2 ½ pounds fresh peaches - peeled, pitted and chopped
½ cup white sugar
1 pint half-and-half cream
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
1 teaspoon vanilla extract
2 cups whole milk, or as needed

Steps:

  • Puree peaches with the sugar and half-and-half in batches in a blender or food processor.
  • In a gallon ice cream freezer container, mix together the peach mixture, sweetened condensed milk, evaporated milk, and vanilla. Pour in enough whole milk to fill the container to the fill line, about 2 cups.
  • Follow the manufacturer's instructions to freeze the ice cream.

The best way to capture the elusive flavour of summertime. Ben and Jerry prefer small peaches because they have more flavor and less water than the larger ones. Prep is 2hrs 15 mins which is almost all chill time. Freezing time is however long it takes for your ice cream maker to freeze it.

2 cups peaches, finely chopped
1 1/4 cups sugar
1/2 lemon, juice of
2 large eggs
2 cups heavy cream or 2 cups whipping cream
1 cup milk

Steps:

  • Combine the peaches, 1/2 cup of the sugar, and the lemon juice in a bowl.
  • Cover and refrigerate for 2 hours, stirring the mixture every 30 minutes.
  • Remove the peaches from the refrigerator and drain the juice into another bowl.
  • Return the peaches to the refrigerator. Whisk the eggs in a mixing bowl until light and fluffy, 1-2 minutes.
  • Whisk in the remaining 3/4 cup sugar, a little at a time, then continue whisking until completely blended, about 1 minute more.
  • Pour in the cream and milk and whisk to blend.
  • Add the peach juice and blend.
  • Transfer the mixture to an ice cream maker and freeze following manufacturer's instructions.
  • After the ice cream stiffens (about 2 minutes before if is done) add the peaches, then continue freezing until the ice cream is ready.
  • Makes 1 generous quart.

4 eggs
1-1/4 cups sugar, divided
1/2 teaspoon salt
4 cups whole milk
2 cans (14 ounces each) sweetened condensed milk
1-3/4 pounds fresh peaches, peeled and sliced

Steps:

  • In a large heavy saucepan, whisk eggs, 1 cup sugar and salt until blended; stir in milk. Cook over low heat until mixture is just thick enough to coat a spoon and a thermometer reads at least 160°, stirring constantly. Do not allow to boil. Remove from heat immediately., Quickly transfer to a bowl; place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes. Stir in sweetened condensed milk. Press plastic wrap onto surface of custard. Refrigerate several hours or overnight., When ready to freeze, in a small bowl, mash peaches with remaining sugar; let stand 30 minutes. Fill cylinder of ice cream freezer two-thirds full with custard, stirring in some of the peaches; freeze according to manufacturers' directions. Refrigerate remaining mixture until ready to freeze., Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze 2-4 hours or until firm. Repeat with remaining ice cream mixture and peaches.

⅔ cup all-purpose flour
¼ cup white sugar
¾ teaspoon baking powder
3 tablespoons cold butter
2 tablespoons Blue Diamond Vanilla Almond Breeze
½ cup white sugar
2 tablespoons cornstarch
4 large egg yolks
2 cups Blue Diamond Vanilla Almond Breeze
1 cup chopped, peeled fresh peaches
1 cup peach jam or preserves, divided
1 teaspoon vanilla extract
1 teaspoon almond extract
1 (13.5 ounce) can coconut milk

Steps:

  • To prepare crumble, preheat the oven to 350 degrees F (175 degrees C). Stir together flour, sugar and baking powder in a medium bowl. Cut in butter with a fork until it's the size of peas, then lightly stir in 2 to 2 1/2 tablespoons Almond Breeze.
  • Place on a parchment-lined baking sheet and break into 1/2- to 1-inch pieces; bake for 15 minutes. Let cool, then coarsely crumble.
  • To prepare ice cream, whisk together sugar, cornstarch, and egg yolks in a medium saucepan, then slowly whisk in Almond Breeze. Bring to a simmer over medium heat, whisking constantly. Cook over low heat, stirring frequently, until mixture is slightly thickened; let cool.
  • Transfer to a blender with peaches, 1/2 cup peach jam, vanilla and almond extracts, and coconut milk; puree until smooth.
  • Cover and chill well. Transfer to an ice cream maker bowl and freeze according to manufacturer's instructions.
  • Place a layer of ice cream in the bottom of a 1-quart dish (such as a loaf pan). Top with small spoonfuls of the remaining jam and some of the crumble. Repeat layers several times, saving a little of the crumble for garnishing, if desired.
  • Cover and freeze until ready to serve. Top small scoops of ice cream with a sprinkle of the crumble.

8 oz neufchatel low fat cream cheese, softened
1 c ripe peaches, peeled and finely mashed
1 c graham cracker pie crust chunks (optional)

Steps:

  • 1. Blend together half and half, sugar & cream cheese until smooth; stir in peaches.
  • 2. Place in a 1-1/2 or 2 quart ice cream maker and freeze according to manufacturer's instructions.
  • 3. Cover and place in the freezer for several hours to firm up.
  • 4. Variation: Stir graham cracker pie crust chunks into ice cream after turning off ice cream maker and before putting into freezer to firm up.
