1 head cabbage, approx. 42 oz. cut into strips
2 medium onions, chopped
1 tsp garlic, finelly chopped
2 tsp cumin, whole seeds
1 leaf bay leaf
1 tsp salt
1/2 tsp black pepper, ground
2/3 cup tomato sauce
1 tsp paprika
1 tbsp sugar
1 tbsp all purpose flour
2 tbsp parsley, chopped
2 tbsp olive oil
2 1/2 cup water

Steps:

  • The first thing you need to do is add oil and onions into a quite large pot. Fry the onions for about five minutes until they are soft and start to caramelize just a bit.
  • Next, add the salt to soften the onions, pepper, and bay leaf to enhance the flavors. To get most out of cumin flavor, fry it together with the onions. We are actually making sort of a paste here, which will be a base for the cabbage.
  • Next is garlic. It would be best if you didn't fry the garlic for a long time. It is enough just to smell the aroma of the garlic after you put it in - that's after a few seconds.Now comes the sweet in the cabbage part, so add the sugar. You should just slightly caramelize it for about a minute and not brown it.The sweetness of the paprika and tomatoes will add the aroma and color. Cook all these ingredients for about 15 minutes, so you get a nice and smooth paste and then add shredded cabbage.
  • First, you need to coat the cabbage with a paste. There is quite a lot of cabbage at the beginning, but after you sauté it for a few minutes, the cabbage will shrink, and you will be able to mix everything easily. To help the cabbage sauté, just add about half a cup of water, cover the pot with a lid and let it sauté for a few minutes. Then add the flour, mix a bit and sauté for a minute or two. Then comes the parsley, another mix, about 2 cups of water and another mix. Cover it with a lid and cook on low to medium temperature until the cabbage is soft, that's about 20 minutes to half an hour, mixing a few times in between.
  • This dish goes perfectly together with mashed potatoes, or you can eat it for the main course.

1 tablespoon extra-virgin olive oil
6 slices good quality smoky bacon, chopped or very thinly sliced across
1 large onion, finely chopped
1 large carrot, peeled and finely chopped
1 1/2 teaspoons caraway or cumin seed
1 Braeburn, Northern Spy apple or other firm slightly tart variety, finely chopped
1 small red cabbage, quartered, cored and very thinly sliced (about 1 1/2 pounds)
Freshly ground black pepper
Freshly grated nutmeg
5 to 6 juniper berries
3 to 4 whole cloves
2 fresh bay leaves
Curl orange rind
1 small cinnamon stick
1/4 cup cider vinegar or wine vinegar
2 rounded tablespoons dark brown sugar
6 cups chicken stock
Kosher salt
Special equipment: Kitchen twine

Steps:

  • Serve with grilled Swiss or extra-sharp white Cheddar cheese on pumpernickel or whole grain bread.;
  • Heat a large Dutch oven or soup pot over medium-high heat. Add 1 tablespoon extra-virgin olive oil, and bacon. Brown and crisp bacon and remove to a plate, draining off some fat if you have more than enough to lightly coat the bottom of the pot.
  • Add the onions, carrots, caraway, and apples, and stir a few minutes. Then wilt in the cabbage and season with black pepper and some freshly grated nutmeg. Cover with the lid slightly ajar and wilt cabbage while you prepare the sachet. Fill the cheesecloth with the juniper berries, cloves, bay leaves, orange rind, and cinnamon, and use kitchen twine to tie it to the side of the pot. Drop it into the pot and stir into the cabbage. Add the vinegar, keeping your head back from the hot pot, brown sugar, stock, and water, and bring the soup to a boil. Reduce heat and simmer 1 to 1 1/2 hours, until cabbage is very tender and soup has thickened. Stir the bacon bits back in, then adjust the salt to your taste.
  • Cool and store for a make-ahead meal, or serve with grilled cheese sandwiches.

1/2 large red cabbage, sliced 1/4-inch thick
2 tablespoon butter
2 tablespoon sugar
1/4 cup balsamic vinegar
Kosher salt
Freshly ground black pepper

Steps:

  • Sauté the cabbage: Melt the butter in a large pot over medium heat. Add the thinly sliced red cabbage and toss to coat with the butter. Sauté until slightly wilted, about 5 minutes.
  • Add the sugar and vinegar, simmer: Sprinkle sugar over the cabbage and toss to coat evenly. Add the balsamic vinegar to the pot. Bring to a simmer, then reduce the heat to medium low. Cover and simmer until the cabbage is completely tender but not mushy. Stir often, about 30 to 45 minutes total.
  • Season: Season to taste with salt and pepper.

My mom would always make this to accompany her beef pot pie. Funny thing is, as a child, I never liked it. Now, I love it. Goes great with beef or pork. Mom gave me the recipe just last year. so, I'm sharing it with you.

1 large cabbage, shredded
3/4 c sugar
3/4 c vegetable shortening
1 c water
1 c white vinegar
salt and pepper ( if desired)

Steps:

  • 1. In a large 4 qt. pan, stack cabbage, sugar, and shortening. Turn burner on to med.high. Combine water and white vinegar together and pour over cabbage.
  • 2. Bring to a boil. Reduce heat, cover pan and simmer for 1 hour, until cabbage is tender.
  • 3. Remove cabbage with a slotted spoon to serving bowl. serves 6-8. Sprinkle with salt and pepper if desired.
  • 4. Notes: You can chop the cabbage as you prefer, rough chop, fine chop or even shredded. You can use prepared coleslaw mix, but you may want to remove the carrots and red cabbage. I know the portions says 6-8 for a large head of cabbage. Keep in mind that cabbages does cook down in volume. And we always went back for seconds and thirds. I use Crisco shortening. If you want a tangier flavor, try cider vinegar or white wine vinegar. Enjoy!

2 large tart apples, peeled and sliced
1 medium sweet onion, sliced and separated into rings
1-1/2 cups water
1 cup cider vinegar
1/2 cup sugar
1 tablespoon butter
1 teaspoon salt
6 whole peppercorns
2 whole allspice
2 whole cloves
1 bay leaf
2 teaspoons cornstarch
2 teaspoons cold water

Steps:

  • In a Dutch oven, toss cabbage, apples and onion. Add water, vinegar, sugar, butter and salt. Place the peppercorns, allspice, cloves and bay leaf on a double thickness of cheesecloth; bring up corners of cloth and stir with kitchen string to form a bag. Add to Dutch oven. Bring to a boil. Reduce heat; cover and simmer for 1-1/4 hours., Discard spice bag. In a small bowl, combine cornstarch and cold water until smooth; stir in cabbage mixture. Bring to a boil; cook and stir for 1-2 minutes or until thickened.

5 cups shredded red cabbage
4 slices bacon
2 tablespoons brown sugar
2 tablespoons flour
1/2 cup water
1/3 cup cider vinegar
salt and pepper
1 small onion, chopped

Steps:

  • Cook cabbage in water for 8-10 minutes; drain.
  • Fry bacon and remove from pan; Add onion and saute until limp, 3-5 minutes.
  • Add sugar and flour to bacon fat; blend until smooth.
  • Add water, vinegar, and seasonings; cook until thick.
  • Add diced bacon, and cabbage.
  • Heat through.
  • If bland, add more salt, sugar, or vinegar, whichever is needed.

1/2 lb bacon
1/4 cup brown sugar
2 tablespoons flour
1/2 cup water
1/4 cup vinegar
1 teaspoon salt
1/8 teaspoon black pepper
1 small onion, diced

  • add shredded cabbage to boiling water, cover and boil about 15 minutes until crisp tender, drain.
  • fry bacon until crisp, crumble and reserve 1 tbsp drippings.
  • stir in brown sugar, water, salt pepper and onion.
  • cook until thick, add to cabbage and stir in bacon.
