Gingered Chicken and Fruit Salad image

Enjoy this citrusy chicken salad mixture placed on spinach leaves and topped with fruits and pecans - hearty dinner ready in 25 minutes.

1/2 teaspoon grated lime peel
2 tablespoons fresh lime juice
1 tablespoon canola oil
1 tablespoon water
2 teaspoons honey
1/2 teaspoon ground ginger
6 cups fresh baby spinach leaves
1 1/2 cups cubed cooked chicken breast
1 ripe medium mango, seed removed, peeled, cubed
1 cup seedless red grapes, halved
2 medium green onions, sliced (2 tablespoons)
2 tablespoons coarsely chopped pecans, toasted

Steps:

  • In container with tight-fitting lid, shake dressing ingredients until well mixed.
  • Divide spinach among 4 serving plates. Top each with chicken, mango, grapes, onions and pecans. Drizzle with dressing.

Gingered Chicken and Fruit Salad image

This is one of my family's favorite salads. It is great in warm weather.

Number Of Ingredients 8

2 cup(s) cooked, cubed, chicken breast
3 medium red delicious apples
3 medium granny smith apples
1 cup(s) white and/or red seedless grapes
2 cup(s) pineapple chucks, fresh or canned
1/2 cup(s) slivered almonds
2 cup(s) mayonnaise
2 tablespoon(s) ground ginger

Steps:

  • Dice the apples.
  • Cut grapes in half.
  • In a small bowl, mix mayonnaise and ginger until well blended. Set aside.
  • In a large bowl, place chicken, fruit and almonds. Toss lightly to mix.
  • Add mayonnaise mixture and stir until ingredients are coated evenly.
  • Store covered in refrigerator.
  • Serve as a salad or stuffed in pita pockets. You can leave out the chicken for a side salad.
