Spanish Almond Soup ~ aka ajo blanco, or white gazpacho, is a cool and creamy chilled soup without a speck of dairy ~ it's wonderfully refreshing!

I cup blanched almonds (I used slivered)
1 garlic clove
2 cups cold filtered water
roughly 1 cup cubed fresh bread (crusts removed)
1 Tbsp extra virgin olive oil
1 Tbsp sherry vinegar
salt and pepper to taste
olive oil
mint leaves
toasted almonds

Steps:

  • Put the almonds, garlic, and water into a high speed blender or food processor. Note: A Vitamix blender is ideal for this soup because it will pulverize it completely smooth. If your machine is not as strong you may want to strain your soup through cheesecloth or a fine mesh strainer. Start the machine on low, then move to high and puree until it becomes a smooth creamy liquid, this won't take long.
  • Add the bread and puree again until smooth.
  • Stir in the oil, vinegar, and seasonings to taste. Refrigerate the soup in an airtight container for at least two hours before serving. Give it a stir before ladling into small bowls.

Ajo blanco (also written ajoblanco) is a traditional Spanish cold soup made with almonds. This refreshing soup is sometimes called "white gazpacho".

2oz (60g) bread, 1 or 2 days old, around 1 slice -- approx 3/4 cup once crust removed and diced (weight is without crust)*
1/2 cup cold water, plus more as needed
1 tsp sherry vinegar
1/2 cup blanched almonds (Marcona if possible, approx 80g)
1 small clove garlic
1/2 green apple (ex: Granny Smith), peeled and diced
2 Tbsp extra virgin olive oil
salt to taste, if needed
1 Tbsp olive oil
6 green grapes, cut in half and any seeds removed

Steps:

  • Place the diced bread in a blender. Sprinkle 1/2 c cold water and sherry vinegar over the bread, then blend until relatively smooth.
  • Add the almonds, garlic and apple and blend until smooth.
  • Carefully, with the blender still running, add the olive oil. (If this is not possible with your blender, add the oil, then blend again.)
  • Add a little more water (around 2 Tbsp - 1/4 cup) to make a smooth, pourable consistency.** Add a little salt, if needed, to taste.
  • Chill the soup, covered, for at least an hour to become well chilled. Or, if not possible, add a couple ice cubes to the mixture and blend them in well.
  • To serve, divide the soup between two bowls and top each with some halved green grapes and a drizzle of olive oil.

Gazpacho is a classic cold tomato and vegetable soup of Spain, with different variations depending on their towns. This is thickened with almonds although it can be substituted with dried breadcrumbs. Reserve some of the diced vegetables to garnish. 1 kg ripe vine tomatoes, skinned, deseeded and diced
1 small red onion, chopped
4 garlic cloves
2 green peppers, cored, deseeded and chopped, red peppers can also be used
1/2 cucumber, peeled and chopped
2 red chilies, deseeded and chopped
1 ounce pitted green olives, chopped
1 tablespoon capers packed in salt, rinsed
2 ounces ground almonds, toasted
3 tablespoons red wine vinegar
1 tablespoon sugar
3/4 pint cold vegetable stock
1/4 pint tomato juice
1/4 pint extra virgin olive oil
2 tablespoons chopped coriander
2 tablespoons chopped parsley
salt and pepper
3 extra diced vegetables
toasted sliced almonds

Steps:

  • Place the first 8 ingredients together (until the capers) in a food processor or blender and puree until smooth. Thicken the soup by blending in the almonds.
  • Transfer the soup to a bowl and stir in the vinegar, sugar, cold stock, tomato juice and olive oil. Cover and chill in the refrigerator for at least 1 hour, then stir in the herbs. Season with salt and pepper to taste and serve garnished with some extra diced vegetables and toasted flaked almonds.

MALAGA ALMOND GAZPACHO

1 (3-inch-long) piece baguette, crust discarded
1 garlic clove
1/2 teaspoon salt
1/4 lb whole blanched almonds (3/4 cup)
1 tablespoon Sherry vinegar (preferably "reserva"), or to taste
1/2 cup mild extra-virgin olive oil (preferably Andalusian hojiblanca)
2 cups ice water
Garnish: 24 peeled seedless green grapes and 12 peeled cooked small shrimp (about 1/3 lb)

Steps:

  • Soak bread in 1/2 cup water 1 minute, then squeeze dry, discarding soaking water.
  • Mash garlic to a paste with salt using a mortar and pestle (or mince and mash with a large knife). Blend garlic paste and almonds in a food processor until nuts are as smooth as possible. Add bread and 1 tablespoon vinegar and, with motor running, add oil in a slow stream, then add ice water and blend well. Force purée through a fine sieve into a bowl, pressing firmly on solids. Discard solids.
  • Transfer soup to a glass container and chill, covered, until cold, about 3 hours. Season with salt and vinegar before serving.
