1 Granny Smith apple, shredded
⅓ cup unfiltered apple cider vinegar
¼ cup white sugar
1 teaspoon grated fresh ginger

Steps:

  • Place apple in a glass jar with a tight-fitting lid. Add apple cider vinegar, sugar, and grated ginger; stir well. Close tightly. Let sit in the refrigerator, 4 to 5 days.
  • Strain syrupy liquid into a clean bottle, discarding apple scraps. Close tightly and chill.

1/2 cup peeled and finely chopped ginger
1 cup cider vinegar
1/2 cup sugar

Steps:

  • Heat ginger and 1 cup vinegar in a small non-reactive saucepan over high heat until it boils around the edges. Immediately transfer to a glass or stainless steel bowl. Let cool, then cover and set aside at room temperature for 24 hours. Pour mixture into a strainer set over a bowl, and let ginger drain for about 5 minutes without pressing on it. Measure liquid: you should have about 2/3 cup; if not, add more vinegar. Discard ginger, and transfer liquid to a small non-reactive saucepan. Stir in sugar, and set over high heat to bring to a boil, stirring occasionally. Immediately reduce heat to very low, and simmer for 2 to 3 minutes, stirring once or twice, or until sugar has completely dissolved and shrub is clear. Cool, cover and refrigerate. To serve, mix shrub with water (or rum) to taste. Variation: For berry shrub, substitute 1 ½ cups of raspberries, blackberries, or blueberries for the ginger. Reduce vinegar to 2/3 cup blueberries for 1/2 cup for raspberries or blackberries.

2 oz bourbon whiskey
3 dashes Angostura bitters
1/2 oz blackberry ginger shrub
Blackberry for garnish
For the blackberry-ginger shrub:
4 cups fresh blackberries
2 tbsp grated fresh ginger
1 cup white balsamic vinegar
1 cup cider vinegar
2 cups sugar

Steps:

  • To make the blackberry-ginger shrub, mix the fresh blackberries, ginger, and sugar in a large bowl. Mash with a spoon to release the juice. Let sit for a day in the refrigerator. Strain the solids and press lightly on the fruits to expel any remaining juice. Mix the juice with the vinegar and whisk to combine. Place the mixture in a mason jar to store. If sugar and vinegar separate, shake well to combine. For the Old Fashioned, add the bitters and shrub to the bottom of an Old Fashioned glass and stir with a bar spoon. Add ice to the glass. Top with bourbon and a dash of club soda. Garnish with a blackberry.

3 INCHES PEELED FRESH GINGER CHOPPED INTO 4 PIECES
1 CUP SUGAR
1/3 CUP CIDER VINEGAR
SPARKLING WATER OPTIONAL FOR SERVING

  • 1. ADD THE ORANGE JUICE, GINGER AND SUGAR TO A MEDIUM BOWL. STIR TO COMBINE. LET THE LIQUID SIT UNTIL ALL THE SUGAR IS DISSOLVED ABOUT ONE HOUR 2. REMOVE THE GINGER STRAIN THE LIQUID. ADD VINEGAR, MIX, COVER AND REFRIGERATE.
