CHICKEN SALAD FOR A CROWD

I have made this for bridal & baby showers and the women love it. I serve it on a mini croissant with fancy lettuce. It can also be served on a bed of fancy lettuce greens topped with crispy Chinese style noodles and fresh fruit on the side. Just lovely. When I make it just for the family I wing the amounts (approx. 1/4 to 1/2 chicken breast per person). UPDATE: 8/9/08 Purchasing several rotisserie chickens makes this even MORE tasty! OR be sure to season the water chicken bouillon when simmering the chicken breasts

18 lbs chicken, bone in, boiled, season water with several teaspoons of chicken flavored bouillon
2 2/3 cups mayonnaise, can use light, not fat free
1 cup half-and-half cream
2 small sweet onions, minced
1/2 teaspoon white pepper (to taste)
4 cups celery, thinly sliced
2 teaspoons beau monde seasoning, substitute celery salt
2 bunches green leaf lettuce, any fancy lettuce
2 cups iceberg lettuce, thinly shredded (optional)
40 croissants

Steps:

  • Boil the chicken breasts until no longer pink. Cool completely and cube or shred.
  • Peel and mince onion. Can use small to medium size.
  • Clean and thinly slice celery.
  • Combine mayonnaise, half and half, white pepper and Beau Monde. NOTE: *I add enough Beau Monde to see scant color in the mayonnaise, chill and let rest while the chicken is cooling. This will allow the flavors to blend.
  • Combine all ingredients with the chicken and cover and refrigerate over night.
  • Next Morning:.
  • Taste test for additional Beau Monde.
  • Add more half & half or milk to thin and make creamier if desired.
  • OPTIONAL: Finely shred iceberg lettuce and add to the chicken mixture. This stretches the amount of chicken salad and makes it lighter in texture.

4 cups cooked chicken (shredded (or about one rotisserie chicken))
1 cup shredded cheese (cheddar is preferred)
½ cup green onions (chopped)
½ cup crumbled bacon bits (about 6 cooked strips of bacon)
½ cup celery (washed and sliced)
1 Tbsp parsley
Salt (to taste)
Pepper (to taste)
Garlic powder (to taste)
¾ cup mayonnaise
4 Tbsp ranch dressing
3 Tbsp sour cream
1 Tbsp lemon juice (optional)
Romain Lettice leaves washed and dried
Sliced bread

Steps:

  • Begin by removing your cooked chicken from the bone and shredding it. Transfer your chicken into a mixing bowl, and add shredded cheese, green onions, crumbled bacon, celery, and parsley if desired. Stir until combined.
  • Next, in a separate mixing bowl combine mayonnaise, ranch dressing, lemon juice, and sour cream. Stir together.
  • Tap your chicken mixture with your dressing and stir until all of your chicken mixture is coated with the dressing. Add salt, pepper, and garlic powder as desired.
  • Next, to serve as a sandwich, take your bread slices, and add your leaves of lettuce. Scoop your chicken salad mixture on top of your lettuce and add your top layer of bread. Slice your sandwiches before serving and enjoy.

This is an outstanding chicken salad recipe. It makes delicious sandwiches for afternoon tea parties - have copies of the recipe on hand! The recipe comes from "Swe-e-e-et Tea & Magnolias" by Ellen Powell. Note: Salad cubes are produced in North Carolina by the Mt. Olive Pickle Company. The product is available in grocery stores throughout the southeastern United States. Finely diced pickles are a decent substitution, however.

1 cup celery, cut fine
1 cup diced pickle, drained (salad cubes are best)
1/2 medium apple, grated (Golden Delicious is recommended)
1 tablespoon sugar

Steps:

  • Cut cooked chicken into small pieces.
  • Add celery, salad cubes, grated apple, sugar, and mayonnaise. Mix well.

2 1/2 cups cooked chicken, shredded
1/4 cup heavy cream (NO substitutes. NO Cool Whip or Reddi Whip)
1/2 apple, diced (about 1 cup)
1/2 cup pecans, finely chopped
2/3 cup mayonnaise
2 tablespoons fresh squeezed lemon juice
1/4 teaspoon cayenne pepper (or more, to taste)

Steps:

  • With a hand blender,whip cream until it forms stiff peaks. Be sure to do it long enough or your salad will be runny.
  • Carefully combine all other ingredients with whipped cream.
  • Chill at least an hour; it's best chilled overnight.

This is an old favorite of mine from childhood... but nowadays goes great for tea-parties when served on toast wedges or just plain, served stuffed into a tomato for presentation... or my husbands favorite way: sandwich style topped with a few pieces of crisp bacon with a slice of avocado between two pieces of white bread! This is great for using up leftovers from Rotisserie Chicken...

2 -3 cups cooked chicken (I use food processor, but you can also use 2 forks & shred to a consistency similar to tuna or pulle)
1/3 cup Hellmann's mayonnaise
4 ounces Philadelphia Cream Cheese, softened
1/2 cup chopped celery
1/3 cup chopped onion
1/2 cup pitted black olives, drained & chopped
1 (6 ounce) jar marinated artichoke hearts, drained & chopped
1/4 cup pinoli nuts, chopped (pine nuts)
to taste salt
to taste pepper
to taste garlic powder
1 dash oregano

Steps:

  • I use my mini-food processor to chop all of the ingredients except the chicken -- I just give them a few "pulses" per ingredient so they are not pureed in the food processor.
  • Mix mayonnaise, and cream cheese together in bowl until creamy. Stir in chicken & remaining ingredients. Chill until ready to serve.
  • *Can add more or less of the mayonnaise & cream cheese mixture according to taste/texture desired.
  • Note: you can buy the chicken pre-cooked or make it ahead of time. I recommend using all white meat.
  • Also, you can substitute the pinoli nuts with chopped almond slivers if budget-conscious.

3 green onions, minced
½ cup refrigerated poppyseed salad dressing, or to taste
12 Hawaiian sweet bread rolls, sliced in half horizontally
1 (8 ounce) container pineapple cream cheese spread
6 large leaves Boston lettuce, halved
1 (16 ounce) package fresh strawberries, hulled and diced

Steps:

  • Combine chicken with green onions in a bowl; moisten with poppyseed salad dressing. Spread both cut sides of each Hawaiian roll with pineapple cream cheese. Place a lettuce leaf half on bottom half of each roll; top with 1/4 cup chicken mixture and about 2 tablespoons of strawberries. Place tops on sandwiches to serve.
