1 large hard roll, Dry
1/2 cup water
4 tablespoons vegetable oil
1 medium onion, Chopped
1 lb lean ground beef
1/2 teaspoon salt
1/4 teaspoon pepper
4 medium onions, Sliced

Steps:

  • In a small bowl soak roll in water.
  • Heat 2 T vegetable oil in a fry-pan; cook chopped onion until lightly browned.
  • Transfer onion to a bowl.
  • Squeeze roll as dry as possible and mix roll with onion.
  • Add ground beef; blend well.
  • Season with salt and pepper.
  • Shape meat into 4 patties; cook about 5 minutes on each side or to desired doneness.
  • Remove and keep warm.
  • Add sliced onions to pan drippings; cook until lightly browned.
  • Arrange beefsteaks on a platter and top with onion rings.

Our land lady in Germany used to make these in the spring and summer time. I feel these are good anytime hot or cold. My husband used to take them on deployments when we were in the military. I would wrap them in foil and off he would go.

1 1/2 lb beef skirt steak (sliced thin cross length)
1/4 c german mustard
1 tsp garlic
1/2 tsp sea salt
1 tsp horseradish (creamy)
1 slice red onion
1 slice green bell pepper
8 medium dill pickles (thin spears) clausen is best
1 lb bacon, uncooked
1 pkg toothpicks
BROWN SAUCE
2 Tbsp worcestershire sauce
6 beef bouillon, cubes
2 c water, boiling
1 tsp sugar
1/4 c water, cold
2 Tbsp cornstarch
2 tsp cracked pepper
1 tsp horseradish

Steps:

  • 1. Preheat oven to 375* Spray baking pan
  • 2. Prep your skirt steak, should be thinly sliced the length of steak. Your best bet is to have your butcher slice it for you. They don't charge for this service, plus it saves prep time. Prep all vegetables, also dill pickle, sliced thin length wise.
  • 3. In a bowl place mustard, garlic, sea salt, and horseradish, mix well. With a pastry brush, brush one side of the steak slices with the mixture, one at a time. Place one slice of onion, one slice bell pepper, and one slice of dill pickle. Roll the steak around them, Then wrap a strip of bacon around it and fastened with a toothpick. Repeat till they are all done. Place in oven, cook for 30 minutes or till golden brown. Turn meat every so often. This also Fantastic cooked on the grill.
  • 4. The sauce is for dipping: In a saucepan, add Worcestershire Sauce, Boiling water, 6 bouillon cubes disolved, sugar, pepper, horseradish, bring to a boil on medium heat. In a shaker or small jar place water and cornstarch. Shake or stir with fork till desovled, pour slowly into other mixture stirring sonstantly till gravy sauce has thickened and comes to a boil. If the sauce becomes to thick add water a tablespoon at a time to thin it down. This is great to dip the Rouladen in or you as a gravy on top. This is great for picnics too.

I went with my parents to dinner at a German Club Restaurant called the Maennerchor, in Columbus, Ohio. I was in my teens and everything on the menu looked totally strange to me at that age. I found a steak on the menu, don't remember what they called it, and decided to order that, despite the fact that I didn't like steak. Well am I glad I ordered this steak because I loved it and this is the only way I eat steak to this day. This is my copy of this restaurants dish.

8 ounces rib eye steaks (I think they may have called it shell steak)
salt
pepper
seasoning salt
1 large onion, sliced
2 tablespoons butter
1/2 cup sour cream

Steps:

  • Season steak with salt, pepper and seasoned salt to taste.
  • In a large skillet, melt butter and add sliced onion. Cook on medium low heat, cook until onions become tender and lightly browned. About 10 minutes.
  • Meanwhile, cook steak on the grill until it reaches your desired liking.
  • Add sourcream to the onions and stir to combine. Pour the mixture over the top of the grilled steak.
  • Variation: You could add mushrooms with onions during the saute. This restaurant did not to my recollection, but that would also be yummy.

¼ cup Dijon mustard
8 (4 ounce) pieces round steak, pounded 1/4 inch thick
½ cup minced onion
2 teaspoons paprika
2 teaspoons salt
2 teaspoons freshly ground black pepper
8 slices bacon
3 tablespoons canola oil
1 (12 ounce) can beef broth
1 ¼ cups water
2 tablespoons cornstarch
1 cup warm water
¼ cup sour cream

Steps:

  • Spread 1/2 tablespoon mustard over one side of each piece of meat. Sprinkle the onion, paprika, salt, and pepper evenly over the steaks. Lay one slice of bacon on each piece. Roll the steaks jelly-roll style and secure with toothpicks.
  • Heat the canola oil in a skillet over medium heat. Cook meat on all sides until browned. Add the beef broth and water; bring to a boil. Reduce heat to medium low; cover and simmer until tender, about 30 minutes.
  • Remove the meat rolls. Strain the broth mixture and return liquid to the skillet. Whisk together the cornstarch and 1 cup of water. Slowly pour the cornstarch slurry into the skillet, stirring continually until the sauce has thickened, 2 to 3 minutes. Stir in the sour cream. Return rolls to the sauce; serve immediately.

Many Germans are partial to ground meats, and one of the most famous ground-beef dishes they serve is Steak Tartare. Traditionally, the beef for this unusual dish is chopped or ground very fine and served as soon as possible thereafter. It is shaped into a loaf, a well is pressed into the center, and an egg yolk is carefully dropped into the well. The meat is surrounded with capers, onions, parsley, and anchovy fillets; salt and pepper are on the side. The beef is then combined with all the condiments at the table in front of the guests, and is served with plenty of dark bread, butter, and frosty-cold steins of dark beer. This version is just as good but is prepared before your guests arrive and molded into a decorative ring shape. Be sure to use only the finest beef--prime, if available! McCall's Cooking School

2 (1 ounce) cans flat anchovy fillets
1 small onion
2 lbs ground beef round
1/2 cup capers, drained
2 egg yolks
1 teaspoon salt
1 1/2 teaspoons fresh cracked pepper
1/4 cup chopped parsley
12 pieces red peppers, in 1/4 inch cubes
2 (1 lb) cans pitted ripe black olives
watercress leaf

Steps:

  • Lightly oil the inside of a 5-cup ring mold.
  • Drain oil off anchovy fillets; separate and drain each on paper towels.
  • Chop 4 of the fillets very finely and leave remaining whole; set aside.
  • Chop onion very finely—you should have 1/2 cup.
  • Put chopped anchovy, chopped onion, ground beef, capers, egg yolks, salt, pepper, and parsley in a large bowl.
  • Using a wooden spoon, toss and mix until very well combined.
  • Taste, and if necessary, add more seasonings.
  • Mixture should be highly seasoned.
  • Spoon meat mixture into the prepared ring mold, pressing down firmly with the back of a wooden spoon to pack tightly and remove all air holes.
  • Cover meat-filled mold tightly with plastic wrap and chill for 2 to 3 hours or until ready to serve.
  • To unmold: Uncover ring mold.
  • Using a small knife, loosen meat mixture from edges of mold.
  • Place a serving dish upside down on top of mold; invert mold and serving dish.
  • Shake firmly to release meat mixture; remove mold.
  • To garnish and serve: Arrange anchovies on top of meat mixture in a crisscross fashion and garnish with red pepper cubes.
  • Drain olives; mound in center of ring mold.
  • Arrange watercress around edge of meat.
  • Be sure to keep the Steak Tartare refrigerated until ready to serve.
  • It is especially good served on unsalted saltine crackers, English water biscuits, or small rounds of rye bread.

3 pounds beef top round steak (1/2 inch thick)
1/2 teaspoon salt
1/4 teaspoon pepper
6 bacon strips
3 whole dill pickles, halved lengthwise
2 tablespoons canola oil
2 cups water
1 medium onion, chopped
2 tablespoons minced fresh parsley
2 teaspoons beef bouillon granules, optional
1/4 cup all-purpose flour
1/2 cup cold water
1/2 teaspoon browning sauce, optional

Steps:

  • Cut steak into six serving-size pieces; pound to 1/4-in. thickness. Sprinkle with salt and pepper. Place a bacon strip down the center of each piece; arrange a pickle half on one edge. Roll up and secure with a toothpick. , In a large skillet, heat oil over medium-high heat. Brown beef on all sides. Add the water, onion, parsley and bouillon if desired. Bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until meat is tender. Remove to a serving platter and keep warm. , For gravy, skim fat from drippings. Combine the flour, water and browning sauce if desired; stir into drippings. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with beef.

1 ½ pounds flank steak
German stone ground mustard, to taste
½ pound thick sliced bacon
2 large onions, sliced
1 (16 ounce) jar dill pickle slices
2 tablespoons butter
2 ½ cups water
1 cube beef bouillon

Steps:

  • Cut the flank steak into thin filets; about 1/4 inch thick and 3 inches wide.
  • Generously spread one side of each filet with mustard to taste. Place bacon, onions and pickle slices on each filet and form into a roll. Use string or toothpicks to hold the roll together.
  • Heat a skillet over medium heat and melt butter. Place the rolls in the butter and saute until browned.
  • Pour in 2 1/2 cups of water and add the bouillon cube; stirring to dissolve the bouillon cube. Simmer the rolls for about an hour.
