golden brown,about 5 minutes more. Add 3 tablespoons water and stir to coat turnips with glaze.
