GINGER FRIED CHICKEN

1 clove garlic, minced
1 tablespoon minced ginger
1/4 cup soy sauce
2 tablespoons rice or cider vinegar
1 teaspoon brown sugar (optional)
1 pound boneless chicken
1/2 cup cornstarch
1/2 cup AP flour
1 teaspoon salt
1-2 cups oil for frying
1 lemon or lime, cut into wedges

Steps:

  • Combine garlic, ginger, soy and vinegar in a bowl. Cut chicken into pieces about 1-1/2 inches square. Allow to marinate at room temperature at least 15 minutes and up to an hour.
  • Meanwhile, combine cornstarch, flour, salt in a shallow bowl.
  • Drain marinate from chicken (it's okay if bits of garlic and ginger stick) and coat each piece in the flour mixture. Transfer to a plate and let sit for 10 minutes.
  • Heat 1/2 inch of oil to 350ºF and fry the chicken in two batches, about 6 minutes each.
  • Serve with lemon wedges and steamed broccoli.

1 cup candlenut
1 cup sliced galangal
1 cup sliced ginger
1 cup fresh turmeric
1 tablespoon turmeric powder
1 stalk lemongrass
Salt
10 chicken quarters
One 13.5-ounce can coconut milk
Oil, for deep-frying
Cooked jasmine rice and Sambal Terasi (recipe follows), for serving
3 cups red peppers
1 cup Thai chiles
1 cup lime leaves
1 cup shallots
1 cup ripe tomatoes
1/2 cup sugar
3 tablespoons paprika
2 tablespoons shrimp paste
1 tablespoon salt
Oil, for sauteing

Steps:

  • Blend candlenut, galangal, ginger, fresh turmeric and turmeric powder together into a paste in a food processor.
  • Fill a large stockpot halfway with water with the lemongrass, ginger paste and salt to taste and bring to a rolling boil, then add the chicken.
  • Cook on medium heat for 1 hour, then add the coconut milk and cook another hour.
  • Remove chicken and strain the solids from the stock. Save stock for soup!
  • Add oil for deep frying to a wok. Heat oil, then fry chicken and ginger paste until crispy golden brown. Sift out crispy ginger flakes and serve with the chicken.
  • Serve with jasmine rice and Sambal Terasi.
  • Blend peppers, chiles, lime leaves, shallots, tomatoes, sugar, paprika, shrimp paste and salt into a chunky paste in a food processor.
  • Cover a pan in oil, then heat and saute paste until it becomes thicker and darker, 4 to 5 minutes.

The original recipe deep fries the chicken but since I don't own a deep fryer I pan fried the chicken instead. This is great with plum sauce! (I wonder what this would be like with tofu...??)

2 tablespoons mirin (read *NOTE) or 2 tablespoons dry white wine (read *NOTE)
1 tablespoon fresh ginger, finely minced
1 garlic cloves, minced or 1/2 teaspoon salt-free garlic powder
1/2 teaspoon salt, divided
1 1/4 lbs chicken strips
1 cup flour
1/4 cup cornstarch
1/2 teaspoon baking powder
vegetable oil, for frying
green onion, slices for garnish

Steps:

  • *NOTE: Substitute 2 tablespoon apple juice or white grape juice for non-alcoholic version.
  • In a medium sized bowl, combine the wine, ginger and 1/4 teaspoon salt. Add the chicken pieces and toss to coat. Cover chicken and marinate in refrigerator for 2 hours or overnight.
  • In large bowl, mix together the flour, cornstarch, baking powder and remaining 1/4 teaspoon salt and 3/4 cup water. Stir the marinated chicken into the batter.
  • Pour some oil to a depth of about 1/4 inch into a deep, heavy frying pan or wok over medium-high heat.
  • Add chicken, a few pieces at a time; do not crowd. Cook the meat until crisp and brown, approximately 3-4 minutes each side.
  • Place the cooked chicken on a tray lined with a paper towel and drain. Transfer to serving platter and garnish with green onion slices.
  • Serve hot or at room temperature.

1 egg white, lightly beaten
1 tablespoon reduced-sodium soy sauce
1 teaspoon cornstarch
1/8 teaspoon white pepper
1 pound boneless skinless chicken breasts, cut into 1-inch pieces
SAUCE:
1/2 teaspoon cornstarch
2 tablespoons rice vinegar
2 tablespoons reduced-sodium soy sauce
1 teaspoon sugar
STIR-FRY:
1 tablespoon plus 2 teaspoons peanut oil, divided
1 medium green pepper, julienned
3 green onions, cut into 1-inch lengths
1/2 cup canned bamboo shoots, finely chopped
2 to 3 teaspoons minced fresh gingerroot
1/4 cup slivered almonds, toasted
Hot cooked rice, optional

Steps:

  • In a large resealable plastic bag, combine the egg white, soy sauce, cornstarch and pepper. Add chicken; seal bag and turn to coat. Refrigerate for 30 minutes. For sauce, combine the cornstarch, vinegar, soy sauce and sugar until smooth; set aside., Drain chicken and discard marinade. In a large skillet or wok, stir-fry chicken in 1 tablespoon oil until no longer pink. Remove and keep warm., Stir-fry green pepper and onions in remaining oil for 2 minutes. This dish is quick and easy to make, but get all of your ingredients together (including mixing the sauce) before you start cooking because everything happens fast! Serve with rice, and garnish with sliced green onions.

3 tablespoons vegetable oil, divided
1 pound boneless, skinless chicken breasts, thinly sliced
1 red bell pepper, cored and sliced
1 cup vertically sliced onion
3 ounces snow peas, trimmed, cut in half
⅓ cup water
¼ cup hoisin sauce
¼ cup soy sauce
¼ cup sherry
2 ½ tablespoons minced fresh ginger root
2 tablespoons rice vinegar
2 tablespoons sesame oil
1 tablespoon oyster sauce
1 tablespoon sugar
1 ½ tablespoons cornstarch
2 cloves garlic, minced

Steps:

  • Heat 2 tablespoons vegetable oil in a wok or large skillet over high heat. Add chicken to the wok, and stir-fry until chicken is opaque on all sides, about 3 minutes. Remove to a plate.
  • Heat the remaining 1 tablespoon vegetable oil in the wok. Add bell pepper, onion, and snow peas; stir-fry until vegetables start to soften, 3 to 4 minutes. Reduce heat to medium-low.

1/4 lb fresh gingerroot, grated
2 ounces garlic, chopped
4 ounces Japanese soy sauce
2 teaspoons salt
1 teaspoon pepper
8 ounces flour
4 medium eggs

Steps:

  • Add ginger, garlic, soy sauce, salt, and pepper to chicken, mix well, and marinate overnight. Add eggs to chicken.

3 red, orange, or yellow bell peppers (ribs and seeds removed), thinly sliced

Steps:

  • In a small bowl, stir together honey, vinegar, and soy sauce. Heat a large skillet or wok over high until hot. Add 1 tablespoon oil and swirl to coat skillet. Add chicken and stir until opaque but not cooked through, about 3 minutes; transfer to a plate.
