Tender beef slices and crunchy Chinese broccoli or kale are stir-fried in a savory ginger sauce. Easy to make, pretty healthy, and everybody loves it!

7 ounces beef sirloin, sliced into strips
1 ¼ teaspoons chicken bouillon granules, divided
1 teaspoon white sugar, divided
1 tablespoon ginger juice
3 tablespoons water, divided
1 teaspoon cornstarch
2 tablespoons vegetable oil, divided
1 (4 inch) piece ginger root, peeled and sliced
14 ounces Chinese broccoli, sliced

Steps:

  • Toss beef strips with 1 teaspoon chicken bouillon granules and 3/4 teaspoon sugar in a bowl. Marinate in the refrigerator, 20 minutes to 1 hour.
  • Combine remaining 1/4 teaspoon chicken bouillon granules, 1/4 teaspoon sugar, and ginger juice in a bowl.
  • Mix 2 tablespoons water with cornstarch in a small bowl. Add to bowl with ginger juice mixture; stir.
  • Heat 1 tablespoon oil in a wok over medium-high heat; cook and stir ginger until fragrant, about 30 seconds. Add broccoli; cook and stir for 2 minutes. Add remaining 1 tablespoon water, cover, and cook until broccoli is cooked but still crunchy, about 1 minute. Transfer to a dish.
  • Heat remaining 1 tablespoon oil in the wok. Add beef; cook and stir to medium well doneness, about 4 minutes. Add ginger juice mixture and broccoli. Cook and stir until heated through, about 2 minutes.

1 tablespoon Butter
1/2 cup White Rice (uncooked)
1 cup Water
1/2 cup Hoisin Sauce
1/2 cup Barbecue Sauce
1 tablespoon Peanut Butter
1 1/2 teaspoons Soy Sauce
1 teaspoon Garlic ( minced)
1 teaspoon Ginger Root (fresh, grated)
2 teaspoons Sesame Oil
1 cup Onion (diced)
1/2 cup Carrot (grated)
1 cup Pea Pods
1 cup Broccoli ( cut in small pieces)
2 batches Eggs (beaten)
1/8 cup Sesame Seeds

Steps:

  • 1. Melt butter in saucepan over medium heat. Add uncooked rice and cook till toasted, stirring occasionally.
  • 2. Add water and bring to a boil. Reduce heat, cover and simmer for 15 minutes until tender.
  • 3. While riuce is cooking, mix hoisin sauce, barbecue sauce, peanut butter, soy sauce,garlic, and ginger. Set aside.
  • 4. When rice is done cooking, heat sesame oil in wok over medium-high heat. When it begins to smoke add onion and cook till clear.
  • 5. Add carrot and cook for 1 - 2 minutes. Add rice and stir for 2 minutes.
  • 6. Add broccoli and pea pods,cook and stir for 1 - 2 minutes.
  • 7. Move eveything to side of the wok and put beaten eggs in middle of wok and scramble till done.
  • 8 Stir into rice mix. Sprinkle with sesame seeds.
  • **** If you choose to add meat , scramble it and add to step 5

This is a very simple but tasty recipe for ginger beef. I like to add 3 cloves of garlic minced but that is optional. White wine or apple juice can be substituted for the Sherry but Sherry is best

1 lb flank steak, cut to suit stir fry
salt
1 tablespoon cornstarch
3 1/2 tablespoons vegetable oil
12 slices fresh ginger, shredded
2 1/2 tablespoons soy sauce
1 teaspoon sugar
2 tablespoons dry sherry
2 teaspoons cornstarch, disolved in 2 1/2 tsp water
3 green onions, cut into 3 1/2-inch pieces

Steps:

  • Sprinkle the steak with salt, cornstarch and 1 1/2 tsp of the oil.
  • Heat remaining oil in a skillet.
  • Add steak and ginger and stir fry over high heat for 2 minutes.
  • Stir in soy sauce, wine, sugar and the cornstarch/water mixture.
  • Stir fry 1 minute longer.
  • Add green onions, stir and serve.

350g fillet steak, cut into thin strips
175g head of broccoli, cut into florets
2 tbsp peanut oil
1 clove garlic, finely chopped
1 tsp finely chopped fresh ginger
1 small onion, finely sliced
1 tsp salt
1 tsp light soy sauce
Marinade
1 tbsp light soy sauce
1 tsp sesame oil
1 tsp Shaoxing rice wine
1 tsp sugar
pinch of white pepper

Steps:

  • 1. Combine the marinade ingredients in a bowl, then mix in the beef. Cover and set aside for 1 hour, basting occassionally. Blanch the broccoli in a large saucepan of boiling water for 30 seconds. Drain and set aside. 2. In a preheated wok or deep saucepan, heat 1 tbsp of the oil and stir-fry the garlic, ginger and onion for 1 minute. Add the broccoli and stir-fry for a further minute. Remove from the wok and set aside. 3. In the clean preheated wok or deep saucepan, heat the remaining oil and stir-fry the beef until it has changed colour. Return the broccoli mixture to the saucepan with the salt and light soy sauce and stir until cooked through. Serve immediately.

-500gr partly frozen sirloin
roast or steak
-2 eggs, beaten
-3/4 cup cornstarch
-1/2 cup warm water
-Vegetable oil
-2/3 cup shredded carrots
-1/2 cup chopped green onions
-1/4 cup finely chopped ginger
-4 cloves garlic, chopped
-3 Tbsp soy sauce
-2 Tbsp red or white wine
-2 Tbsp white vinegar
-1 Tbsp sesame oil
-1/4 cup sugar
-pinch chili flakes

Steps:

  • Slice meat across the grain into narrow strips and combine with beaten eggs. Dissolve cornstarch in water and mix with beef mixture. using a wok or large, heavy frying pan, heat about 1 inch depth of oil until boiling hot but not smoking. Add beef to hot oil, one quarter of the quantity at a time, separating the beef strips if they from a clump. Cook and salt stirring frequently, until crisp. Remove strips as they trun crisp, drain and set aside.(dish may be prepared ahead up to this point.) Discard oil. When ready to complete the dish, heat 1 tablespoon of oil in wok or pan over high heat and stir-fry carrots, onion, ginger and garlic briefly. Stir in soy sauce, wine, vinegar, sesame oil, sugar and hot red pepper flakes and bring to a boil. Add beef, mix well and serve.

1 1/2 lb flank steak
1/2 t kosher salt, or more as needed
1/2 t freshly ground black pepper, or more as needed
6 oz fresh ginger root
12 scallions
4 cloves garlic
3 T neutral flavored oil
2 T fish sauce
2 t honey

Steps:

  • 1. Cut the steak with the grain (lengthwise) into 3-inch wide sections, and then cut those against the grain (crosswise) into 1/2 inch thick slices. Season with salt and pepper. 2. Peel the ginger and cut into thin rounds. Trim the ends off the scallions and cut into 2-inch long pieces.. Mince the garlic. 3. Heat 1 T oil until shimmering in a 12-inch skillet over medium-high heat. Add half the meat in a single layer; cook for 2-3 minutes total, turning once, until well browned on both sides. Transfer to a bowl. Repeat with another T of oil and the remaining meat. (You may want to deglaze the pan with some wine or vinegar here -- dump it when you are done) 4. Reduce the heat to medium; add the remaining T of oil to your now-empty skillet. Add the ginger and cook for 2 minutes, stirring, until lightly browned on some edges. Add the garlic and cook for 20 seconds, until fragrant. 5. Stir in the scallions, fish sauce and honey, and then return all the meat and juices to the pan. Cook for about 2 minutes, stirring occasionally, until the sauce thickens and the stir fry mixture is warmed through. 6. Serve with Jasmine rice
