2- 2 1/2 lbs country style spare ribs
2 tbsp oil
16 oz sauerkraut *see tips above
black pepper *optional

Steps:

  • Preheat oven to 300℉
  • Place large frying pan or indoor grill over med/high- high heat. Add oil and bring pan up to a full heat. (see tips above for testing heat of pan). Sprinkle ribs with black pepper and place fattiest aside down onto pan. Sear all sides until golden brown.
  • Place seared meat into dutch oven and top with sauerkraut. Cover dutch oven with lid and bake for 3-3 1/2 hours.

1 medium baking potatoes, cut into 1-1/2-inch chunks
1 can (8 ounces) sauerkraut, rinsed and well drained
1 pound pork baby back ribs
1/4 cup ketchup
1/4 cup molasses
3 tablespoons Worcestershire sauce

Steps:

  • Layer the potato, sauerkraut and ribs in a greased 11x7-in. baking dish. Combine the ketchup, molasses and Worcestershire sauce; pour over the ribs. , Cover and bake at 350° for 1-1/4 hours. Uncover; bake 15 minutes longer or until meat is tender. Remove ribs and cut into two-rib portions before serving.

The recipe was handed down to Camille MacKusick by her father-in-law, from the family archives. All sorts of magical juices ooze out of everything. When the last finger is licked and the last lip smacked, everyone will weep.

8 country-style spareribs
1 1-pound can sauerkraut, drained
About one-half 18-ounce bottle barbecue sauce
No salt, no freshly ground black pepper!

Steps:

  • Preheat the oven to 300°F. Choose a baking pan that will accommmodate the ribs in pieces or all hitched together, with the kraut in the space left over. Eight country-style ribs cut into a 6-rib and a 2-rib hunk, plus the can of kraut, fit perfectly in a 9-by-13-inch pan. For more ribs, get a bigger pan and more kraut.
  • Place the ribs in the pan and the sauerkraut in a mound beside them. Cover the ribs - not the kraut - with the barbecue sauce. Use as much as you like, maybe more than half the bottle, maybe less. Cover the pan tightly withaluminum foil and bake for 3 hours. Lift a corner of the foil near the end of the time to sneak a look. The ribs should be nicely browned and glazed and your mouth should water. Serve hot.

1 tablespoon cooking oil
1 (14 ounce) can German-style sweet sauerkraut
1 cup applesauce
2 tablespoons brown sugar

8 country-style pork ribs
2 (16 ounce) cans sauerkraut
1/2 lb bacon, sliced small
1/2 cup Yoshida gourmet sauce
1/4 cup water
1 small onion, chopped
1/2 cup brown sugar

Steps:

  • First brown the ribs in a frying pan.
  • Take the ribs out of the pan and now fry the bacon until crisp; then add chopped onion. When onion is cooked, add the Yoshida's, brown sugar, and water. Cook until bubbly.
  • Put the ribs in a 5-quart Dutch oven and bake at 375°F for 2 hours, checking until nice and brown.
  • When ribs are done, add the sauerkraut mixture and put back in the oven for 30 minutes--this will meld the flavors together.
