OLD FASHIONED GINGERBREAD CAKE

This is the easiest gingerbread cake you'll ever make and the best tasting too. The texture is excellent. A family favourite.

Number Of Ingredients 15

2 cups flour
1 ½ teaspoon baking soda
½ teaspoon salt
½ cup sugar
1 teaspoon ginger
1 teaspoon cinnamon
½ cup soft butter
¾ cup Crosby's Fancy Molasses
1 egg
1 cup boiling water
1/2 cup butter
1/2 cup lightly packed brown sugar
3 Tbsp. Crosby's Fancy Molasses
1 cup plus 3 Tbsp. 35% cream (whipping cream)
1 tsp. pure vanilla

Steps:

  • Preheat oven to 350 F
  • Grease and flour an 8"x 8" square pan (or line the pan with parchment paper.) *
  • Sift together dry ingredients in a large bowl.
  • Add the butter, molasses and egg and beat for two minutes or 300 strokes by hand. (This is a very old recipe...)
  • Add the boiling water.
  • Beat for another two minutes and turn into prepared pan.
  • Bake 50-55 minutes, or until cake springs back when lightly touched.

Softened unsalted butter, as needed
1 cup vegetable oil, like soy, peanut, or corn
1 cup sugar
1 cup unsulphured molasses
1 to 2 tablespoons minced crystallized ginger
2 large eggs, at room temperature, lightly beaten with a fork
3 cups unbleached all-purpose flour
1 tablespoon ground ginger
2 teaspoons ground cinnamon
1 teaspoon fine salt
1/4 teaspoon ground cloves
1 cup water
1 tablespoon baking soda
Serving suggestions: Whipped cream or vanilla ice cream

Steps:

  • Lightly butter a 9 by 13 by 2-inch cake pan and line the bottom with a piece of parchment or wax paper. Preheat the oven to 325 degrees F.
  • In a large bowl, whisk together the oil, sugar, molasses, and crystallized ginger. Add the eggs and whisk until smooth.
  • In another large bowl, whisk together the flour, ground ginger, cinnamon, salt, and cloves. Whisk the molasses mixture into the flour mixture until evenly combined.
  • In a small saucepan, bring the water to a boil. Remove from the heat and stir in the baking soda. Whisk the hot water into the batter until just combined. Transfer the batter into the prepared pan. Bake the cake in the center of the oven, until a toothpick inserted into the center comes out clean, about 45 minutes. Cool the cake in the pan on a rack. Cut into squares and serve with whipped cream or ice cream.

This may look like a classic chocolate Bundt cake, but one bite tells you it's something more. Generous amounts of ground and freshly grated ginger give it a spice that's just right for the season. A bourbon-spiked sauce adds another layer of richness and flavor.

1/2 cup (1 stick) unsalted butter, softened, plus more for pan
1/2 cup unsweetened Dutch process cocoa powder, plus more for dusting
1/2 cup unsulfured molasses
3/4 cup packed light-brown sugar
2 large eggs
1/4 cup whole milk
2 teaspoons finely grated peeled fresh ginger
1 cup all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon coarse salt
1 teaspoon ground ginger
1 teaspoon ground cinnamon
Bourbon Sauce

Steps:

  • Preheat oven to 325 degrees. Butter a 9-inch Bundt pan. Dust with cocoa powder, and tap out excess; set aside. Put butter, molasses, brown sugar, and 1/4 cup water in a medium saucepan over medium-low heat. Cook, stirring constantly, until butter has melted. Transfer mixture to a large bowl. Let cool 5 minutes.
  • Add eggs, milk, and grated ginger to the molasses mixture; whisk to combine. Sift together flour, cocoa powder, baking soda, salt, ground ginger, and cinnamon into a medium bowl.
  • Gently fold the flour mixture into the molasses mixture until just combined. (There should be lumps remaining.) Pour batter into prepared pan. Bake cake until a cake tester inserted into center comes out clean, about 30 minutes. Let cake cool completely in pan on a wire rack.
  • Invert cake, and unmold onto a cake stand or a large serving platter. Using a spoon, drizzle the warm bourbon sauce over the cake in a back-and-forth motion. Serve immediately.

For the cake
2-1/2 cups flour
2 tsp baking soda
1 tbsp ginger
1 tsp cinnamon
½ tsp allspice
½ tsp salt
¾ cup light brown sugar
¾ cup molasses
½ cup (1 stick) butter, melted
¼ cup vegetable oil
2 eggs
1 cup boiling water
For the frosting
½ cup (1 stick) butter
¼ cup molasses
¼ cup bourbon
1 tsp vanilla
½ tsp salt
3 cups confectioner's sugar, sifted
Cake crumbs, for garnish (recipe below)

Steps:

  • For the cake (Cake recipe adapted from The King Arthur Flour Baker's Companion) Preheat the oven to 350 degrees F and grease 2 9-in round cake pans. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, allspice, and salt; set aside. Using an electric mixer, beat together the sugar, molasses, butter, and oil. Add the eggs in, beating after each addition. Mix in the flour mixture until well combined. Slowly and carefully, stir in the boiling water, and mix until smooth. Divide the batter evenly between the pans. Bake for approximately 20-25 minutes, until a toothpick inserted comes out clean. Cool in pans on wire racks. Once cooled, use a serrated knife or cake leveler to cut off the tops of the cakes. Save these scraps for the cake crumb garnish, if desired. For the frosting Cream together the butter and molasses. Add the bourbon and vanilla. Then add the salt and confectioner's sugar, beating until smooth. To assemble Place one cake on a cake stand or plate and using an offset spatula, spread ⠓ of the frosting evenly. Place the other cake layer, cut side down, on top of the frosting. Frost the top and sides with a thin layer of frosting and refrigerate for 10 minutes to set the crumb coat. Then spread the remaining frosting over the rest of the cake. Pat cake crumbs on the sides of the cake, and sprinkle some on the top to garnish. For the cake crumbs Reduce oven to 300 degrees F. Spread the cake scraps in a single layer on a foil lined baking sheet, and bake for 22 minutes, just until they start to harden. Let them cool to room temperature, and using a rolling pin or food processor, crush them into crumbs. To garnish this cake, you will only need about half the crumbs. Save the rest for other uses (like sprinkling on ice cream or on a bourbon milk punch).
