1 1/4 cups grated pecorino romano cheese
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/8 teaspoon cayenne
1/2 cup unsalted butter, softened
1 cup all-purpose flour

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the cheese, salt, pepper, and cayenne in a medium bowl and stir to combine. Add the butter.
  • Using a hand mixer, beat the cheese mixture and butter until combined. Add the flour 1/4 cup at a time, mixing only until incorporated and the mixture holds together.
  • Place tablespoon-sized balls of the dough on 1 or 2 parchment paper-lined baking sheets, tapping the dough down gently with your fingertips. Bake until just beginning to brown at the edges, about 15 minutes.
  • Let cool on the baking sheet for a few minutes. Transfer to a serving plate.

2 tablespoons extra-virgin olive oil
2 cloves garlic, minced
2 teaspoons finely chopped fresh rosemary leaves
2 cups (9 ounces) shelled edamame beans
1 (15-ounce) can cannellini beans, drained and rinsed
5 ounces pecorino, cut into 1/2-inch chunks
1/4 cup chopped fresh flat-leaf parsley
1/4 teaspoon kosher salt
1/4 teaspoon finely ground black pepper

Steps:

  • In a small, nonstick skillet, heat the oil over medium-low heat. Add the garlic and cook until fragrant, but not brown, about 30 seconds. Remove the pan from the heat and stir in the rosemary. Set aside.
  • Combine the edamame beans, cannellini beans, cheese, parsley, and salt and pepper in a serving bowl. Add the garlic mixture and toss well until all the ingredients are coated.

1/2 cup Italian-style dried bread crumbs
1/2 cup grated Pecorino Romano
2 garlic cloves, peeled and minced
2 tablespoons chopped fresh Italian parsley leaves
1 tablespoon chopped fresh mint leaves
Salt and freshly ground black pepper
1/3 cup extra-virgin olive oil
28 large (2 1/2-inch-diameter) white mushrooms, stemmed

Steps:

  • Preheat the oven to 400 degrees F.
  • Stir the bread crumbs, Pecorino Romano, garlic, parsley, mint, salt and pepper, to taste, and 2 tablespoons olive oil in a medium bowl to blend.
  • Drizzle a heavy large baking sheet with about 1 tablespoon olive oil, to coat. Spoon the filling into the mushroom cavities and arrange on the baking sheet, cavity side up. Drizzle remaining oil over the filling in each mushroom. Bake until the mushrooms are tender and the filling is heated through and golden on top, about 25 minutes. Serve.

FUSILLI WITH PECORINO ROMANO AND BLACK PEPPER



Fusilli with Pecorino Romano and Black Pepper image

Kosher salt
1 pound fusilli pasta
1/4 cup olive oil
2 cloves garlic, lightly crushed
5 cups baby spinach leaves (5 ounces)
Freshly ground pepper
1 1/2 cups grated Pecorino Romano cheese (6 ounces)
1 cup mascarpone cheese (8 ounces), at room temperature

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook, stirring occasionally, until tender but still firm to the bite, 8 to 10 minutes. Reserve 3/4 cup of the cooking liquid, then drain the pasta.
  • Meanwhile, heat the olive oil in a large, high-sided skillet over medium heat. Add the garlic and cook until lightly browned, about 2 minutes. Remove the garlic and discard. Add the spinach and 2 teaspoons pepper, and cook until the spinach has wilted, about 1 minute.
  • Remove the skillet from the heat and add the pasta. Add the Pecorino Romano cheese and 2 teaspoons each salt and pepper, and toss until coated.
  • In a medium bowl, whisk together the reserved cooking liquid and the mascarpone cheese until smooth. Pour over the pasta and toss until coated. Season with salt.
  • Transfer the pasta to a large bowl and serve.

ORECCHIETTE WITH BROCCOLI AND PECORINO



Orecchiette with Broccoli and Pecorino image

2 broccoli crowns, cut into small florets
1/2 cup extra-virgin olive oil
1/2 teaspoon kosher salt, plus for the pasta water
1 pound orecchiette pasta
1 1/2 teaspoons anchovy paste
5 cloves garlic, smashed
1/3 cup chopped fresh parsley
1/4 teaspoon red pepper flakes
3/4 cup freshly grated pecorino
1 teaspoon lemon zest, from 1 large lemon
1/4 cup golden raisins
1/4 cup pine nuts, toasted

Steps:

  • Preheat the oven to 500 degrees F. Bring a large pot of salted water to a boil over high heat.
  • Spread out the broccoli florets on a rimmed baking sheet and toss them with 1/4 cup of the olive oil and the salt. Transfer to the preheated oven and roast for 10 minutes, stirring halfway through.
  • Meanwhile, add the orecchiette to the boiling water and cook until al dente, 9 to 10 minutes. Drain well, reserving 1 cup of the pasta water for the sauce.
  • While the pasta cooks, heat a large skillet over medium heat. Add the remaining 1/4 cup olive oil, the anchovy paste and the garlic to the hot pan. Cook, mashing up the anchovy paste with a wooden spoon, until the anchovy has dissolved into the oil and the garlic has become softened and aromatic, about 3 minutes. Add the pasta, the roasted broccoli, and the parsley, red pepper flakes, pecorino, lemon zest, raisins and pine nuts to the skillet. Stir well to combine. Add pasta water as needed to loosen the sauce.

1 1/4 cups grated pecorino cheese
1/4 teaspoon kosher salt
1/4 teaspoon pepper
1/2 cup butter, softened
3/4 cup flour

Steps:

  • Heat oven to 350.
  • Combine cheese, salt, pepper and butter in a bowl. Beat with a hand mixer until well combined.
  • Add flour and beat until just combined.
  • Turn dough out on to a sheet of plastic wrap, roll into a log shape and wrap well.
  • Place into the freezer for 20-30 minutes.
  • Remover from freezer and unwrap. Slice dough about 1/8 inch thick. About the width of an average cracker.
  • Bake on a silpat or parchment paper on a cookie sheet for 12-15 minutes or just getting golden on the edges.
  • Let cool on sheet after removing from oven for a few minutes then carefully remove with a spatula to serve or store.
