CHICKEN TENDERS RECIPE
Healthier chicken tenders cooked in a simple delicious sauce. The chicken tenderloins turn out so tender, juicy, succulent, and flavorful.

Steps:
- Add olive oil and melt 1 tablespoon of butter in a pan/skillet over medium heat.
- Add the chicken tenders, season with paprika, salt, and pepper.
- Cook for 3 minutes on each side (season each side as you cook).
- Make room for the garlic, melt the remaining butter, and add the garlic. Cook for 30 seconds or until the garlic becomes fragrant.
- Season with Italian seasoning, and cook for one more minute.
- Add 2 tablespoons of water to the pan to deglaze it, and scrape off any bits stuck to the bottom of the pan (that's where all of the good flavor is).
- Garnish with chopped fresh parsley or basil leaves, and serve warm.

CRISPY CHICKEN TENDERS

- Preheat oven to 400°F (200°C). Lightly grease a baking tray / sheet with cooking oil spray, or a light coating of oil. Set aside.
- In a large bowl, whisk together the egg, oil, lemon juice, parsley, garlic, salt and pepper.
- Dip chicken tenders into egg mixture and let sit for 5 minutes while preparing crumb mixture. OPTIONAL: Cover and allow to marinate in the refrigerator for 30 minutes to an hour (if time allows).*
- In another bowl, combine both breadcrumbs, paprika, garlic powder, onion powder and parmesan cheese.
- Dredge the egg coated chicken in the breadcrumb/parmesan mixture, lightly pressing to evenly coat.
- Arrange tenders on the baking sheet / tray and lightly spray with cooking oil spray.
- Bake for 10 minutes. Flip and bake for a further 5-10 minutes or until cooked through. (Broil in the last 2-3 minutes for a golden crispy crumb!)

STOVETOP LEMON GARLIC BUTTER CHICKEN TENDERS

- Add the chicken, onion powder, salt, thyme, pepper and paprika to a large bowl and toss everything to combine.
- Melt the butter and olive oil together in a large skillet over medium heat, then cook the chicken tenders in two batches for 5-7 minutes each time, flipping the tenders halfway through.
- Remove the chicken from the pan and set aside. Add the garlic, stir, and cook for about 30 seconds or until it becomes fragrant.
- Stir in the chicken broth and lemon juice and let it simmer for about 5 minutes or until it has reduced.
- Add the chicken back to the pan, then flip it back and forth to ensure that it is coated in the lemon garlic sauce.
- Serve with fresh thyme for garnish if desired.

My husband and I love a really good salad so I came up with this one night just to be different. This is my way of having chicken salad. He thought all he was getting a sandwich.

- In a large non-stick skillet over medium-high heat add butter, olive oil and garlic. Stir constantly until garlic is lightly browned, about 2 to 3 minutes.
- Prepare chicken tenders with salt and pepper. Add to butter, olive oil and garlic. Cook 5 to 6 minutes until browned, turn and brown over side (about 3 minutes).
- Place your favorite salad in the center of a serving plate and arrange chicken tenders around salad. Top with your favorite toppings.
- This recipe is very flexible. Depending on the number of chicken tenders per person.
